Most of us look out for healthy food recipes. But unless we can find easy healthy food recipes we will find it difficult to plan our lives around healthy meals.


The food recipes we select have to be easy to cook, healthy to eat and delicious to taste. Even if one of these characteristics is missing, the easy healthy food recipe is lacking either because it is not easy or it is not healthy.


This is one of the main reasons why we go for non-healthy snacks or junk food instead of healthy breakfast recipes. Who would like to cook an elaborate breakfast when we have just got out of bed or rushing to office?


There are many Indian healthy recipes that are easy to cook, that have balanced nutrients as ingredients and are absolutely healthy. Some of the Indian dessert recipes have a lot of fattening ingredient in them but there are ways of making them with more or less quantity of butter or clarified butter called ghee.



This is Healthy Yogurt soup by Diba.

ingredients:

- 2 cups plain yogurt

- 1/2 cup flour

- 8 cups water

- 1 cup cooked chickpeas

- 1/2 cup cooked rice

- 2 cups chopped coriander

- salt ,black pepper

- one minced garlic clove

Have you got all the ingredients ready?

Now we can start making healthy Yogurt soup and think of Diba when we relish it.

Mix yogurt and flour well, add water and salt , bring to the boil.

Boil for 10 minutes stirring frequently.

Take the peas and rice, add one cup of water.

Blend coarsely peas, rice and water in a blender.

Add to yogurt soup and boil for 5 more minutes.

Remember to keep stirring :)

Add garlic and coriander. Boil for 5 minutes.

Add pepper and salt.

Diba says, "You can add any spice you like to this plain soup. But take care coriander must not be overcooked or it will lose the flavor".

Healthy Food Recipe Easy to Cook 

Rice Recipe

Here is a simple rice recipe. You can cook the rice in microwave or in a pressure cooker.

Once the rice is cooked you add salt and lemon to it. To add a special flavor and enrich it with nutrients you can do what is called "tadka" in Indian cooking - this is seasoning. Tadka or seasoning is done by popping mustard seeds in a teaspoon full of warm oil and adding cumin seeds and a few granules of dal.

Let us get to this recipe in detail:

Cook rice with water.

One cup rice, two cups water. Cook it in the pressure cooker or in microwave.

Prepare for seasoning.

For seasoning, take two spoons of oil in a pan, heat it and put the mustard seeds in the oil. When the mustard seeds start popping and crackling add the red chillies (optional)

[Red chillie adds a good flavor but you use it only for seasoning. You take it out and throw it away later. Do not eat it because they will be too spicy.]

Add about eight/ten granules of chickpea dal and three/four white lentil dal to the warm oil in which mustard and chillies were added. Add a pinch of asafoetida (hing). Add a teaspoon of cumin seeds. Finally add some curry leaves.

That finishes seasoning or "tadka". The best part about tadka is you can leave out any of these ingredients and make do with whatever you have at home. If you have all of them use them, if not it is ok.

Now that seasoning is over we can add rice to that mixture of mustard seeds and roasted dals.

Add the cooked rice. Add salt and a pinch of turmeric powder and mix well.

Remove from the stove and add two teaspoons of lemon juice. Mix well.

You can also garnish the dish with roasted cashew nuts, chopped coriander and curry leaves.

Ingredients:

1. rice - 1 cup
2. water - 2 cup
3. lemon - 1
4. oil - 2 teaspoons
5. Mustard - 1 teaspoon
6. red chillies - 1 (optional)
7. chickpea dal - 1 teaspoon
8. white lentil - 1/2 teaspoon
9. curry leaves - 5 leaves
10. turmeric powder - a pinch
11. asafoetida - a pinch
12. salt to taste
