Inextricably linked with Robbie Burns Night on January 25th, haggis once a poor man's food became regarded as sophisticated delicacy that even Queen Victoria is reputed to have said "I find I like it very well." The Burns Night tradition has developed so that an essential accompaniment is whiskey. Not just any old whiskey mind you, the preferred spirit is a single malt whiskey. This is Scotch distilled from one malt and produced in just one distillery in Scotland. My favourite is Lagavullin, my father on the other hand prefers Dalwhinnie. There is lots of choice, and whisky can also be made into a sauce for the haggis too. The haggis is revered in a wonderful poem by Robbie Burns called Address To A Haggis. Here's the opening verse:

"Fair fa' your honest, sonsie face,
Great chieftain o' the puddin-race!
Aboon them a' ye tak your place,
Painch, tripe, or thairm:
Weel are ye wordy of a grace
As lang's my arm."

Scots Attempt To Overturn 40 Year USA Haggis Ban

Imported haggis was banned by the US because of a prohibition on sheep lungs in food products.Rural Affairs Minister Mr Lochhead said the US was a "potentially lucrative market that could be worth "millions" to Scottish haggis producers. We want to capitalise on the diaspora of Scots in the US and many of them would enjoy the opportunity to indulge in authentic Scottish haggis to accompany their neeps and tatties on Burns night."
