So What's All This About Healthy Eating?

Healthy Eating Recipes always used to be boring - they had a reputation for being tasteless, stodgy and quite frankly, not very nice. I still have bitter memories of Buckwheat filled cannelloni served with an Apricot Dressing - it was vile! But times have changed and with the desire for better health and better food has come a whole new raft of delicious healthy recipes - and yes, you can have chocolate, and cream and all those things and still eat healthy!

What Is A Healthy Diet 

Sadly, healthy eating has come to be associated with faddy diets that don't do you any good at all. I love to cook and I love to eat good food and I don't see why a healthy diet can't be an interesting one.

A healthy diet is one which includes all the food groups, even the so-called 'unhealthy ones', in moderation. Too much or too little of anything is not good. You need Vitamins, Proteins, Minerals, Carbohydrates and Dietary Fibre in balanced proportions. Along with that you need plenty of fluids. Your body is largely composed of fluids and you need to keep it well watered, or just like a neglected plant it will wilt and wither!

Healthy Food Recipes - Starters 

Carrot Soup With Cinnamon and Ginger

This is equally good hot or cold - add a little yoghurt and mint if you have it cold, crusty bread makes it a meal in itself if you have it hot.

Serves 4

1 Onion - finely chopped
1 lb (400 gms) Carrots, washed and chopped
Small piece of Root Ginger, peeled and crushed
2 inch Cinnamon Stick
25 fl ozs (600 mls) Vegetable Stock
7 fl ozs (175 mls) Orange Juice
Finely grated rind of 1 Orange
4 tbsp (60 mls) Yoghurt
1 Egg Yolk

Put the Onion, carrots, ginger stock, orange juice, cinnamon and orange rind into a large sauce[an.
Bring to the boil and and then simmer for 20 - 25 minutes.
Remove the cinnamon stick and blend the soup until smooth.
Mix the egg yolk and the yoghurt and add a little of the soup, then add to the rest of the soup stirring gently.
Heat for 4-5 minutes but do not allow to boil.
Serve Hot with crusty bread or cool and serve with a swirl of yoghurt and garnished with mint.

This soup is rich and warming, full of vitamins and low in fat and salt.

Eggs - Quick, Easy and Full of Protein

Healthy Eating Recipes - Light Meals 

Devilled Poached Eggs

This is a variation on an old fashioned dish - the spicy sauce is delicious, low in fat and the Eggs provide a good source of protein. I love this for a light lunch or supper.

Serves 4

1 Onion finely chopped
1 tbsp (15 mls) Sunflower Oil
6 Tomatoes - seeded and chopped
3 ozs (75 gms) button mushrooms, shopped
1 tsp (5 mls)wholegrain mustard
1 tbsp (15 mls) tomato puree
1 tbsp (15 mls) Worcestershire Sauce
7 fl ozs (175 mls) Vegetable stock
Tabasco Sauce to taste
1 tsp (5 mls) Vinegar
4 Eggs
4 Slices Wholemeal Bread

Cook the onion in the oil until soft.
Add the Tomatoes and Mushrooms and cook for two or three minutes
Add the Mustard, Tomato Puree, Worcestershire Sauce, Stock and Tabasco Sauce and simmer for a few minutes.
Meanwhile add the vinegar to a large pan of boiling water, and slide the eggs in one at a time. Poach gently until just set.
Toast the Bread and spread with a little margarine or olive oil spread.
Put an egg on each piece of Toast and spoon the hot sauce over the top.

Serve Hot

Healthy Eating Recipes - Cakes and Treats 

Spiced Apple Cake

You can have your cake and eat it!

8 ozs (200 gms) Wholemeal Flour - plain
2 tsp (10 mls) Baking Powder
1 tsp (5 mls) Ground Mixed Spice
6 ozs (150 gms) Light Soft Brown (Muscovado) Sugar
4 ozs (100 gms) Polyunsaturated Margarine
1 tbsp (15 mls) Bran
2 Medium Eggs
1 lb (400 gms) Apples, cored, peeled and diced (I use some eating and some cooking apples)
1 tbs (15 ml) Demerara Sugar

Using a large bowl mix the flour, baking powder, sugar, bran, margarine, eggs, mixed spice until evenly blended.
Gently mix three quarters of the apple into the cake mix.
Put into a greased and floured 8 inch loose bottomed cake tin and level the top.
Scatter the rest of the apple over the top of the cake and sprinkle with the Demerara sugar.
Bake in a pre-heated oven at 180C, 350F, Gas Mark 4 for around 75 - 90 minutes, covering the top after about 60 mins to stop it burning.
Cool in the tin before turning it out.
Serve with a spoonful of thick Greek Yoghurt.

Low in Fat and Sugar and high in fibre and fruit, this is a delicious cake. It keeps well too (not that we have any problems eating it in my house!)

Foods In Season - A Passion For Asparagus 

I have a bit of a bee in my bonnet about eating foods in season - your body craves warm, filling foods in the winter and crisp light salads in the summer. There are also the environmental issues to consider as well - food travels too far these days and is often not as fresh as it might be! I am fortunate to live in the Vale Of Evesham which is renowned for it's fruit and vegetables - and in particular for it's Asparagus, or Gras as it is known locally. It is the best in the world in my opinion! My friend, Chris Sheehan, who is an expert in all things Asparagus has written the most superb book, A Passion For Asparagus, which tells you everything you will ever need to know about the best vegetable on the planet. The history of Asparagus growing, the lore and legends that surround and not a few excellent recipes - including Asparagus Ice Cream!

To eat Asparagus in the true Asum (Evesham)way you should add a small sprig of mint to the water in which you cook it, serve it with melted butter to dip the tips in and have just brown bread and butter with it. Delicious - and if you don't go overboard with the butter, it's pretty healthy eating too!

Healthy Eating Recipes - Main Course Meals 

Chicken and Pineapple Kebabs

These take a little while to prepare but with the fruit and vegetables included, all you need is some Rice and a crisp Green Salad to make a wonderful meal. The low fat marinade and lean chicken keep the fat content very low without sacrificing flavour.

Serves 4

8 ozs (200 gms) unsweetened pineapple cubes - keep the juice!
1 tbsp (15 mls) white wine venegar
1 tsp (5 ml) ground cloves
1 tsp (5 ml) finely chopped root ginger
2 onions, peeled and cut into sections for skewering
1 Red pepper cut into squares
1 green pepper cut into squares
12 oz (300 gms) chicken breast, cubed

Mix the pineapple juice, vinegar, cloves and ginger.
Add the chicken and marinade for at least two hours - keep the marinade.
Alternate chicken, pineapple, onions and peppers on a skewer and brush liberally with the marinade
Cook under a hot grill for five minutes to seal the meat, then cook under a moderate grill for a further 10 - 15 minutes until the chicken is well cooked through.
Keep brushing with the marinade.

Serve with Salad and Rice

Bananas - Neatly packaged vitamins, minerals and carbohydrate!

Healthy Eating Recipes - Puddings and Desserts 

Fruity Brulee

I love desserts and Creme Brulee is my favourite - this version is much quicker to make and tastes just as good!

Serves 4

2 Bananas
8 oz (200 gms) ripe black or red grapes, halved and seeds removed
5 fl ozs (125 mls) Greek Yoghurt
5 fl ozs (125 mls) Soured Cream
1 oz (25 gms) Light Muscovado (soft brown) Sugar

Slice the Bananas and mix with the grapes. Divide amongst four Ramekins or heat proof dishes.
Mix the Soured Cream and the Yoghurt together so that they are well combined then spoon over the fruit mix.
Cover and put in the fridge for at least one hour.
When required sprinkle the sugar on top and either put under a preheated grill or use a burner to caramelise the sugar.

Eat!

Healthy Fizzies the Kids Will Drink

Healthy Eating Recipes - Drinks 

Fruity Fizzies

Too many sugary fizzy drinks are not good but you will have the children queuing up for these - grown ups like them too.... I use up odds and ends of fruit to make the 'fancy ice cubes'! You can use commercially squeezed juices but home made is best.

Serves 4

Odds and Ends of fruit - sliced
Juice of 2 grapefruits
Juice of 2 oranges
Juice of 2 lemons
Juice of 2 limes
- or fruits of your choice.
Chilled sparkling mineral water
Natural food colouring of your choice (optional!)

Place the sliced fruits into ice cube trays, fill with water and freeze. (I keep a supply of these ready made)
Mix the fruit juices and pour into tumblers
Add the colouring of your choice
Add the 'fancy ice cubes' and top up with mineral water.

The children love to choose their own colours and will often make Rainbow Drinks.
