Pocket Cucumbers
Delicious healthy snacks the kids love
What You Need:2 pieces of whole grain pita bread
3 TBSP creamy low fat ranch dressing
1 small cucumber, sliced thin
1 carrot, sliced thin
How to Make It:
Slice each piece of pita bread in half.
Open the pockets and spread each half with the ranch dressing.
Slide to slices of cucumber into each pocket.
Add the carrot slices on top of the cucumbers.
If you are having some trouble opening the pita bread pocket there is an easy solution. Place the halves on a piece of paper towel. Place them in the microwave on high power for about 8 seconds. Gently press to open the pocket. Your kids will flip for this healthy snack recipe
Salad Sandwich
A mouth full of flavor in this healthy snack
What You Need:2 large whole grain rolls
3 TBSP salad dressing (low fat)
1 TBSP barbecue sauce (sugar free)
4 lettuce leaves
2 slices of tomato
4 slices of cucumber
2 green pepper rings
How to Make It:
In a mixing bowl combine the salad dressing and barbecue sauce.
Mix together well.
Cut each roll in half.
Spread the top and bottom with the salad dressing mixture.
Layer the bottom half with 2 lettuce leaves.
Then add a tomato slice, 2 cucumber slices and a pepper ring.
Replace the top and enjoy.
Cut the sandwiches into bite size portions for smaller children. They will really enjoy the taste of the salad dressing spread and when cut into smaller pieces will have not trouble with the salad fixings sliding off.
Veggie Tortilla
Your Kids will ask for this Healthy Snack all the time.
4 (8 in) soft whole grain tortilla shells
1 C Cheddar cheese, shredded (low fat)
½ C green pepper, chopped
½ C tomato, chopped
¼ C onion, chopped
How to Make It:
With the tortilla laid flat spread one side with the cheese.
Add the green pepper, tomato and onion.
Fold over to close.
Place a skillet on medium high heat.
Cook the tortilla for 2 minutes.
Flip and cook an additional 1 minute.
Cut into fun bite size finger foods.
These make great healthy snacks for hungry kids. Cut each one in 4 triangles and serve with salsa or sour cream for dipping.
Waffle Sandwich
"Let go of My" Sandwich?
What You Need:2 frozen whole grain waffles
2 TBSP low fat ranch dressing
2 tomato slices
4 cucumber slices
Shredded carrots
How to Make It:
Toast the waffles according to package directions.
Spread each waffle with 1 TBSP ranch dressing.
Layer the tomatoes and cucumbers onto one waffle.
Top with the shredded carrots.
Place the remaining waffle on top.
Any type of dressing will work with these fun sandwiches. Try different vegetables to find just the right taste for your children. Cut them into 2 triangles and watch them gobble them down and ask for more. Watch what the labels of the waffle packages say for ingredients if you really want this to be a healthy snack
Broccoli Balls
Sounds Funny, Tastes Great

What You Need:
Non stick cooking spray
1 (16 oz) pkg. frozen broccoli
1 C bread crumbs
1 C low fat cheddar cheese, shredded
3 eggs
How to Make It:
Spray a cookie sheet with the non stick cooking spray.
Cook the broccoli according to package directions.
Drain the broccoli well and chop into small pieces.
In a large mixing bowl combine the cooked broccoli, bread crumbs and cheese.
Toss to mix.
Add the eggs and mix well.
Roll a little of the mixture into a small ball.
Continue until all the mixture is rolled into balls.
Place the balls on the prepared cookie sheet about 2 inches apart.
Bake in a preheated 375 degree oven for 20 minutes.
Turn balls and continue baking for 10 minutes.
Change the taste of the little balls by using Swiss cheese and seasoned bread crumbs. What doesn't taste good with cheese on it?

Veggie Roll Me Ups
My Kids Love these Healthy Snacks!
What You Need:2 soft whole grain tortillas
2 TBS low fat cream cheese, softened
1 carrot, grated
1 sweet red pepper, chopped fine
How to Make It:
Place tortillas in the microwave about 10 seconds to warm.
Lay each tortilla flat and spread with 1 TBSP of cream cheese.
Place the carrot and pepper on top of the cream cheese.
Roll tortilla around vegetables.
Spinach leaves also work well in these roll ups. For a little change of pace use a cream cheese that is flavored with herbs.
Zucchini Fingers
Introduce your kids to a new vegetable with this healthy snack

What You Need:
Enough egg substitute to equal 1 egg
1/3 C seasoned bread crumbs
¼ C parmesan cheese
4 small zucchini, cut lengthwise
Non stick canola cooking spray
How to Make It:
Line a cookie sheet with foil and spray the foil with the cooking spray.
Preheat oven to 450 degrees.
Place the egg substitute into a bowl.
Combine the bread crumbs and parmesan cheese together in a separate bowl.
Place each zucchini finger into the egg mixture and coat completely.
Place the coated zucchini into the bread crumb mixture.
Place on the prepared baking sheet.
Bake 20 minutes or until a light brown and the zucchini is tender.
Try these with a little ranch dressing on the side for dipping.
The Great Pumpkin Spread
Healthy alternative to peanut butter
What You Need:1 (15 oz) can prepared pumpkin
1 tsp. cinnamon
¼ C pecans, finely chopped
1 (4 oz) pkg. (low fat) cream cheese, softened
Graham crackers (they make low fat ones)
How to Make It:
Place the pumpkin in a small saucepan.
Heat the pumpkin over low temperature just until warmed through.
Remove from heat and stir in cinnamon and pecans.
Allow mixture to cool slightly and then add cream cheese.
Mix well to combine all ingredients.
Spread on the graham crackers and serve.
This makes a great dip for fresh fruit also. Try some sliced apples, pears or even strawberries the kids will love it.

Popeye's Favorite After School Treat
Popeye says eat healthier snacks! I personally really like these!
What You Need:3 egg whites, lightly beaten
1 C low fat Parmesan cheese
4 scallions, chopped fine
1 stick low fat margarine, melted
2 C herb stuffing mix
2 (10 oz) pkg. frozen spinach, thawed, squeezed and chopped
How to Make It:
Place the eggs in a large mixing bowl.
Add the cheese, scallions and margarine.
Crush the stuffing until it is very fine.
Add the stuffing to the mixture.
Add the spinach and stir to combine.
Preheat oven to 350 degrees.
Dampen your hands with a little water and shape the spinach mixture into 2 inch balls.
Place the balls on an ungreased cookie sheet.
Bake for 25 minutes.
Remove and allow to cool slightly before serving.
These can be made and frozen for up to 2 weeks before baking. Serve them with a side of low fat; sour cream, marinara sauce or ranch dressing for dipping.

Ants in the Gravel
An old classic healthy snack.

What You Need:
2 celery stalks
8 TBSP low fat cream cheese, softened
½ C granola
Raisins
How to Make It:
Clean each stalk of celery well and pat dry.
Cut each stalk into 6 pieces.
Spread the celery pieces with the cream cheese.
Add the granola and press into the cheese.
Place the raisins on top.
Replace the cream cheese with peanut butter or a cheese spread for a little variety.
Edible Flower Garden
Put this out and watch the kids go for it
What You Need:1 (16 oz) container of low fat sour cream
1 TBSP white vinegar
2 TBSP parsley, minced
½ tsp. garlic powder
2 TBSP onion, grated
Radish slices
Cucumbers cut into rounds
Baby carrots
Celery stalks
Cherry tomatoes
Spinach leaves
Cauliflower pieces
Broccoli pieces
How to Make It:
Mix together the sour cream and vinegar until very smooth.
Sprinkle in the parsley, garlic powder and onion.
Continue to mix until all ingredients are incorporated together.
Refrigerate until ready to use, at least 1 hour.
Clean and dry the vegetables.
Place them on individual plates.
Use the cucumbers, radish slices, cauliflower and tomatoes to make the flowers.
Use the celery sticks for stems.
The spinach leaves make great flower leaves.
The broccoli can be used to make grass.
Make as many different flowers as you like.
Serve with the dip and enjoy.
These edible flowers are a lot of fun to make and eat. Let the kids make their own flower garden and then eat them up.

- You have some great stuff in here but if it was my lens, I would leave out the grains, cheese, margarine, etc as healthy foods. The best snack I think is just having a bowl full of apples! Most kids love them and they are really quick and easy! :-)

- Great lens! My personal favorite (and my daughters) is pizza toast. Simply lay out some pieces of bread, spread with tomato paste, top with fave veges or normal pizza ingredients (cheese, olives, tomato, onion, capsicum etc) and then grill. Fun, simple and just the right size for kids~!
