Roasted Brussels Sprouts

Try this tasty recipe for Brussels Sprouts . It's like you never dreamed could be so good.

INGREDIENTS

1 pound Brussels sprouts, rinsed, ends trimmed
1 Tbsp minced garlic (about 3 cloves)
1 teaspoon lemon juice
2 Tbsp olive oil
Salt
Freshly ground black pepper
1/4 cup freshly grated Parmesan cheese (optional)
Directions
1 Preheat oven to 350°F. Place Brussels sprouts in a cast iron frying pan (or a roasting pan, but a cast iron frying pan will work great for this recipe). Toss in the garlic. Sprinkle Brussels sprouts with lemon juice. Toss with oil so that the sprouts are well coated. Sprinkle generously with salt (at least a half teaspoon) and a few turns of black pepper.
2 Put Brussels sprouts in oven on top rack, cook for 20 minutes, then stir so that the sprouts get coated with the oil in the pan. Cook for another 10 minutes. Then sprinkle with Parmesan (if using) and cook for another 5 minutes.
The sprouts should be nicely browned, some of the outside leaves crunchy, the interior should be cooked through.
Add more salt to taste. (Salting sufficiently is the key to success with this recipe.)
Serves 4.

Hummus for the Heart -

INGREDIENTS
2 garlic cloves, mashed and then minced
2 15-oz cans of garbanzo beans (chickpeas), drained and rinsed
2/3 cup of tahini (roasted, not raw)
1/3 cup freshly squeezed lemon juice
1/2 cup water
1/4 cup olive oil
1/2 teaspoon of salt
Pine nuts (toasted) and parsley (chopped) for garnish
METHOD
1 In a food processor, combine the garlic, garbanzo beans, tahini, lemon juice, 1/2 cup water, and olive oil. Process until smooth. Add salt, starting at a half a teaspoon, to taste.
2 Spoon into serving dish and sprinkle with toasted pine nuts and chopped parsley.
Serve with crackers, raw dip vegetables such as carrots or celery, or with pita bread. You can cut the pita bread into thin triangles, brush with olive oil and toast for 10 minutes in a 400°F oven to make pita chips with which to serve the hummus.
Makes about 3 cups.

Healthy Honey Mustard Dip


After reading the Reader's Digest article this AM about the healing power of mustard, "mustard seeds contain compounds that studies suggest may inhibit the growth of cancer cells. "
I found this recipe for a party dip that I think I might be able to label as - a healing party dip.

Ingredients

  • 1/2 cup grainy brown mustard

  • 1/2 cup honey


Instructions

Combine honey and mustard. Mix well. Serve with pretzel sticks, rods, or traditional pretzel shapes.

This is something I would fix and keep on hand for some snacking--Healthy Snacking that is.
