Ham And Eggs For Supper

I'm sure you've all had ham, eggs, and biscuits for breakfast, right? Well how about having them for supper sometime? Here's a simple recipe you can make that will turn a traditional breakfast meal into an excellent supper. My family likes it so much that even when there's leftovers, they don't last long. The recipe itself came from my mother-in-law. Enjoy!

Here's The Recipe

1/2 cup Mayonnaise
1/4 cup flour
1/2 teaspoon salt
Dash of pepper
2 cups Milk
1/4 lb Shredded Cheese (any kind will do)
1/4 cup sliced green onion (yellow onions work too)
1/4 cup chopped pimiento
1-1/2 cups cubed, cooked ham
4 hard-cooked eggs, sliced
Buttermilk Biscuits

Blend mayonnaise, flour, salt & pepper. Gradually add milk. Cook and stir until thickened. Add cheese, onion and pimiento. Heat until cheese melts, then add the ham and eggs. Bake your biscuits according to the package directions, pour the mixture over the biscuits and eat!
Makes 6-8 servings.
