Habanero Salsa Recipe: Traffic Light Special! featuring red, yellow, and green habaneros!

Here's a quick, fresh, habanero salsa recipe that packs a bunch of heat, while at the same time cools you off with the sweet bite of fresh pineapple. The Traffic Light Special is a habanero salsa recipe that is a play on words, based on the fact that there are 3 colors of habanero in it: red, yellow, and green. This is not for the "mild" salsa lover; it packs a bit of heat, and is categorized as one of Salsaholica's "dare salsas". We also use fresh pineapple in this habanero salsa.

Picking fresh pineapple is pretty easy, if you follow some simple rules:
On a pineapple, "eyes" are the rough spiny marking on the pineapple's surface. Pick a pineapple where the "eyes" are a little yellowish in color, and are all about the same size. Don't worry about how green, or not, the leaves are.

INGREDIENTS

...when possible, fresh is best :)

*1 red habanero, minced
*1 yellow habanero, minced
*1 green habanero (or scotch bonnet), minced
2 cups fresh pineapple, diced
2 cloves garlic, minced
2 tablespoons fresh cilantro, roughly chopped
1/2 teaspoon lime zest
1/2 ginger, minced
pinch of salt

STEPS:

1. Place the 2 cups of pineapple in a bowl, then add the 2 tblsp of lime zest.

2. Stir the pineapple until the zest covers it evenly. Set the
pineapple aside for now.

3. Chop the garlic, and habaneros to a fine mince. If you are using a
food processor for this, turn on the processor and drop items in one
at a time.

4. Add chopped ginger, cilantro, salt, and the pineapple with zest to
the processor. Pulse until well blended but with chunks.

That's it! Let it sit in the fridge for an hour (if you can). Other
wise, break out your favorite chips, and enjoy your Traffic Light Special habanero salsa.
