Ghoulishly Good Halloween Recipes
Roasting Pumpkin Seeds
Rinse pumpkin seeds under cold water and pick out the pulp and strings. (This is easiest just after you've removed the seeds from the pumpkin, before the pulp has dried.)Place the pumpkin seeds in a single layer on an oiled baking sheet, stirring to coat. If you prefer, omit the oil and coat with non-stick cooking spray.
Sprinkle with salt and bake at 325 degrees F until toasted, about 25 minutes, checking and stirring after 10 minutes.
Let cool and store in an air-tight container.
Bat Wings with Swamp Dip
Ingredients20 chicken wings (3-1/2 pounds)
1/2 cup soy sauce
2 teaspoons grated fresh ginger or 1/2 teaspoon ground ginger
1/4 teaspoon crushed red pepper
1 teaspoon five spice powder
2 cloves garlic, minced
Swamp Dip (recipe follows)
Directions
Place wings in a plastic bag set in a shallow dish. In a small bowl stir together soy sauce, ginger, crushed red pepper, five spice powder and garlic. Pour over wings. Close bag and toss to coat. Chill in refrigerator several hours or overnight, turning bag occasionally. Remove wings from bag, reserving marinade.
Place wings on a foil-lined 15x10x1-inch baking pan. Bake, uncovered, in a 450 degree F oven for 10 minutes. Brush with reserved marinade (discard remaining marinade). Bake 15 to 20 minutes longer or until chicken is tender and no longer pink. Serve with Swamp Dip.
Makes 20 appetizers.
Swamp Dip: In a small bowl stir together a 8-ounce container of dairy sour cream and 3 tablespoons coarse ground mustard. Garnish with fresh whole chives. Serve with bat wings.
Rocky Road Caramel Apples
INGREDIENTS6 Granny Smith apples
6 wooden sticks
1 (14 ounce) package individually wrapped caramels, unwrapped
2 tablespoons water
1/2 teaspoon vanilla extract
1 1/2 cups miniature marshmallows
1 1/2 cups chopped pecans, toasted
1 cup semisweet chocolate chips
DIRECTIONS
Insert wooden sticks 3/4 of the way into the stem end of each apple. Place apples on a cookie sheet covered with lightly greased aluminum foil.
Combine caramels and water in a saucepan over low heat. Cook, stirring often, until caramel melts and is smooth. Stir in the vanilla. Dip each apple into the caramel and gently run apples around insides of saucepan to scrape off some of the caramel. Scrape excess caramel from the apple bottoms using the side of the saucepan.
Combine the miniature marshmallows and pecans on a dinner plate. Roll the apples in the mixture to coat. Place on the aluminum foil and chill.
Put the chocolate chips in a microwave-safe bowl. Cook in the microwave for 30 second intervals, stirring between each, until melted and smooth. Drizzle over the apples and return them to the refrigerator until ready to serve.
Jack O' Lantern Fruit Cup
Halloween recipe with a healthy twist and good tasting too. The kids and teens at your Halloween party will slurp up these fruit cups.INGREDIENTS:
6-8 oranges
2 cans fruit cocktail
1 can pineapple chunks
1 sharpie marker; black
DIRECTIONS:
Cut the tops off of the oranges, as if it was a pumpkin you were carving. Scoop out the orange being careful not to rip the peel. Cut up the oranges to use with the fruit mixture. Using the sharpie marker, draw jack o' lantern faces on the oranges.
Set them aside to dry.
In a large bowl combine the fruit cocktail, pineapple chunks and the orange pieces. Scoop fruit mixture into the oranges and chill for at least one hour before serving.

What To Do With The Rest Of Your Halloween Pumpkin

1.Use the orange pumpkin goop to add more "gross factor" to your kids Halloween costume. Great for monster kids Halloween costumes or kids Halloween costumes that involve mummies, corpses, or aliens. Use caution: it can be extremely hard to wash out pumpkin from a rented kids Halloween costume or from their clothes. It is better to use this homemade goop with old clothes that can be stained.
2.Make a delicious pumpkin pie and bring it to your neighborhood Halloween costume party. Sure, you should show up wearing a creative Halloween costume, but your hosts will love having a pie of homemade, from-scratch pumpkin pie. You can also serve it for dessert to your children when they return home from a night at the Haunted House or a day at the pumpkin patch. Whether they are donning their kids Halloween costumes or not, pie is always a good idea!
3.Separate out the pumpkin seeds from the rest of the pumpkin. Wash the seeds in warm water until all the orange particles are removed. Boil and then simmer the seeds in a pot of water for about 10 minutes. Next, place on a baking sheet, top with a spoonful of olive oil, and bake in a 400-degree oven for 20 minutes or until the seeds become golden burned. Don't let them burn! Pumpkin seeds are a healthy alternative to the usual sugar-filled Halloween candy. Fill the pockets of your kids Halloween costumes with tasty toasted seeds before they leave for treat-or-treating! You can also use the pumpkin seeds as treats for the trick-or-treaters who show up at your door with their adorable kids Halloween costumes.
4.Pumpkin seeds are tasty, but you can make a more gourmet version: caramelized pumpkin seeds. You'll need ½ cup of butterscotch caramel sauce, 1 cup brown sugar, 1 teaspoon cinnamon extract, ½ teaspoon cayenne pepper, 2 cups of roasted pumpkin seeds, and 1 cup almonds. Melt the caramel sauce and sugar in a skillet, and then stir in cinnamon extract and cayenne pepper. Stir in pumpkin seeds and coat in the caramel-sugar mixture. Spread the mixture onto a greased cookie sheet, sprinkle with almonds, and let cool. It's a great addition to autumn salads, a tasty topping to pumpkin pie, or wonderful on its own as a snack! 5.Last but not least, you can make pumpkin bread for your little witches and wizards in their various kids Halloween costumes. You'll need a cup of cooked pumpkin for this recipe, so save the eyes, mouth, nose, and other parts from your Jack-o-Lantern! Combine 2 eggs, 2 cups sugar, ½ cup vegetable oil, and 1 cup cooked pumpkin and mix. In a separate bowl, combine 2 ¼ cups flour, 1 tablespoon pumpkin pie spice (or allspice), 1 teaspoon baking soda, and ½ teaspoon salt. Mix the pumpkin mixture into the flour mixture. Pour batter into loaf pans and bake for 1 hour at 350 degrees. Delicious! And it will be gone in an instant when your children, with their cute kids Halloween costumes, return home from trick-or-treating.
