Welcome to my Healthy Fish (and Other Seafood!) Recipes Site

There are a great many different foodstuffs which I would class among my favourites but fish and seafood probably rate at the very top of the list. I love the freshness and delicacy of the flavours in fish and carefully experimenting with different ways in which to subtly enhance them. I love seafood from sushi to mussels to tuna steaks and all that comes in between. I hope here to share some ideas I have come up with for healthy fish recipes over a period of time that you will like both the look and sound of and decide to try making yourself at home.

Britain's Favourite Fast Food: Fish and Chips 

But just how healthy is it?

Cod and ChipsFish and chips is a time honoured and traditional British fast food classic - perhaps even our national dish. Fish, batter, potatoes; a gallon of beef dripping and a pound of salt...not on this site!!!

It is true, however, that despite the influx of particularly Indian and Chinese takeaway meal ideas, fish and chips remains Britain's favourite fast food. Yes, many fish and chip shops do serve up delicious fayre to be enjoyed by all the family...but equally, some serve up a greasy mess of stodge that is neither enjoyable nor healthy!

The one thing that almost all of these shops do have in common is that there cooking methods do leave something to be desired when we are talking about healthy eating. So does this mean that we in the UK have to forego our traditional fish and chips? No, of course it doesn't!

Healthy Alternative Fish and Chips Recipe 

A fresh new way to enjoy this great dish without feeling guilty

Fish and chipsThe following is my healthier interpretation of this legendary dish.

Per person, you will require:

1 skinned fillet of white fish (I am using whiting in this recipe)
1 large potato (I suggest maris piper)
2 or 3 small basil leaves (roughly torn)
Handful of frozen peas
Olive oil
Salt and malt vinegar

Peel the potato and cut it in to chips. Put your oven on to preheat to 200 degrees centigrade or equivalent with a baking sheet inside. Parboil the chips for 10 minutes in lightly salted water. Drain them well and mix them carefully (so as not to break them) in a bowl with a splash of olive oil. Place them on the baking sheet and in to the oven.

Take a large sheet of aluminium foil and drizzle it lightly with olive oil. Place your fish fillet on the foil, salt lightly and scatter on top the torn basil leaves. Wrap the fish in the foil, place it on a baking sheet and when the chips have been in the oven for 20 minutes, put the fish in to cook. Whiting will take anything from 8 to 10 minutes depending upon the thickness of the fillet; haddock will take slightly longer and cod slightly longer still.

Unless you grow peas in your own garden or have access to some which have literally just been picked within the last few hours, frozen is the best and healthiest option. The peas begin to lose their natural nutrients within two to three hours of being picked and reputable frozen food companies are stringent about getting the peas from the field to the freezer in the shortest possible time. Peas in the pod from a supermarket are thus - however strangely - a less healthy option. Please...do not even contemplate tinned peas!

Follow the instructions therefore on the frozen peas packet to ensure they are ready at the same time as the fish and chips. Plate up, season the chips and peas with salt and vinegar and enjoy this healthy, alternative version of a culinary classic...

Pan Fried Sardines with Tomato Sauce Recipe 

A simple recipe for a much under-rated fish

Pan Fried Sardines on Tomato SauceSardines - like tuna - are most often eaten from a tin but like almost anything else you can name, the fresh version simply cannot be beaten. Please not that it is important to cook the fish with the head and tail still attached. It helps them to keep their shape and prevents them from "curling up," for want of a better expression!

Per person, you will require:

2 fresh sardines (gutted, heads and tails on)
1 220g tin of chopped tomatoes in tomato juice
2 cloves of garlic (crushed or finely chopped)
2 tbsps plain flour
3 or 4 basil leaves (roughly torn)
Olive oil
Salt/freshly ground black pepper

In a small saucepan, sweat off the garlic for a minute in a little olive oil. Add the tomatoes and basil and leave to simmer for 20 minutes, stirring occasionally.

Season the flour on a plate and pat the sardines in it to coat them on both sides. Fry for about 5 minutes each side in a little olive oil on a medium heat.

Plate the sauce first then carefully lay the sardines on top.

Griddled Tuna on Coriander Rice Recipe 

A delicious and healthy recipe for fresh tuna loin

Tuna with Salsa on Coriander RiceTuna has to be one of the most flavoursome fish in the sea but to be enjoyed to the full, it is very important that it be prepared correctly and not over cooked. I hope you like the way I have presented it on this occasion.

Per person, you will require:

Fresh tuna fillet
3oz (75g) basmati rice
Generous handful of coriander, cilantro in US (roughly chopped)
3 tomatoes (deseeded and finely chopped)
2 large garlic cloves (very finely chopped)
1 spring onion, scallion in US (finely chopped)
3 inches of cucumber (peeled, deseeded and finely chopped)
1 red Birds' Eye chilli pepper (finely chopped, seeds in)
Extra virgin olive oil
Few drops of white wine vinegar
Salt/freshly ground black pepper
Vegetable or sunflower oil for griddling

Mix the tomatoes, garlic, spring onion, cucumber, chilli pepper and half of the coriander with a good splash of extra virgin olive oil, season to taste with salt and freshly ground black pepper. Cover with clingfilm and place in the fridge for about an hour for the flavours to infuse, or even better, prepare this the night before!

Boil the rice as per the instructions on the packet and when ready, mix through the remaining chopped coriander and season with salt.

Oil the tuna fillets lightly with vegetable or sunflower oil (do NOT oil the pan) and cook for about a minute each side on a very hot griddle pan. The fillets should be cooked on the outside only and remain deliciously moist and pink in the centre. Place them on the bed of rice and spoon some salsa over the top. If you do not have a griddle pan, an ordinary, non-stick frying pan can be used, but the fillets should be cooked for slightly longer.

Healthy Smoked Mackerel and Soured Cream Salad on Toast Recipe 

A delicious, fish appetizer or starter recipe idea

Smoked Mackerel and Soured Cream Salad on ToastMackerel is one of those fish that is often referred to as "oily" fish, meaning that it is rich in omega-3, a fish oil which is deemed to be extremely healthy and beneficial to our heart in particular. Smoking mackerel is very common in Scotland and is one way of retaining all the fish's goodness and nutrition.

For this recipe, which should serve four people, you will require:

4 smoked mackerel fillets
4 fl oz (125ml) of soured cream
1 clove of garlic (peeled and crushed or very finely chopped)
Pinch of dried or fresh dill
4 slices of bread (lightly toasted)
Small bowl of fresh green salad leaves
4 tomatoes (quartered)

Put the garlic, dill and soured cream in to a bowl and mix thoroughly. Peel the skin from the mackerel and tear it in to bite sized pieces. Add it to the soured cream mixture and mix it thoroughly but carefully, so as not to further break up the fish pieces. Cover and refrigerate for at least an hour.

Make the toast and use a large circular cutter or drinking glass to cut the largest circle possible from each slice. Place the circles of toast on the plates and arrange some salad leaves on top. Carefully spoon on some of the smoked mackerel mixture and garnish with the tomato.

Prawn (Shrimp) Linguine Recipe 

A simple dish for a fantastically satisfying lunch

Prawn LinguineThis is a recipe which literally takes ten minutes to prepare from beginning to end and makes an ideal lunch for those with a busy lifestyle.

Per person, you will require:

4oz (100g) of linguine
3oz (75g) of pre-cooked King Prawns (known as shrimp in the USA)
1 tsp of freshly chopped basil leaves
1 garlic clove (crushed)
Generous splash of olive oil
Fresh Parmesan cheese
Salt

The linguine should be added to a large pan of boiling salted water and simmered for about 8 to 10 minutes. In a large bowl, mix the splash of olive oil, the basil and the garlic. Approximately a minute before the pasta is ready, add the prawns to the water, simply to heat through. Drain thereafter and add to the bowl with the olive oil mixture, stirring thoroughly.

Plate up and grate or shave some fresh parmesan on top. Please...do not use that disgusting pre-tubbed chemical concoction which attempts to pass as same...

Fish Pie Recipe 

A healthy and tasty recipe for an all in one meal

Fish PieThis is a recipe which needs no accompaniment. The fish and the vegetables are all included in the pie, simplifying the cooking process and very importantly for me, minimising the number of dishes that require to be washed afterwards!

I have often noticed when following recipes in the past that what is sometimes deemed to provide a meal for four would not in fact satisfy two moderately hungry sparrows. As a result of this, I will state that this pie provides two man-size portions.

You will require:

8oz (225g) of smoked haddock fillet (undyed, please!)
8oz (225g) of salmon fillet
8oz (225g) of whiting fillet
2lb (900g) of potatoes
1 small carrot (scraped and diced)
6 small broccoli florets
Handful of frozen peas
2 tsp of freshly chopped dill leaves (or 1 tsp of dried)
2 cloves of garlic (crushed or very finely chopped)
1 bay leaf
2 tsp of Dijon mustard
2oz (50g) of plain flour
2oz (50g) of unsalted butter
1/2 pint (300ml) of milk
Salt/freshly ground black pepper

Peel the potatoes, cut them in to chunks and put them on to boil in lightly salted water. Cut the fish in to bite sized pieces and put in to a large bowl, along with the garlic, peas and dill. Parboil the carrot and broccoli for ten minutes then drain well and add to the bowl. Put your oven on at this stage to preheat to 200 degrees centigrade or equivalent.

Heat the milk in a small saucepan with the bay leaf until it comes to a simmer then pour it in to a jug and set aside, discarding the bay leaf. In the same pan, melt the butter then add the sieved flour to form a roux and cook off for a couple of minutes. Add the warm milk in stages, stirring well with a wooden spoon until a thick and luscious sauce is formed. Pour this sauce in to the bowl with the fish and the veg and stir thoroughly.

When the potatoes are soft, drain them well and mash them with the Dijon mustard. Take a large casserole dish and spoon in the fish mixture. Top with the mash and place in the oven for 20/25 minutes. Brown under a hot grill and your pie is ready to serve.

A simple and healthy starter/appetizer recipe

Prawn CocktailThis is my own healthier and low fat version of a very popular dish.

For two portions, you will require:

6oz (160g) of pre-cooked and shelled King Prawns (known as shrimp in USA - roughly chopped)
2 tbsps of low fat soured cream
1 large tomato (de-seeded and finely chopped)
6 basil leaves (finely chopped)
2 slices of bread (toasted)

Mix all the ingredients together well. Line two ramekins with clingfilm, ensuring the sheets are large enough to fold over and completely cover the food. Fill the dishes to their capacity, pressing the mixture well down. Refrigerate for at least two hours then turn out on to a serving plate, garnish with basil and serve with warm toast.

Baked Sea Bream on Roasted Herb PotatoesSea bream is perhaps not among our most popular of choices when it comes to purchasing fish but it is both easy to cook and delicious if prepared in the correct manner.

For this simple recipe, per person you will require:

1 sea bream (gutted, head and tail on)
2 slices of lemon (halved)
2 slices of red onion (halved)
3 small closed cup mushrooms (halved downwards through the stalk)
3 or 4 fresh basil leaves (roughly torn)
6 slices of potato (skin on)
Pinch of dried sage
Pinch of dried thyme
Salt/freshly ground black pepper
Olive oil

The first step is to put your oven on to preheat to 200 degrees centigrade or equivalent. Mix the sage, thyme and a pinch of salt in a bowl with approximately one tbsp of olive oil. Add the potato slices and stir carefully (so as not to break them) but well until they are all well coated. Place them on to a baking tray and in to the oven for 25 to 30 minutes.

Take a large sheet of aluminium foil and drizzle a little olive oil in the centre, over an area large enough to accomodate the fish. Lay the bream on top and carefully stuff the stomach cavity with the lemon, red onion and basil. Place the mushroom halves on top. Season lightly, wrap up in to a package and place on a second baking sheet and in to the oven for about 20 minutes.

Arrange the potato slices in a circle and serve the bream on top with the mushrooms scattered around the edge.
