    I don't use butter for my grilled cheese sandwiches...too unhealthy. Instead, I put some olive oil in a nonstick pan and fry in that. Try it...its delicious!!!

    I'm stunned that you didn't mention how some people like to use two pancakes as bread for their grilled cheese. Also. I sometimes roll the cheese in white rice before cooking.

    I've just been enjoying a supper of grilled cheese sandwiches, so this is very timely. My hint is to add slices of tomato after the sandwich is toasted, as it saved a burned mouth and tastes better with that bit of something uncooked with all that melted cheese - yum!

    Homemade, I like my cheese sandwiches with only cheese. When I eat out, I get with either green olives, unions, or tomatos, or a combo. Had a corn one once - not again, I won't.

    I've recently started adding stuff (which, as you mention above, makes it less a "grilled cheese sandwich"). But with all the panini sandwiches offered these days, it's hard not to think ... "Hmm, maybe if I added some bacon. Or some roast beef. Wait -- bacon AND roast beef. And peppers." Etc. Maybe I should get back to the basics ...

    I must wonder if there is a way to make a *bad* grilled cheese... but I do suppose some are better than others. I like American cheese, since it melts best, with a few other cheese types layered inside to add more flavor.

    Fresh spinach leaves between two, thick layers of gouda on fresh sourdough bread with lots of butter to brown the bread. Tomato soup on the side. Yummy!

    Sea salt likes a real nice way to kick it up a notch.. How about cooking a little rosemary and thyme into the bread? Alternatively, I use those spices along with oregano in my tomato soup. It gives it a real nice pseudo-Italian zest! =oD

    Great lens on something simple but good. I almost laugh to admit but when I was a kid we used to make melted cheese sandwiches in the microwave (we almost never use on now - I only have one for heating those grain filled heating pads) and recently I decided to make one in my garage microwave. I use squirelly bread and one slice of american cheddar but cover the bottom piece of bread with dried chillies. I only heat it for about 30 seconds then flip it and heat again. You have to eat it right away and it is a wonderful hot, soft and tasty treat with some kick but you have to eat it warm before it gets rubbery :)

    I always eat grilled cheese with split pea soup, and I like the bread to be sourdough with a mix of havarti and american cheese. It is sooo good.

    Unless I'm using American cheese, I like to grate the cheese in the sandwich - It melts faster. I love a sandwich with shredded cheddar, bacon and some sauteed onion, grilled on rye bread. YUM.

    My daughter-in-law recently ate my grilled cheese sandwiches and was entirely impressed. I didn't do anything special, but she loved the result. A plain grilled cheese with dill pickled slices is my usual and probably my favorite, though I'd never turn down a tomato slice or a bowl of tomato soup!

    Yep, I make these every weekend with whatever cheese(s) we have left from recipes and weekday lunches. The constants are plenty of dijon mustard, good wheat bread, and butter all the way out to the crusts before grilling. But our local paper had a feature on this subject--which place serves the best GCS?--and concluded that "they're all the best." :)

    Didn't like the Youtube video. Pan was way too hot. Sandwich had already browned on one side and looked burned when flipped. Liked the written directions and variations.

    It is amazing how something so simple can be so satisfying. When it comes to a GCS, you can be either as imaginative as your guest chefs at the top of the page...or as basic as a slice of American cheese between two buttered slices of Silvercup. It's all good, as they say. (Do they still make Silvercup?) starring favoriting and rolling this one to my Laftovers lens.

    cream cheese, jalapenos (make sure they're not too watery), cheddar, jack. two big pieces of delicious bread (not wonder bread). generous butter (not margarine). also, let cheese sit out of the refrigerator (covered) for thirty minutes or so, so it melts well.

    On Sundays we use a loaf of bread.
    Cut onion 1- 2 into small pieces and Fry onions on you Sandwich make and close the lid, stir whilst cutting cheese and tomato, then put into a bowl
    Cut Tasty cheese slices, thick or thin. Place into bowl.
    Cut tomato into small segments, pepper and salt to taste.
    One layer of each between two layers of bread
    Smear of butter or what ever and toast to golden brown.
    Beautiful.
    Then again if you want something different from Cheese.
    Squash half a banana and float a little brown sugar on top and then a thin smear of butter on both sides of you newly create toasted sandwich.
    Perfection has never been so close.
    Last Sunday four of us polished off one loaf of bread.
    500 grams of tasty cheese.

    Occasionally, I'll add tuna, and turn it into a tuna melt.

    Your Giude to the Best Cheese missed one. My absolute favorit is a grilled cheese sandwich useing Velveeta cheese. Its like using Miracle Whip instead of Mayonnaise to get that extra tang.

    This reminds me a lot of the European version "croque monsieur". Bread, cheese, cooked ham, (cheese,) bread. I use Gouda (=from the Netherlands) most of the time. They are served with salad and tomatoes. A variation is "croque madame". This is with an egg on top.
    "Croque Boum Boum" is served with Bolognese sauce. You should try this one of you like it with the tomato soup.

    My favorite rainy-day lunch starts with whole grain bread, slices of strong cheddar with a bit of pepperjack for kick. Brush the outsides of the bread with extra virgin olive oil, grill or fry till crispy brown bits form on the outside and the cheese oozes out the edges. Pour a mug of hot tomato soup (I prefer Pacific Natural Foods Organic Roasted Red Pepper and Tomato). Add apple or pear slices on the side for dessert. Mmmmm. Now I'm hungry, and it's not even rainin'.

    I have 2 favorite grilled cheese. First is Velveeta melted on some kind of squishy white bread. A total childhood memory. My favorite adult grilled cheese is made with Italian White Truffle Cheese (Boschetto al Tartufo Bianceto) sp? on a crusty wheat bread-throw your wallet out the window good.

    Try Australia's Favourite Toastie! I work for Dairy Farmers, a large dairy company in Australia. Recently, we held a national consumer promotion in search of the best cheese on toast sandwich or "toastie" as we call them here. Try this winning version!

    1 bunch asparagus spears, ends trimmed
    4 slices rye bread
    1 small ripe avocado, peeled and roughly mashed
    100g shaved smoked ham
    60g sun-dried tomatoes
    Handful fresh basil leaved
    4 slices tasty cheese

    Grill asparagus spears until just tender. Lightly toast rye bread. Spread avocado over each slice of bread and top with ham, sun-dried tomatoes, basil leaves, asparagus spears and tasty cheese. Place under a preheated grill until cheese is bubbling. Serve immediately. Makes 4 slices.

    Fabulous lens! I never knew there was so much to know about grilled cheese... or that there are folks out there that love it as much as I do.

    As far as my favorite way to have grilled cheese? I like to make mine with a little mozzerella and a couple of slices of pepperoni and then dip it in warm marinara sauce. A small side of pasta doesn't hurt either.

    Well ... by now I'm starved. Had to watch the grilled cheese video 3 times - yummy! Guess I know what I'll be eatin' for lunch today. I think I like the classic bread-cheese-bread sandwiches best. Awesome lens!

    That sounds so good. I am from the northwest - we where spoiled cause the Tillamook cheese factory was nearby. Here, in Granite City, I am lucky if I can find Wisconsin cheese. I love you variations, I usually just do tuna and sweet pickles, but I so want to try mushrooms next time. :D

    Take 1/2c shredded cheese and drop it on a nonstick pan, med heat. The cheese will melt and maybe bubble a bit. Lay your bread on top of the cheese and press so it soaks up the cheese. Flip the bread, sprinkle bacon bits and lay on the other slice, brown both sidesand bang! Goood

    I like mine with provolone and thin sliced ham or prosciutto and a thin layer of honey mustard. Dipped in chicken noodle soup. And I love this lense!

    Plain grilled cheese with tomato soup is my favorite! If I want really gooey, then I put mayonnaise and a little bit of ketchup on the inside of the bread before I grill it...5*****

    Hhmm - honestly I like the sammiches so much that the type of bread or cheese is irrelevant to me. Just hand it over please. (Although, in addition to the required dill pickle spear on the side, I often will dip the sandwich into Frank's Red Hot Sauce - Buffalo Style.) Thanks for this yummy lens!

    Use whole wheat bread with Hellman's mayonaise on both slices... add dijon mustard to one slice. I recommend both American and Swiss cheese... mmm. Optional: slice of tomato.

    Crispy crunchy bread with soft flavorful melty cheese inside - that's the ideal grilled cheese! We always partially toast the bread before grilling to make sure it gets really crispy. And I agree about the basil

    Use 3 or 4 cheeses...swiss, cheddar, provolone, muenster, what every you like...on thick slices of White Mountain bread(round white bread w/flour on top from bakery at the grocery store). Secretly put lots of fresh garlic slices in the middle. Fabulous served with chunky homemade tomato soup.

    Technically, the best cheese sandwiches involve a piece of toast with butter and dijon mustard spread on one side, tomato slices on top, and shredded cheese (colby, cheddar etc) and a good dash of worsteshire sauce. Place under a griller to melt cheese.

    My fave? Halloumi cheese, sourdough bread, fresh herbs (oregano, basil) and thinly sliced vine-ripe tomato. The trick: brown the cheese first in some oil- it has a high melting temp (used for Greek 'Flaming Cheese').

    Nothing beats the Greek grilled cheese in my book. Use olive oil instead of butter (brush the bread lightly) and then fill it with a mixture of pre-cooked ground lamb, diced Kalamata olives and feta cheese. Works better with a proper sandwich maket than a frying pan.
