What Is Harira?

Harira is a traditional Moroccan soup, is usually eaten in Morocco during dinners and fasting days. Is also can be served to the family and the friends in the specials celebrations like after a wedding night.

Ingredients

* 1/2 cup of chopped fresh cilantro
* 1 pound of cubed beef or lamb meat
* 1 chopped red onion
* 1 can of tomatoes juice
* 1 juiced lemon
* 1 cup of chickpeas
* 1 tables salt
* 1 tables black pepper
* 2 tables of margarine
* 2 beaten eggs
* 3/4 cup of chopped celery
* 3/4 cup of green lentils
* 4 ounces vermicelli pasta
* 7 cups of water

Preparations

1. Put the beef or the lamb, salt, black pepper, margarine, celery, cilantro, and onion into a pot on low heat.
2. Stir frequently for 15 minutes.
3. Put tomato juice, 7 cups water, and the lentils into the pot.
4. Cover the pot, reduce the heat to simmer and let the soup simmer for 2 hours.
5. Place chickpeas and noodles into the soup ant let it cook for 5 minutes more.
6. Stir the lemon and eggs into the soup for 1 minute before serving.
