Another nice thing about Peanut Oil is that it also gives your food a nice golden brown color when you fry with it. It is considered to be the healthiest oil on the market today.

Healthy Deep Fryers and Healthy Frying Techniques

So oil is an important part of healthy fryer puzzle, some types are better than others because of the types of fat they contain. Another very important part of the picture is fat absorption. Regardless of the type of cooking oil used, oil absorption is a critical factor, as you have already guessed less is better.
So how do we make sure we absorb the bare minimum? The most important factor here is to choose the right sized fryer for the job and do not over fill it. That sounds simple but it is the most overlooked factor in healthy frying. For your food to absorb the least amount of fat it needs to be completely surrounded with oil (make sure pieces do not clump together) and the oil temperature needs to be maintained at a minimum. Too many pieces in the fryer at once means the oil temperature gets pulled down and your food will actually absorb more of the oil. This is because the steam barrier that surrounds your food when the oil temperature is correct is no longer there (or is reduced) and more oil actually soaks into the food. The other important factor here is that when the temperature is too low it takes longer to cook the food and that actually will cause more of the oil to soak in as well.
One fairly new idea is the healthy spin fryer. We mentioned this fryer in the beginning but never really explained the benefits. This healthy fryer truly is healthy because it has a unique feature that allows you to spin the food after it is cooked which effectively removes a lot of the excess oil from your food. It works kind of like washing machine during the spin cycle except it throws the oil off instead of water. You have the choice of two speeds depending on the type of food that is cooked and how much you really want to throw off. It knocks out up to 55% of the fat absorbed during frying.
