Make a Ham Loaf with leftover ham
Ham loaf is similar to meatloaf but is made from ground ham, ground pork, brown sugar and seasonings. It's the perfect meal to make when you have leftover ham to get rid of!
When I was living in Pennsylvania, many stores would make their ham loaf fresh and sell it from a deli case, or they'd portion it out in small quantities in aluminum trays that you could take home and bake in your oven. It was nice if you didn't want to make your own!
Since moving away, I can no longer cheat by buying it at the store so here is the recipe that I use. Enjoy!

To make a Ham Loaf that serves 4
To Make Ham Loaf:
1 pound ground baked ham
1 pound ground fresh pork
1 tablespoon spicy brown mustard or prepared mustard
3/4 cup milk
2 eggs- slightly beaten
1 tablespoon dried parsley flakes
1 cup bread crumbs
1/8 teaspoon black pepper
To Make Glaze:
2/3 cup brown sugar
1 teaspoon dry mustard
1/2 cup water
1/4 cup vinegar

Mixing Your Ham Loaf
In a large mixing bowl, combine the ground ham, the ground pork, the eggs, and the milk.
Mix gently with your hands, for about 1 minute to start to incorporate the ingredients.
Add the breadcrumbs, parsley and pepper and mix until everything is just combined, and then stop. Do not over-mix!

Preparing The Glaze
In a medium saucepan, mix together the brown sugar, dry mustard, water, and vinegar. Over low heat, slowly cook it until the sugar dissolves. Set aside.

It is much lighter in weight than traditional anodized pots I've used in the past, which I appreciate because of my CMT.
Molding Your Ham Loaf
Remove mixture from the bowl and mold it just like a meat loaf. Spray your loaf pan with non-stick cooking spray, and put your molded ham loaf into it.
Bake Your Ham Loaf
Preheat your oven to 350°F. Place your ham loaf in the oven and bake for two (2) hours; basting every 15-20 minutes after the 1st hour of cooking.
Remove the loaf from the loaf pan. Now mix the remaining glaze with the pan juices and serve along with the ham loaf.

- Ooh - sounds really nice! We also bake a large ham on Christmas Eve ready for ham and eggs for breakfast. There's always a huge amount leftover.
