The State of Hawaii is one of the United States, located on an archipelago in the central Pacific Ocean southwest of the continental United States, southeast of Japan, and northeast of Australia. The state was admitted to the Union on August 21, 1959, making it the 50th state. Its capital is Honolulu on the island of Oahu. The most recent census puts the state's population at 1,211,537.
This state encompasses nearly the entire volcanic Hawaiian Island chain, which is made up of hundreds of islands spread over 1,500 miles (2,400 km). At the southeastern end of the archipelago, the eight "main islands" are (from the northwest to southeast) Niihau, Kauai, Oahu, Molokai, Lanai, Kahoolawe, Maui, and Hawaii. The last is by far the largest, and is often called the "Big Island" or "Big Isle" to avoid confusion with the state as a whole. This archipelago is physiographically and ethnologically part of the Polynesian subregion of Oceania.

The term kulua pork is frequently used to describe any pork shoulder butt which is rubbed with salt, wrapped in ti plant leaves, and slow smoked, without regard for an imu.
Kulua is a traditional Hawaiian cooking method that utilizes an imu, or underground oven. The word kulua literally means "to cook in an underground oven" and also describes the flavor of food cooked in this manner - e.g. the kulua pig (Hawaiian puaa kulua) which is commonly served at luau feasts.
Traditionally, extremely hot rocks were placed in a hole approximately 6' by 4' by 3' and the hole was lined with vegetation such as banana leaves. A salted pig was placed inside and covered with more banana leaves to preserve the heat and flavor. Then, it was covered with burlap and soil, and left to steam all day. Once removed from the imu, the pig was ready to be served.
Modern-day technology has replaced the use of rocks and leaves, but kulua pig slow-cooked in an imu pit continues to be a main attraction at most luaus. United States Department of Agriculture standards prevent traditional kalua pig from being sold commercially. Some companies have attempted to imitate the kulua taste and even devised the imu pao (an above-ground variant of the imu), but most have failed to capture the distinct taste of a kulua pig.

Hawaiian Poi At The Luau

Poi is a Hawaiian word for the primary Polynesian staple food made from the corm of the kalo plant (known widely as taro). Poi is produced by mashing the cooked corm (baked or steamed) to a highly viscous fluid. Water is added during mashing and again just before eating, to achieve a desired consistency, which can range from liquid to dough-like (poi can be known as two-finger or three-finger, alluding to how many fingers you would have to use to eat it, depending on its consistency).
The bowl of poi was considered so important and a sacred part of daily Hawaiian life that whenever a bowl of poi was uncovered at the family dinner table, it was believed that the spirit of Huloa, the ancestor of the Hawaiian people, was present. This is because Hawaiians believed that the taro plant, or kalo, was the original ancestor of the Hawaiian people. Poi should not be confused with Tahitian po'e, which is a sweet, pudding-like dish made with bananas, papaya, or mangoes cooked with manioc and coconut cream.

- Very nice lens - makes me miss my second home (lived in Hawaii half my adult life, and I'm 55). I love IZ's music also. The Hawaii flag flew at half mast when he left us. - This lens definitely brought back some memories of my trip to Hawaii. What a beautiful place to visit. My favorite part of my trip was the beautiful sunsets in the evening sitting on the beaches and snorkeling with the colorful fish in the light blue waters of the sea.
