Pasta With Creamy Pumpkin Sauce

Ingredients
1 pkg. (16 oz.) penne pasta
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, cubed
1/2 cup KRAFT Grated Parmesan Cheese
1/2 cup (1 stick) butter or margarine
1/2 cup milk
1 cup canned pumpkin
1/2 tsp. ground red pepper (cayenne)
ground nutmeg to taste
How to Make Pasta With Creamy Pumkin Sauce
2)Meanwhile, cook cream cheese, Parmesan, butter and milk in large saucepan on low heat until cream cheese is melted, stirring frequently. 3) Add pumpkin and seasonings; stir. Cook until heated through, stirring occasionally.
Drain pasta; place in large bowl. Add cream cheese sauce; toss to coat. Sprinkle with nutmeg.
Tip:
Add 2 cups sliced zucchini to the boiling water the last 3 min. of the pasta cooking time.
Be sure to used canned 100% pumpkin for this recipe, not pumpkin pie filling.

Scary Skillet Shepherd's Pie
Ingredients
1 pkg. (16 oz.) frozen mixed vegetables1 lb. ground beef
1 cup beef gravy
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1 cup milk, divided
1 cup water
2 cups instant potato flakes
1/4 cup KRAFT Grated Parmesan Cheese
How To Cook Scary Skillet Shepherd's Pie

1) Brown meat in large skillet; drain. 2) Cook vegetables as directed on package. 3)Stir gravy into the cooked meat 4)simmer until heated through, stirring occasionally.
5)Microwave cream cheese and 1/4 cup milk in medium microwaveable bowl on HIGH 30 sec.; beat with whisk until smooth. Gradually whisk in remaining milk and water. Microwave 2-1/2 min. or until hot, stirring after each minute. Stir in potato flakes and Parmesan until well blended. Spoon into resealable plastic bag; cut 1 corner from bottom of bag.
6)Remove 12 peas from mixed vegetables; stir remaining vegetables into meat mixture. Squeeze potato mixture into 6 mounds on meat mixture to resemble ghosts. Add 2 of the reserved peas to each for the eyes.

Spaghetti and "Oozing Eyeballs"
Ingredients
2 lb. ground beef1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup water
2 eggs
1 jar (26 oz.) spaghetti sauce, divided
4 sticks KRAFT STRING-UMS String Cheese, cut into quarters
4 pitted large black olives, cut into 4 slices each
1 pkg. (1 lb.) spaghetti
How to Make Spaghetti and "Oozing Eyeballs"

HEAT oven to 375ºF.
1) MIX meat, stuffing mix, water, eggs and 1/4 cup spaghetti sauce. 2) Shape into 16 (2-inch) meatballs. 3) Insert 1 cheese piece into top of each meatball, with end of cheese piece just showing at top. Place on baking sheet. Top each with olive slice to resemble eyeball (my family doesn't care for olives so I left them out).
4) Bake 20 to 25 min. or until meatballs are done (160ºF). Meanwhile, cook spaghetti and heat remaining spaghetti sauce as directed on package and jar.
DRAIN spaghetti. Serve topped with meatballs and sauce.
Tip:
Prepare using 2 pkg. (16 oz. each) Ground Turkey.

Spooky Eyeball Beans

Ingredients
1 jar (18 oz.) oven-baked beans
1 can (16 oz.) kidney beans, drained, rinsed
1 jar (10 oz.) small whole onions, drained
3/4 cup KRAFT Honey Barbecue Sauce
How to Make Spooky Eyeball Beans
BRING to boil on medium heat. Reduce heat to medium-low.
SIMMER 20 minutes or until heated through, stirring occasionally.

Prepare as directed, using KRAFT SWEET RECIPES Honey Mustard Barbecue Sauce.
Cook Your Beans in Style
Chocolate Chunk Pumpkin Bread

Ingredients
2 cups flour
2 tsp. CALUMET Baking Powder
1/2 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
2 eggs
1 cup mashed cooked fresh pumpkin (I used canned pumpkin and it turned out great)
1 cup granulated sugar
1/2 cup firmly packed light brown sugar
1/2 cup milk
1/4 cup oil
6 squares BAKER'S Semi-Sweet Chocolate, coarsely chopped (I used 1cup mini-chocolate chips)
How to Make Chocolate Chunk Pumpkin Bread
Pour into greased 9x5-inch loaf pan.
Bake 55 minutes to 1 hour or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan; cool completely on wire rack. Cut into 18 (1/2-inch thick) slices to serve.
Tip:
Preparing Pumpkin Puree from Fresh Pumpkin
Cut a 4- to 5-lb. pumpkin in half with a large knife. Scoop out seeds and stringy fiber. Cut pumpkin into 1-1/2-inch cubes. Place pumpkin in large saucepan. Add water to 1-inch depth. Bring to boil; cover. Reduce heat and simmer 25 to 30 min. or until pumpkin is tender. Drain well; cool just until pumpkin is easy to handle. Remove peel. Mash with potato masher for a chunky mixture. For a smoother consistency, process pumpkin in a food processor. Drain mashed pumpkin in sieve for about 20 min. to remove excess liquid. Store in refrigerator up to 5 days. Cooked pumpkin can also be frozen up to 6 months in resealable freezer-weight plastic bags.

Spider Web Pumpkin Cheesecake

Ingredients
18 OREO Cookies, finely crushed (about 1-1/2 cups)
2 Tbsp. butter or margarine, melted
3 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
3/4 cup sugar
1 can (15 oz.) pumpkin
1 Tbsp. pumpkin pie spice
3 eggs
1 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 square BAKER'S Semi-Sweet Chocolate
1 tsp. butter or margarine
How to Make Spider Web Pumpkin Cheesecake
BEAT cream cheese and sugar in large bowl with electric mixer on medium speed until well blended. Add pumpkin and pumpkin pie spice; mix well. Add eggs, one at a time, mixing on low speed after each addition just until blended. Pour over crust.
BAKE 50 to 55 min. or until center is almost set; cool slightly. Carefully spread sour cream over top of cheesecake. Run knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan.
PLACE chocolate and 1 tsp. butter in small microwaveable bowl. Microwave on MEDIUM (50%) 30 sec.; stir until chocolate is completely melted. Drizzle over cheesecake in spiral pattern. Starting at center of cheesecake, pull a toothpick through lines from center of cheesecake to outside edge of cheesecake to resemble a spider's web. Refrigerate 4 hours or overnight. Store leftover cheesecake in refrigerator.
Tip:
For easy drizzling, pour melted chocolate into small plastic bag. Snip off a small piece from one of the bottom corners of the bag. Gently squeeze bag to drizzle chocolate over cheesecake as directed.

miniature semi-sweet chocolate chips
worm-shaped chewy fruit snacks
How to Make Individual Boo Cups
Add 2 chocolate chips to each ghost to create eyes, then decorate with 2 fruit snacks.

How to Thaw Cool Whip
Place unopened tub of Cool Whip in refrigerator for 4 hours. Do not thaw in the microwave
Each 8-oz. tub of Cool Whip contains enough whipped topping to decorate about 24 pudding cups.

Ingredients
1 piece black string licorice (16 inch), cut into 1-inch lengths
2 OREO CAKESTERS Soft Snack Cakes

How to Make Leggy Spider
Use red decorating gel to make the eyes.
Oreo Caramel-Dipped Apples

Ingredients
5 medium apples, washed, well dried
1 pkg. (14 oz.) Caramels (about 50)
12 OREO Cookies, coarsely chopped (about 1-1/2 cups)
1 square BAKER'S White Chocolate, melted
Yellow and red food coloring (optional)
How to Make Oreo Caramel-Dipped Apples
Place caramels and 2 Tbsp. water in large saucepan; cook on medium-low heat until caramels are melted, stirring frequently.
Dip apples into melted caramel, spooning caramel over apples to coat. Roll in chopped cookies, pressing cookies gently into caramel to secure. Place on wax-paper-lined baking sheet; let stand 25 minutes or until caramel is set.
Stir 4 drops yellow food coloring and 1 drop red food coloring into melted white chocolate to tint orange. Cool 15 minutes. Drizzle over apples; let stand until firm. Store in refrigerator up to 2 days.
Tips:
Top of Stove Melting
Place chocolate in heavy saucepan; cook on very low heat just until melted, stirring constantly.
How to Neatly Drizzle Chocolate
Spoon melted chocolate into small resealable plastic bag. Cut a small hole cut near the corner of the bag and drizzle over your apple. Refrigerate to set chocolate quickly.

Ingredients
16 Halloween OREO Chocolate Sandwich Cookies, divided
1 pkg. (19.5 oz.) brownie mix
1-1/4 cups JET-PUFFED Miniature Marshmallows
White decorating icing and assorted Halloween candies (worm-shaped chewy fruit snacks or bugs)
How to Make Graveyard Pizza
Prepare brownie mix as directed on package; spread batter into greased 14-inch pizza pan. Bake 18 to 20 minutes or until done.
Sprinkle marshmallows over top of hot brownie; bake an additional 3 to 5 minutes or until marshmallows are lightly browned. Immediately sprinkle chopped cookies over marshmallows. Cool on wire rack.
Decorate remaining 8 cookies with white decorating icing to resemble tombstones. Stand "tombstones" around pizza, pressing gently into brownie. Decorate with assorted candies.

Halloween Cheesecake Brownies

Ingredients
1 pkg. (21-1/2 oz.) brownie mix
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/3 cup sugar
1/2 tsp. vanilla
1 egg
16 drops yellow food coloring
8 drops red food coloring
How to Make Halloween Cheesecake Brownies
BEAT cream cheese, sugar and vanilla in medium bowl with electric mixer on medium speed until well blended. Add egg and food colorings; mix just until blended. Pour over brownie batter; cut through batter with knife several times for marble effect.
BAKE 35 to 40 minutes or until cream cheese mixture is lightly browned. Cool in pan on wire rack. Cut into 32 squares.
Tip:
How to Soften Cream Cheese
Place completely unwrapped package of cream cheese on microwavable plate. Microwave on HIGH 10 to 15 seconds or until slightly softened.

Ingredients
2 pkg. (3.9 oz. each) JELL-O Chocolate Instant Pudding
3 cups cold milk
1 tub (12 oz.) COOL WHIP Whipped Topping, thawed, divided
15 OREO Cookies, crushed (about 1-1/2 cups)
Assorted decorations: 3 CAMEO Creme Sandwich Cookies, decorating gel, 5 candy pumpkins, 10 candy corn pieces
How to Make Ghosts in a Graveyard
Beat pudding mixes and milk in large bowl with whisk 2 min. Let stand 5 min. Stir in 3 cups COOL WHIP and half the cookie crumbs. Spread into 13x9-inch dish; sprinkle with remaining crumbs.Refrigerate 1 hour. Meanwhile, decorate creme sandwich cookies with decorating gel to resemble tombstones.
Insert decorated cookies into top of dessert just before serving. Add candies. Drop large spoonfuls of remaining COOL WHIP onto dessert to resemble ghosts.

How to Make Green Grass
Use snipped pieces of green chewy fruit snack rolls to create grass around the graveyard. (I used some green licorice)
I couldn't find the Cameo Creme Sandwich Cookies at the store so I used Oreo cookies for the tombstones. I also cut the recipe in half because it was just for my family. The kids really enjoyed helping to make this one!
Cameo Creme Sandwich Cookies
Candy Corn Popcorn Balls

Ingredients
1/4 cup (1/2 stick) butter or margarine
1 pkg. (10-1/2 oz.) JET-PUFFED Miniature Marshmallows
1 pkg. (4-serving size) JELL-O Gelatin, any flavor
12 cups (3 qt.) popped popcorn
1 cup candy corn
How to Make Candy Corn Popcorn Balls
Pour marshmallow mixture over combined popcorn and candy corn in large bowl. Mix lightly until well coated.
Shape into 16 (2-inch) balls or other shapes with greased or wet hands.
Yum! Candy!
Marshmallow Ghosts and Ghouls
Halloween Sparkle Punch

Ingredients
1/3 cup TANG Orange Flavor Drink Mix
1 qt. (4 cups) cold water
2 cups cold ginger ale
2 cups blackberry sherbet (only use if no flavor specified)
How to Make Halloween Sparkle Punch
STIR in ginger ale just before serving.
PLACE 1/4 cup sherbet in each punch cup. Pour drink mix over sherbet.
Tip:
Substitute orange sherbet for the blackberry sherbet.
