How to Grill the Perfect Chicken!

Grilled chicken is one of my favorite summer treats. I use my grill a lot in the summer and since chicken is one of the healthiest meats for you, I cook it often. I thought I'd put together a tutorial on how to grill the best chicken AND how to make it interesting. I don't know about you but I find it nearly impossible to prepare chicken the same way every time. Check back often because as I think of new ideas I'll pass them along!

Which grill should you buy?

I love the flavor of charcoal so without question that's the type of grill that I ended up buying. Plus, I can't envision enduring the hassle of constantly having to deal with propane. I'm accident prone so I didn't want to risk causing an explosion. Then again, I have toppled my grill over on the lawn and yes, the coals were hot - but that's nothing a good dowsing of water can't fix.

Think about your grill in detail before you buy it - and most of all, consider your personality. Since my whole family loves the flavor of charcoal and the occasional wood chip I throw in the mix, my grill choice was a no brainer. But what about you? Maybe you prefer propane like Hank Hill on Kind of the Hill and I do admit that he makes a compelling point.

Easy Grilled Chicken Tip

Brush the chicken with your favorite barbecue sauce and cook it as is! I find that marinating isn't always necessary and the sauce will give it plenty of flavor. You can do this for anything - drumsticks, chicken breast, boneless chicken breast, thighs... and you can use any flavor you want.

With this chicken recipe you barely have to think! *grin

When I don't feel like making things complicated, I use my "simple" grilled chicken recipe. All it involves is chicken (I use boneless chicken breasts), salt, pepper, and lemon juice.

Instructions

1. Prepare the grill by either heating the goals or turning on the propane.

2. Sprinkle salt and pepper on both sides of the chicken breasts.

3. Place them on the grill and cook until they are finished. This should take 5-7 minutes on each side (until the breast is white all the way through).

4. Remove chicken from the grill. Sprinkle with lemon juice just before serving. If you want, you can also put some chopped, fresh herbs on top before plating.

Seasoning Combinations for Grilled Chicken

Sometimes simple grilled seasonings are best!

Prepare the chicken as directed for my simple recipe, above. But instead of sprinkling salt and pepper, use these seasoning blends instead.
  • Brown sugar, paprika, onion powder, pinch of red pepper
  • Oregano, garlic powder, salt
  • Celery salt, sage, and onion powder
  • Seasoned salt, pepper, dried lemon rind
  • Salt before putting on grill, a squeeze of lemon after.

How long do you grill chicken?

I usually do it about ten minutes on each side for boneless. It takes a lot longer if the bone is in. Your best bet is to buy a quick-read thermometer and measure the temperature. Cooked chicken should be at 180 degrees or so though some reports I've read claim 170 degrees is okay. The big thing is to make sure that the meat is white, not pink in color.
