This summer,  I am helping all the great cooks create sizzling barbecues and summer celebrations! 

Gilling success starts by adding a handful of Key factors that will guarantee you great food off the grill. So enjoy relaxing by the pool or just hanging out with friends but remember grilling is the key to a great party.

Preparation--Fire

The Fire:

Your first key element to a great grilling idea is the Fire. The key element in creating great grilling is to check the fire.

Will it be Charcoal or Gas: Well both will create a unique grilling experience.

Charcoal offers a great smoked feeling to your meat. You can surely smell and taste the great aroma of well cooked meats from a charcaol grill.

Gas: Easy to set up, maitain and cooking times are generally shorter.

You can also check your flame on most grills using the below temp ratios. When searing your food. This helps lock in great taste.

Before you begin creating your sizzling barbeque, remember you will need the right grilling utensils for the job.

Tongs; Great for flipping meat or ears of corn.
Also helps with keeping heat away from exposed skin.

Brush; a brush can be used for many different aspects of grilling, but generally used for marinating your select cut of meat.

Spatula; comes in handy when cooking burgers, hotdogs or just keeping your meat from sticking to the grilling surface.

Thermometer: this little gadget will come in hand when entertaining a large crowd. Know when your meat is done and to everyones taste. Be comfortable when cooking on the grill.

Summer Grilling Recipes 

Grilling Recipes-these are my favorite

Balsamic Chicken

4 thawed chicken breasts
1 c. balsamic vinegar
1 c. soy sauce
4 crushed garlic cloves

Place all ingredients in a covered dish and marinade for 2 to 24 hours in the refrigerator. When ready to grill, remove chicken from dish and discard the marinade. Grill for 10 minutes on each side.

Hearty Hoedown Burgers.

1-1/2 lb. lean ground beef
1/3 c. finely chopped onion
1/3 c. finely chopped green bell pepper
2 T. Worcestershire sauce
1/2 t. seasoned salt
1/2 t. garlic powder
1/4 t. black pepper
6 whole grain burger buns
6 slices American cheese
1/4 c. sandwich spread

Heat grill. In medium bowl, combine ground beef, onion, bell pepper, Worcestershire sauce, seasoned salt, garlic powder and pepper. Mix gently until well blended. Shape mixture into 6 patties, 4 inches in diameter.

Grill for 13 to 15 minutes or until patties are thoroughly cooked, turning occasionally. Top each patty with cheese slice; cook just long enough to melt cheese.

Separate buns and place cut sides down on grill to toast lightly.

Baby Back Rib Recipes for Grilling. best Recipe

INGREDIENTS
3 cups pineapple juice
1 1/2 cups brown sugar
1 1/2 tablespoons mustard powder
1/3 cup ketchup
1/3 cup red wine vinegar
1 1/2 tablespoons fresh lemon juice
2 tablespoons soy sauce
1/2 teaspoon ground cloves
2 teaspoons ground ginger
4 cloves garlic, minced
1/2 teaspoon cayenne pepper
2 pounds baby back pork ribs
1 (18 ounce) bottle barbeque sauce

DIRECTIONS
In a large baking dish, mix together the pineapple juice, brown sugar, mustard powder, ketchup, red wine vinegar, lemon juice, and soy sauce.

Season with cloves, ginger, garlic, and cayenne pepper. Cut ribs into serving size pieces, and place into the marinade. Cover, and refrigerate, turning occasionally, for 8 hours or overnight.

Preheat oven to 275 degrees F (80 degrees C). Cook ribs in marinade for 1 1/2 hours, turning occasionally to ensure even cooking.

Preheat grill for medium heat.
Lightly oil grate. Grill ribs for 15 to 20 minutes, basting with barbecue sauce, and turning frequently until nicely glazed.

How To Create Great Grilling Marinades

Summer Grilling Tips Using Marinades.
Add some flavor and enjoyment to your barbecue!

Marinades, Rubs and Mops will help add needed flavor and tenderization to your select cut of meat.
No one licks bland, overcooked, dryed out cuts of meat.

Marinades: Vary for all Sorts of meat, but generally:

Poultry-2 hours-24hrs if possible.
Meat-2 hours-24hrs if possible.
Fish-30 minutes-may loss taste after this time frame.

Rubs: Dry rubs are mixtures of spices, rubbed into meat to add flavor. Can be found in any store but for better results create your own for an array of spices.

Summer Grilling Tip gently apply to meat and allow 30 minutes before grilling.

Mops: Is just a simple finishing sauce that can be basted on the surface while grilling.

Try using Barbeque, Jack Daniels Barbeque Sauce, or whip up your own. Just let it fly!!!
