This site will be updated on a fairly regular basis with more new healthy chicken recipes, so I very much hope you will take the opportunity to visit again very soon and sample some of the latest offerings. Let me show you how to prepare chicken in a simple, healthy and delicious fashion!

The Golden Rule

It is vitally important that we always remember, when preparing any type of chicken recipe, that we make sure the meat is fully and properly cooked. Chicken is not like beef, game or certain types of fish - it must never be under done.

The easiest way to tell whether chicken is properly cooked or not is to stick a skewer - or even a fork - into the thickest part of the flesh and check that the resulting juices run clear. If there is any sign of red or pink at all, more cooking time is absolutely required.

Please always bear this in mind - under cooked chicken can be seriously hazardous to your health!

Healthy Tarragon Chicken and Mushroom Recipe

A healthy chicken recipe with a very distinctive flavour

Tarragon Chicken and MushroomThis is intended as a lunch recipe but that by no means precludes it from being served in a more substantial form as an evening meal. Try perhaps omitting the salad and serving the chicken along with, for example, some boiled broccoli and buttered new potatoes. Remember, experimentation is very often what creates the best recipes of all!

Per person for this dish, you will require:

1 skinned, free range chicken breast fillet
1 onion (peeled and sliced)
1 garlic clove (very finely chopped)
2 large closed-cup mushrooms (thickly sliced)
Olive oil
Generous pinch of dried tarragon
Salt/freshly ground black pepper

Put your oven on to preheat to 200 degrees centigrade or equivalent. Arrange the onion and mushroom slices intermittently in a circle on the bottom of a round casserole dish. Drizzle with olive oil and sprinkle about one third of the chopped garlic and some tarragon over the top. Place the chicken breasts on top, then the remaining garlic and a further sprinkling of tarragon. Season with salt and black pepper and drizzle with a little more olive oil. Put the lid on the dish and cook in the oven for about 25 to 30 minutes, depending upon the size of the fillet. Take the dish from the oven and with a metal skewer, check the chicken juices are running clear and that the meat is properly cooked. Serve on a bed of fresh rocket leaves.

Healthy Avocado Rolled Chicken with Spinach Recipe

Something just a little bit different

Avocado Rolled Chicken with SpinachAlthough this may initially look and sound like a dish of some complexity, please believe me that it is anything but. It is actually very simple and quick to prepare. Just remember to take the extra couple of minutes and care required to roll the chicken properly.

Per person, you will require:

1 skinned chicken breast fillet
1 small avocado (stoned and peeled - see end of recipe for simple instructions)
1 clove of garlic (crushed)
1 small red chilli pepper (deseeded and very finely chopped)
Handful of fresh spinach
4 or 5 walnuts (roughly chopped or crushed)
Salt/freshly ground black pepper
Olive oil

Put the oven on to preheat to 200 degrees centigrade or equivalent. Mash the avocado in a bowl with a fork and add the garlic and chilli pepper. Season and mix well. Lay the chicken fillet smooth side down on a chopping board and either with a meat tenderising mallet or a rolling pin, gently bash it to a thickness of about 1/4 inch (1/2cm.) Care is required here or the tender flesh will come apart - remember it is not a beef steak! Spread the avocado mix evenly over the flattened chicken and carefully roll it in to a tube. Lightly sprinkle some olive oil over the base of a casserole dish and place the chicken inside. Cook for 25 minutes.

Toss the spinach leaves with the crushed walnuts and lay on a serving plate. Remove the chicken from the oven, transfer it to a chopping board and after allowing it to rest for a few minutes, slice and arrange over the salad.

Avocados

The process of removing the stone from and peeling an avocado is very straightforward, provided we tackle it correctly. Rest the broad end of the avocado on a hard, flat surface and hold it steady with one hand. Take a large, sharp knife and cut down through the centre until you feel it hit the stone. Hold the knife steady turn the fruit slowly away from you, so that the knife traces a pattern around the entire circumference. The two halves should then be twisted gently in opposite directions and should come apart quite easily, the stone still embedded in one of them. Tap the sharp blade of the knife once, gently but firmly, on the stone. The knife should cut in to the stone and a gentle twist should remove it. The two halves can now be peeled quite easily by hand.

Healthy Chicken and Bacon Parcels with New Potatoes Recipe

Two classic foodstuffs delightfully combined

Chicken and Bacon Parcel with New PotatoesThis is a delicious recipe which involves very little hands on preparation. It is therefore ideally suited to one of those days where one's tasks are many and time is short!

Per person, for this recipe, you will require:

1 chicken breast fillet
2 large rashers of unsmoked bacon
1 small tomato (sliced)
2 tsp coriander, cilantro in US (roughly chopped)
1 clove of garlic (finely chopped)
Freshly ground black pepper
Olive oil
4 or 5 small new potatoes (unpeeled)
Small knob of butter
Pinch of dried dillweed

Place a couple of slices of tomato on the underside of the chicken breast, cover with coriander and garlic and wrap the bacon around it. Place the parcel in the dish and cover with any remaining coriander. Add some pepper and olive oil. Put the lid on the dish and cook in a preheated oven at 200 degrees Celsius for 20/25 minutes. Check that the chicken is cooked all the way through by inserting a metal skewer or fork and ensuring the juices run clear.

NB: no additional salt is required in this dish as the bacon provides all that is necessary.

Boil the new potatoes in salted water for about 25 minutes, drain well then add the knob of butter and the dill and swirl them gently around the pot to ensure they are fully coated.

Healthy Fried Chicken and Apple Recipe

Quick, simple and delicious

Apple Fried ChickenThis is a recipe which I would suggest be made for lunch. It is incredibly simple and quick, if perhaps you don't have a lot of time, but does not sacrifice taste in this respect. It is also made all in one pan, which saves further time in relation to washing up!

For one person, you will need:

1 organic chicken breast fillet
1 large red, sweet apple (halved, de-cored and chopped)
1 medium white onion (quartered and segmented)
1 garlic clove (finely chopped)
Half tsp of chopped fresh sage leaves (or generous pinch of dried sage)
Salt and pepper to season
Tbsp sunflower oil

Put the sunflower oil in to a large frying pan and bring up to a medium heat. Add the chicken and fry for ten minutes on one side. Turn the chicken and fry for a further five minutes before adding the remaining ingredients for the last five minutes.

Ensure the chicken is fully cooked by inserting a skewer or fork to check the juices run clear and serve.

Healthy Chicken and Mushroom Pie Recipe

Chicken and Mushroom PieChicken is perhaps not included as an ingredient in pies as often as beef, pork or even fish but this is a recipe which I hope you will agree inspires us to change that fact.

For this recipe, which should serve two, you will need:

¾lb (350g) chicken breast, diced
1 small onion, halved then sliced
7 or 8 small button mushrooms, halved
2 cloves of garlic, crushed
¼ pint (150ml) fresh chicken stock
Pinch of dried thyme
5oz (150g) puff pastry
1 tbsp sunflower oil
Knob of unsalted butter
Beaten egg for glazing

Put your oven on to heat to 200 degrees celsius or equivalent. Heat the sunflower oil in a large frying pan and add the chicken pieces to seal. As soon as the chicken pieces have turned completely opaque, add the onion, mushrooms, garlic and thyme for thirty seconds to heat through. Add the mixture to an 8" (20cm) long, rectangular pie dish and pour over the heated chicken stock. Grease the edges of the dish with the butter and cover with the rolled pastry, glazing with the eggwash. Cut a small cross in the centre of the pie to allow steam to escape during cooking.

Bake for 30 to 35 minutes, until pastry has risen and turned a deep shade of golden brown.

A delicious yet healthy way to enjoy fried chicken

Pan Fried Chilli Chicken on Coriander RiceThis is an extremely simple and healthy recipe which I devised when debating with myself what to have for lunch one day. It is often the case that I create recipes simply by considering some of my favourite ingredients and pondering as to how I can combine them together in what I hope will be a novel and interesting fashion. I hope you like what I came up with here.

Per person, you will require:

1 chicken breast fillet (skinned)
3oz (75g) of basmati rice
1 small tomato (quartered)
1 tbsp of plain flour
½ tsp of chilli powder (or more if you like it hot!)
1 clove of garlic (crushed)
2 tsp of roughly chopped coriander (cilantro, in the USA)
Olive oil
Salt

The rice you buy will have cooking instructions on the packet so decide when to put it on in relation to the chicken - which takes about twenty minutes - accordingly.

Combine the flour, chilli powder and a pinch of salt on a flat plate and pat the chicken in it to coat it well. Add a splash of olive oil to a non-stick frying pan and bring it up to a medium heat. Fry the chicken for about ten minutes each side, depending on the thickness of the fillet, but always remember that chicken must be cooked thoroughly before being eaten. To check whether it is fully cooked, stick a skewer or even a fork in to it and ensure the juices run clear.

When the rice is cooked, drain it well and combine it in a bowl with the garlic, coriander (cilantro) and a pinch of salt. Plate the rice, put the chicken on top and garnish with the tomato.

A simple yet delicious healthy chicken recipe suggestion

Baked Chicken Breast on Potato RostiThis recipe is especially straightforward and simple yet certainly does not compromise on taste!

Per person you will need:

1 lean chicken breast
½lb potatoes (peeled and coarsely grated)
½ small onion (peeled and coarsely grated)
½ small beaten egg
2 cloves of garlic (crushed)
Pinch of dried sage
Salt
Tbsp low fat soured cream
Tsp freshly chopped coriander (known as cilantro in US) plus a pinch extra to garnish

In a small dish, mix the soured cream, one of the garlic cloves and the coriander thoroughly together and refrigerate.

Preheat your oven to 200 degrees centigrade or equivalent. Wrap the chicken breast(s) loosely in aluminium foil and place on a baking tray - no seasoning, no oil, just the chicken. Bake for 25/30 minutes, ensuring the chicken is properly cooked and the juices run clear.

Put the grated potato and onion into the centre of a clean tea towel, bring up the four corners to fashion what looks like a piping-bag and, over the sink, squeeze out as much of the water as you can. Place it into a bowl and add the egg, remaining garlic, sage and salt and stir well. Put a little sunflower oil into a large frying pan and bring it up to a medium heat. Add the mixture and shape into a circle about 1/3" (1cm) thick. Cook for ten minutes each side.

Put the rosti onto a large plate and the chicken breast on top. Spoon on the soured cream and garnish with a little coriander leaf.

Healthy Chicken Stock Recipe

A traditional recipe idea devoid of modern chemicals!

There are of course as many ways to make a simple chicken stock as there are chicken recipes but I invariably make mine in this fashion.

You will need:

1 medium sized whole raw chicken (make sure it will fit in to your largest pot!)
5/6 pints (2½ litres) of boiling water
2 shallots (roughly chopped)
6 cloves of garlic (roughly chopped)
2 carrots (roughly chopped)
2 bay leaves
Olive oil
Salt and freshly ground black pepper

Sweat the shallots and the garlic gently in the olive oil for a few minutes in your pan until softened. Add the remainder of the ingredients followed by enough boiling water to come within an inch (2 1/2cm) of the lip of the pot. Bring back to the boil and simmer for one hour, turning the chicken over half way through cooking. Remove the chicken from the pot and use as required, returning the bones to the pot. Put the lid on your pot and leave to cool overnight.

On Day Two, a film of fat and impurities should have formed over the top of your cooled stock. Taking a large spoon, gently and carefully skim this off and discard. Take a few minutes to do this properly, being careful not to stir the stock in the process. Sieve your stock then in to a large bowl to remove all the carcass and vegetable parts from the day before which should also be thrown away.

The stock is now ready to be used or can be frozen very successfully.

I feel that I should perhaps point out here that when we refer to "chicken stock," we should never be referring to those horrendous little cubes of dried chemicals which are mixed with boiling water to emulate same. Take the extra time necessary to make your stock from scratch and the taste of your meal and your health will be all the better for it.

Healthy Poached Chicken on Sweet Potato Mash Recipe

A delicious alternative to ordinary mashed potatoes

Poached Chicken on Sweet Potato MashThis is but one idea for using the chicken which made the above stock. Sweet potatoes offer an extremely varied alternative to the more traditional varieties we are all more familiar with. They have a unique flavour all of their own and are, in addition, an exceptionally healthy option.

Per serving, you will require:

1 chicken breast
2 medium sized sweet potatoes
1 large garlic clove (crushed)
2 tsp roughly chopped coriander (known as cilantro in USA)
Pinch of dried cumin powder
Handful of frozen peas
Salt

Peel and chop the sweet potatoes and put them on to boil in a pan of lightly salted water. Carefully carve the entire chicken breast fillet(s) from the bird and slice. When the sweet potatoes are soft (15 to 20 mins,) drain them well, return them to the empty pot and mash them. Put your peas on to boil for 2 1/2 to 3 minutes, per the instructions on the packet. The garlic, cumin and coriander should be stirred well through the mash then a bed made to acccomodate the chicken. The drained peas can be arranged in a surrounding circle.

Healthy Chicken Broth Recipe

A delicious recipe for a healthy and hearty chicken soup

Chicken BrothThis is a simple suggestion as to how you may wish to use the chicken stock from the recipe further up this page. A bowl of thick and hearty soup is always welcome on a cold winter's day or night and is simplicity itself in terms of preparation.

You will require:

4 or 5 pints (2 or 2½ litres) of chicken stock
2 carrots (scraped, one grated and one diced)
1 leek (roughly chopped/sliced)
Handful of chicken pieces, perhaps reserved from previous day
Large handful of fresh parsley (roughly chopped)
2 tbsp frozen peas
4oz (100g) basmati rice
Salt and freshly ground black pepper

Bring your stock to the boil and add the chicken, carrots, leek, peas and rice and simmer for at least half an hour, adding the parsley five minutes before the end of the cooking time. Season to taste.

There is a widely held belief that, although your soup is now technically ready, it actually tastes better the following day again when reheated. I happen to subscribe to this belief as the flavours have all been given additional time to infuse. Whenever you choose to eat it, though, I hope and believe you will enjoy it.

Healthy Chicken Biryani Recipe

My interpretation of a classic Indian dish

Chicken BiryaniI did not simply sit down and create my version of this Indian classic and much loved dish. It instead evolved after I had prepared it on several occasions, tweaking the ingredients each time that I did so. I am now happy with it as it is and feel I am ready to share it with the world.

For two people, you will need:

1 large free range chicken breast fillet, cut in to 1"(2½cm) cubes
1 small onion (finely chopped)
2 cloves of garlic (finely chopped)
5oz (125g) basmati rice
¾ pint (425ml) fresh chicken stock
½ small cauliflower head (broken in to small florets)
Tbsp of frozen peas
½ tsp powdered turmeric
½ tsp powdered cumin
¼ tsp chilli powder
¼ tsp ground coriander seeds
1 3" (7½cm) cinnamon stick
2 small tomatoes (quartered)
6 slices of cucumber
1 tbsp of freshly chopped coriander, or cilantro as it's known in the USA
Sunflower oil
Salt

Mix the powdered spices in a glass bowl and add enough sunflower oil to make a thin paste. Add the chicken pieces and stir well, making sure all the chicken is coated. Cover with clingfilm and refrigerate for one hour.

Put the stock in a saucepan to heat and bring it up to a boil. Take a large pot and add a little sunflower oil. Sweat the onion and garlic in it for a couple of minutes then add the marinated chicken and stir it around until each piece is completely sealed and has turned opaque. Add the rice, the heated stock, cauliflower, peas and cinnamon stick. Season with salt to taste. Stir thoroughly, bring back to the boil, cover and simmer gently for ten to fifteen minutes or until the rice has absorbed all the stock, stirring occasionally.

Turn off the heat, remove and discard the cinnamon stick, add the coriander, tomato and cucumber and after a final thorough stir, the dish is ready to serve.

Healthy Chicken Stewed in White Wine Recipe

Almost like a subtle version of "Coq au Vin"

Chicken Stewed in White WineFor those unfamiliar with Coq au Vin, it began life as a French peasant dish, incorporating what was plentiful to these humble people at the time: chicken, wine and root vegetables. It has, of course, over a period of time now become a very respectable and popular dish in restaurants around the world. This recipe which I have come up with here uses white wine instead of red and less vegetables than the famous dish but I suppose that it is based loosely upon the same principle.

For two people, you will need:

2lb (1kg) of chicken legs and wings (approx. 4 of each)
1 large carrot (scraped and chopped)
1 large onion (quartered and segmented)
6 garlic cloves (peeled and halved)
1 tsp dried thyme
2 pints (1 litre) fresh chicken stock
1 pint (½ litre) dry/medium white wine

The cooking process for this dish is very technical! Simply put all the ingredients in to a large pot and bring up to the boil. Cover thereafter and simmer as gently as possible for one hour. The chicken by this time should be "falling off the bones" tender and the dish may be served with some fresh, crusty French bread.

Healthy Chicken and Tomato Pizza Omelette Recipe

A slightly different take on a traditional Spanish omelette recipe

Chicken and Tomato Pizza OmeletteI think it was perhaps the attached photograph which led to me labelling this recipe in such a fashion - but whatever it is, it is very enjoyable, I can assure you! It is definitely more of an omelette than a pizza but can be sliced into segments and easily eaten by hand. It always saves on the washing-up, if nothing else.

You will need:

3 medium sized, free range, organic eggs
The meat from one pre-cooked chicken leg (torn into pieces)
1 medium sized tomato (deseeded and chopped)
1 outside slice of semi-stale bread
1oz (25g) of cheddar cheese (roughly grated)
Pinch of dried sage
Salt/freshly ground black pepper
Sunflower oil

Break the eggs in to a bowl and whisk vigorously. Put the bread flat in the palm of one hand, outside down, and with your other hand, rub backwards and forwards to crumble the inside in to the bowl with the egg. Season with salt and pepper and stir well.

In a small, non-stick frying pan, drizzle a little sunflower oil and bring gently up to a heat. Add the chicken and tomato and fry off for a couple of minutes before distributing it evenly around the pan and carefully adding the egg mix. Put your grill on to heat up to maximum.

When you can see that the omelette is set almost to the top (about 3 to 4 minutes,) transfer the pan to underneath the grill. After a minute or two, the omelette should be fully set and start to rise slightly, due to the yeast in the bread. Sprinkle over the dried sage and the grated cheese and return to the grill until the cheese begins to bubble then serve immediately.
