The Survey Said...
A recent survey asked people if they felt they ate healthy foods. 70% responded believing their diets were basically healthy. When these same people were asked what they ate, researchers discovered their diets were anything but healthy.

It may not seem easy these days to have a healthy diet considering all the confusing and unhealthy choices at our grocery stores. Processed foods have become staples, most of which are empty calories loaded with fat and sugar. We've lost sight of what food really is and what it means to our health. Food is supposed to nourish our bodies and supply us with the nutrients to be catalysts for millions of miracles that take place in our bodies moment to moment. And, once you have the mindset, it gets much easier to plan and enjoy healthy meals.
You're not going to get the vital nutrients your body needs in processed foods. I know it, nutritionists and dieticians know it, the National Institute for Health knows it, the World Health Organization knows it, and the processed food industry knows it. And if you didn't before, now you know it.
Without the nutrients your body needs - all of them - you can't prevent that 65% of diseases that will lead you down the scary path to your incapacitation or untimely death. You already have the basic requirements in your body for the invasion of disease. One or more of them are already checking you out - IF they haven't moved in already!
Have I got your attention? It's your choice to be healthy or not. Disease is not something you "catch", it's something you acquire by what your choices on a daily basis are.

Tips and Hints for Filet Mignons
* The Filet Mignon is so tender that it should never be over-cooked. Rare to medium-rare is best. Longer cooking renders it less tender and dry.
* Use a dry, high heat method such as broiling, roasting, pan-frying or (as we prefer) grilling for this tender cut.
* Don't cut into the Filet Mignon to check doneness because it lets precious juice escape. Use the touch method. Press the meat. If it feels soft and mushy and leaves an imprint, it is rare. If it is soft, but slightly resilient, it is medium-rare. The minute it begins to feel firm, it is overdone.
* Since the tenderloin has no surrounding fat tissue, it is often wrapped in a layer of fat (called barding), such as bacon, to keep it from drying out. The barding adds flavor but it also adds fat!
* To ensure even cooking when roasting the whole tenderloin, the small end should be tucked up and tied or trimmed for other use.- Garden Vegetable Pasta
Put a little bit of olive oil, or butter, in the bottom of a sauce pan, and throw in some fresh garlic, and a small amount of fresh bell pepper, and maybe a few onions or celery. (Celery is really good in this). We also like to add brocolli. (See the full recipe here)- Fresh Salsa
This is soooo good! Here is what you'll need to make absolutely Fantastic Homemade Salsa:
* 5-8 Tomatoes (depending on their size, or the amount of salsa you want to make)
* Garlic (as much garlic as you feel is appropriate for your tastes... we'll be using * 1 large clove of elephant garlic)
* Jalapenos (2 or 3 depending on how spicy you like your salsa)
* 1/2 large red onion
* 1 large green bell pepper
(Many people also add Cilantro, but we do not care for it, so we leave it out.)- Pepper Steak
This is one of our favorite meals, healthy, tasty and quick to make. The green bell peppers add a delicious flavor. For the steak you can use round steak, sirloin, pre-cut fajita steak strips, or just about any lean cut of beef.- Teriyaki Chicken - Fabulous!
This is simply delicious. We used frozen chicken tenderloins this time, they are very handy to have in the freezer and they cook quickly. The sauce, veggies and pineapple in this recipe are so great. You gotta try it!- Beef Stir Fry
A delicious meal full of whole food nutrition. For the highest nutritional value, don't overcook the vegetables! You can also use chicken, pork, or tofu in place of beef. This is an excellent basic recipe for different meats.- Delicious Quesadillas
Quesadillas are a great way to use up some left over meat, and a delicious, healthy meal that doesn't take a lot of time to prepare. All you need is any kind meat, some refried beans, cheese, and a few veggies, and you're good to go. We started with left over bbq chicken from last night, and just chopped it up into chunks. This is really easy to make, and very delicious, but there are a few things to keep in mind...
1. Buy the leanest corned beef you can find and then trim off as much fat as possible before cooking and wash under running water to remove surface brine.
2. The longer you cook the corned beef brisket, the more tender it will be. I always bring the water with the beef and seasonings to a boil then simmer for at least one hour per pound. When done a fork inserted into the meat should easily pierce through to the center.
3. Use a pot large enough to cover the meat fully and have room to add vegetables later.
4. Always cut the corned beef in thin slices, diagonally across the grain.
5. Corned beef comes with a seasoning packet. This is a good choice of spices.- Corn Chowder

This carrot cake is made with hearty ingredients with unrefined grains, vegetables, nuts, quality sweeteners and are well cooked, this dessert can be considered energizing and strengthening (in moderation). There are other healthy desserts recipes here too.- Shopping Nutritionally: A few tips
- The first step is to go grocery shopping keeping these things in mind:
-Never go grocery shopping on an empty stomach. That's rule number one.
-Rule number two is shop the perimeter of your food store. The fruits and vegetables (organic is best), nuts and seeds (in the shells only), dairy (skip the margarine), and meat (buy lean) departments.

Needless to say, raw or cooked, vegetables taste best when picked fresh and served promptly. I can safely say that corn served and eaten within minutes of harvesting is by far the best tasting! More and more people have taken to the home garden or shop at farmers' markets for that reason. However, even if you shop in a supermarket, vegetables are generally shipped and handled to ensure that they retain as much flavor and nutrients as possible. A tossed or arranged salad can be spectacular by adding colors and shapes.
· A grated carrot or beet can dramatize leafy greens
· Cookie cutters can shape cucumber or turnip slices
· Olives or toasted seeds add wonderful flavor
· Vegetables left whole add a wholesome flair
· Arranging simply cut vegetables and/or fruit by colors adds a dazzling touch to any meal
· Use a melon baller (or 2 spoons) to form round (or oval) shapes from cooked potatoes, yams, squash, etc
· Use a variety of leafy greens in season
· Add radish slices, grated onion, fresh corn kernels- Salmon Croquettes
This is a great recipe for people who want to get more fish into their diet, but think that salmon has to fishy of a flavor. We all have worries about what we eat and how it might effect us.

Also keep in mind that fruits and vegetables are largely water, which means you are hydrating your body at the same time. The benefit of hydration this way is that you also get needed fiber and a variety of nutrients!
TIP: Make eating fruits and/or vegetables more fun by making them kabobs! Skewer them in a series of colors, perhaps add some cheese, cook or not, and serve!
2. Read your labels! How much salt (or sodium) is in the products you put on the table? How much Fat, Trans and Saturated Fat? How much Cholesterol? How much fiber (that's a good one). Being aware is a big part of the battle.
Also watch for hydrogenated and partially hydrogenated oils in your food products. These are very bad for you! Go with poly and mono unsaturated
oils.
3. Stop buying cakes, cookies, pies and such. Don't bring them into your house. If you really want a dessert or sweet snack, go out to get it. If that stuff is not there in your house immediately available, chances are you won't eat it - at least not as often! Besides, sweets should be a real treat and being served is a treat in itself!

4. Eat a small handful of nuts 20 or so minutes before a meal to curb your appetite and get a healthy dose of "good fats". This will also help your body assimilate the fat-soluble nutrients in the food you are eating: A, D, E, K, and some antioxidants. Remember, nuts are fattening so only a small amount is needed!
Did you know that depriving yourself of fats can lead to depression? Of course, the fats you do eat should be healthy fats!
5. Make sure you get adequate fiber in your diet. It may seem difficult, especially considering the commercial about eating fiber rich foods constantly OR buy the "fake fiber" they are trying to sell you, but natural fiber is best for your health and your life! Whole grains, brown rice, fruit and veggies.
6. Start exercising! Walk, run, bike, swim, jump, dance, what's fun for you? And whatever you do, if you perform 30 minutes of exercise, then take a 20 minute break, and do another 30 minutes, you'll get more benefit than one full hour without a break!

Eating blueberries reduces your risk of colon cancer more than any pharmaceutical known to modern medicine? At the same time, blueberries also contain natural medicine that lowers cholesterol better than statin drugs. Blueberries offer truly amazing medicine (the natural medicine is found mostly in the skin of the blueberry, where the color pigmentation is located).
Colon cancer, which is the number two cancer killer in the U.S., has been tied to the high intake of acidic foods such as animal protein, sugar and saturated fats in Western diets.
Update: British blackcurrants have dethroned American blueberries as the reigning "superfruit" which can best help battle Alzheimer's, cancer, and
heart disease according to a new U.K. study.
The Scottish Crop Research Institute (SCRI) has determined that blackcurrants contain higher levels of antioxidants, minerals, and vitamins than blueberries or 19 other fruits. Such high levels of antioxidants can also help stave off diabetes, eye strain, and other illnesses.
BLACK STRAP MOLASSES
Blackstrap molasses is a sweetener that is actually good for you. Refined white sugar and corn syrup are stripped of virtually all nutrients except simple carbohydrates. Artificial sweeteners like saccharine or aspartame not only provide no useful nutrients but have been shown to cause health problems in sensitive individuals. Blackstrap molasses is a healthful sweetener that contains significant amounts of a variety of minerals that promote your health.
BROCCOLI
Broccoli, and other cruciferous vegetables, contains the phytonutrients sulforaphane and the indoles, which have significant anti-cancer effects. Research on indole-3-carbinol shows this compound helps deactivate a potent estrogen metabolite (4-hydroxyestrone) that promotes tumor growth, especially in estrogen-sensitive breast cells, while at the same time increasing the level of 2-hydroxyestrone, a form of estrogen that can be cancer-protective. Indole-3-carbinol has been shown to suppress not only breast tumor cell growth, but also cancer cell metastasis (the movement of cancerous cells to other parts of the body).
CITRUS: Limonoids (specific phytochemicals that help fight colon, skin, and other cancers) are plentiful in citrus fruits. They may also help reduce cholesterol. Not to mention, there's lots of Vitamin C, folate and potassium for you, too.

Putting your health in the hands of the American health care system is something I'm no longer willing to do. Not only have my experiences with doctors and hospitals been traumatizing, to say the least, the system itself is ranked extremely low in the world and yet has the highest cost.
Prevention is key to a long healthy, happy life. Alternatives include herbs, vitamins, minerals, whole foods, and water.
And, if you pay attention to the TV commercials about prescriptions that are available to you today (and all the side effects), wouldn't you rather try natural foods and remedies??

When even one will hurt...
Adding more fruits and vegetables, whole grains and nuts to your diet -- limiting your meat portions and salt intake -- and avoiding junk food, isn't all that hard, once you decide to get your life back on a healthy track.
But what if you "backslide"? Will one fast food binge really hurt?
First let me say that once your diet becomes healthier for a period of time, these fast food foods won't taste as good and you'll probably feel very bloated and a bit sick to your stomach after eating them. These are things you didn't notice before... how these kinds of foods truly effect your body and how fast.
A fast food meal, which is high in saturated fat, salt, trans fat and cholesterol, effects your blood pressure and your arteries fast -- in turn your heart -- even if you only eat it once in a while.
Admittedly, I'm a meat eater, and a burger-LOVER. I eat homemade burgers from time to time. I buy the leanest ground beef, maintain a healthy sized pattie (4 oz), use whole grain buns, and pile on the veggies. You can also try turkey burgers or vegetarian burgers, too. I prefer beef.
So don't feel you have to give up your burgers... just give up those fast food burgers - even one will hurt you!

You don't have time not to have the time to eat right. Your life depends on it!
The health we enjoy or the sicknesses we endure are, in a large part, of our own making. No one except ourselves can eat the foods of value to us. No one has forced us to eat nutritionally depleted foods and give up whole foods. And, no one makes us support the refined food industry, which is actually starving us to death.

What does that mean?
But phrases that use "fresh" aren't subject to these standards: Fresh Frozen, Frozen Fresh, and Freshly Frozen. These terms can be used for foods that are quickly frozen while still fresh.
Fresh Squeezed or Freshly Squeezed. If a juice has been made from juice concentrates, then the word fresh shouldn't be used. If it does qualify for this label, they usually aren't pasteurized, which is a heating process that heats the liquid to 160° for 15 seconds to help kill any harmful bacteria. Unpasteurized juices sold in bottles are usually in refrigerated cases and must carry a warning on the label saying that the product "may contain harmful bacteria that can cause serious illness in children, the elderly and persons with weakened immune systems." Untreated, freshly squeezed beverages that are sold by the glass (not in bottles) don't have to carry this warning label.
Natural: Unless it appears on meat or poultry products, there's no standard definition for it. For these exceptions, the word natural on the label means that the product doesn't contain any artificial flavorings, colors, chemical preservatives or artificial or synthetic ingredients. It also guarantees that the raw product hasn't been fundamentally altered.
For all other goods, "natural" there's no standard definition for the term. Don't assume that "natural" means "good for you."
Lactose-Free and Reduced Lactose: Lactose is the type of sugar found in milk and to a lesser extent in dairy foods such as yogurt. About 25% of the U.S. adult population and 75% of adults worldwide are said to digest lactose poorly or have low lactase levels. This means that they don't have sufficient amounts of the enzyme lactase that breaks down lactose, allowing it to be absorbed across the intestinal wall and into the blood. The result is that the sugar moves undigested into the colon, where it feeds bacteria and can lead to the painful gas.
According to the National Diary Council, lactose-reduced milk contains about 70% less of the natural sugar. Lactose-free milk is 100% lactose reduced and is suitable for people with any degree of trouble in this area. However, the term nondairy doesn't mean that the product is milk-free.
