What are Shrimp?
The above may seem like a strange question but the reality is that shrimp are not known by that name in every country around the world. In the UK, we call them prawns, or even longuistines. Hence the clarification I felt compelled to make before we proceed to examine the specific properties and cooking techniques for this delicate and delicious crustacean.

Healthy King Prawn (Shrimp) and Pineapple Recipe
A delicious idea for an appetizer or starter
Prawns and pineapple form an extremely delicious combination in a number of cooking methods but this simple salad idea which I came up with one afternoon is probably my favourite. There are no over-powering sauces to detract from the fresh flavour of the prawns and the pineapple and the idea of dipping them in the soured cream really appealed to me. I hope you will try this simple recipe out for yourself and enjoy it as much as I frequently do.Ingredients (Seves Two)
12 King Prawns (cooked)
4 rings of pineapple (if using canned, make sure they are in pineapple juice and not syrup)
1 small lettuce (shredded)
1/4 pint (150ml) of low fat soured cream
1 clove of garlic (crushed or very finely chopped)
1 tsp of coriander/cilantro (roughly chopped) and a small leaf to garnish
Method
Prepare the dip first, ideally at least a couple of hours in advance, by mixing the garlic and chopped coriander in to the soured cream. Put the mixture in to dipping bowls and sit in the centre of a plate, surrounding it with chopped lettuce. Cut the pineapple rings in to thirds and arrange as shown, sitting a large prawn on top of each piece.
Simple, healthy...and incredibly tasty!

Healthy Shrimp Salad Recipe
A quick and easy lunch idea
One of the big attractions of shrimp is that, as well as being very tasty, they are incredibly quick to cook. They can also be bought very easily pre-cleaned and pre-cooked for you. This simple salad idea, I prepared with some pre-cooked Atlantic shrimp from my local supermarket.Ingredients (per person)
4oz (125g) of shrimp
2 tsp of soured cream
1 clove of garlic (crushed or very finely chopped)
1 tsp roughtly chopped, fresh coriander (cilantro in USA)
4 Baby Gem lettuce leaves (shredded)
2" (5cm) of cucumber (chopped)
1 small tomato (de-seeded and roughly chopped)
A little (NB!) salt to season as required
Method
Mix the soured cream, coriander/cilantro and garlic thoroughly together in a bowl. Carefully stir in the shrimp until they are all evenly coated in the sauce.
In a similar way, mix the salad items together with a little salt and put a handful in the centre of each plate. Carefully spoon on the shrimp mixture and serve.

A Brief Warning about Recipe Discrepancies
British and US measurements are often very different
Do you know that people on different sides of the Atlantic will very often interpret recipes differently, not only in the names of the ingredients but even in terms of the actual quantities of the ingredients? One simple example is that a British pint is approximately quarter as much again as a US pint. The site linked to below examines some such strange features of our common language and attempts to offer some assistance where translation may be required...
Healthy Shrimp and Creme Fraiche Wrap Recipe
A tasty lunch which can be prepared in advance
This delicious wrap is very easily and quickly prepared and is perfect perhaps for taking to the office for lunch.Ingredients (per wrap)
1 brown circular wrap
1 tbsp cooked cocktail shrimp
1/2 tbsp low fat creme fraiche
1 small garlic clove (crushed)
Pinch of dried dill
1 tbsp shredded lettuce leaves
Method
Mix the shrimp, creme fraiche, garlic and dill very well together.
Heat the wrap as instructed on the packet. Usually they require about ten seconds each side in a hot dry frying pan or about fifteen seconds each side under the grill.
Spread the lettuce in a line about one inch wide, starting at the edge of the wrap and going about two-thirds of the way along a straight, imaginary diameter. Carefully arrange the shrimp mixture on top. Fold what will be the closed end of the wrap up and over, the fold starting at the end of the lettuce and shrimp line. Carefully then bring one side up and over the mix and roll the wrap.
