Quinoa (pronounced keenwah) is one of the most complete seeds and one of the healthiest foods you can find on earth from the point of view of nutrition. Coming back from the times of Incas, quinoa is still nowadays cultivated in South America, mainly in the Andes region.

It is extremely rich in protein and has fewer carbohydrates than normal cereals, full of group B vitamins, minerals. It contains all the amino acids that the body need to build muscle.

Only 60 gr. of quinoa provide: 95% of the daily amount of iron that our body needs. 12% of calcium. Also Vitamin C, E, group B, folic acid. Magnesium, phosphorus, potassium and essential fats. In addition, its fiber helps prevent cardiovascular disease.

To add to all its qualities is the fact that the soil where quinoa is cultivated doesn't receive harmful fertilizers or other chemicals, so the product that we eat is completely free of any substance that can affect adversely our health.

Quinoa soup

Quinoa is really a extremely versatile seed; you can cook it as a main meal (similar to rice), as soup, add it to a salad or even eat it for breakfast (similar to cereals). Today I am going to include a popular Quinoa soup, this type of soup is usually cooked in South America and serves as a main meal:

What you will need:
-Half a cup of quinoa.
- 1 big onion
-2 garlic cloves
- 1 tablespoon of chopped parsley
-2 carrots
- half a cup of sweet corn
- 300gr. of beef
-2 tablespoons of olive oil
-2 big potatoes

How you do it:
Boil 2 litres of water. Chop the onion (in very small pieces), the garlic, parsley and carrots and add to the water together with the sweetcorn, olive oil and beef also chopped in small pieces. Leave to cook for 30 minutes. Then you can add the quinoa and the potatoes (cut in cubes) and leave for a further 20 minutes or until the potatoes are cooked.
Note: Before cooking you always need to soak and rinse the quinoa.

Quinoa with milk

The best dessert choice

Some people think that eating healthy means giving up on sweets and desserts. Well, not always. This dessert is the ideal dessert, it is really healthy, a dessert that you can eat without feeling guilty, and moreover it is completely packed with protein.

What you will need:
1 cup of quinoa
2 cups of water
2 cups of semi-skimmed milk
1 Lemon zest
1 Cinnamon stick
4 table spoons of sugar (optional, you can use sweetener instead or nothing at all)

How you do it:
Boil the milk with the lemon zest and the cinnamon stick. In another pot boil the quinoa in the water until nearly all the water has been absorbed. Add little by little the previously boiled milk and let it simmer at very low fire until it starts to thicken again.

Serve in small cups, or bowls sprinkle with cinnamon and let it cool down.

Note: Remember to always soak and rinse properly the quinoa before cooking
