Halloween (or Hallowe'en) is a holiday celebrated on October 31. Halloween activities include trick-or-treating, ghost tours, bonfires, costume parties, visiting haunted attractions, carving jack-o'-lanterns, reading scary stories, watching horror movies and individual traditions. Irish immigrants carried versions of the tradition to North America during Ireland's potato famine of 1846. Other western countries embraced the holiday in the late twentieth century. Halloween is celebrated in several countries of the Western world. Halloween is also becoming increasingly popular with children in other countries due to the influences of American pop culture.

So they started carving pumpkins as a replacement for their tradition.
