Welcome to my Site Offering Healthy Vegetarian Recipes

This site may ultimately prove to be something of a challenge for me, as if there is one thing I cannot claim to be, it is a vegetarian. That, however, does not preclude me from creating healthy and tasty vegetarian recipes, nor from - on occasion! - actually enjoying them, especially as I was raised by a vegetarian mother. I hope here to give all vegetarians and non-vegetarians alike some fresh ideas for spicing up their diets, bearing in mind the obvious limitations and restrictions which apply. I hope that the vegetarians among you will ultimately - if nothing else - at least appreciate my efforts.

Healthy Tomato, Basil and Garlic Pizza Omelette Recipe

A slightly different take on a traditional Spanish omelette recipe

Tomato, Basil and Garlic Pizza OmeletteThis dish is strictly neither an omelette nor a pizza, but thoroughly enjoyable, whatever you may choose to call it! If one considers the ingredients alone, it is definitely more of an omelette than a pizza but it is more than robust enough to cut into segments and eat by hand.

You will need:

3 mediums sized, free range, organic eggs
2 medium sized tomatoes (deseeded and chopped)
6 large fresh basil leaves (roughly torn)
1 garlic clove (finely chopped)
1 outside slice of semi-stale bread
1oz (25g) of cheddar cheese (roughly grated)
Salt/freshly ground black pepper
Sunflower oil

Break the eggs in to a bowl and whisk vigorously. Put the bread flat in the palm of one hand, outside down, and with your other hand, rub backwards and forwards to crumble the inside in to the bowl with the egg. Add the basil, season with salt and pepper and stir well.

In a small, non-stick frying pan, drizzle a little sunflower oil and bring gently up to a heat. Add the garlic and tomato and fry off for a couple of minutes before distributing it evenly around the pan and carefully adding the egg mix. Put your grill on to heat up to maximum.

When you can see that the omelette is set almost to the top (about 3 to 4 minutes,) transfer the pan to underneath the grill. After a minute or two, the omelette should be fully set and start to rise slightly, due to the yeast in the bread. Sprinkle over the grated cheese and return to the grill until the cheese begins to bubble then serve immediately.

Broccolli and Cauliflower Cheese with Chips Recipe

A slightly different take on traditional cauliflower cheese and a healthy way to make chips

Broccoli and Cauliflower Cheese with ChipsThis recipe will make enough for two people. You will require:

2 large potatoes (peeled and cut in to chips)
1 small head of cauliflower (split in to florets)
1 small head of broccolli (split in to florets)
2oz (50g) of unsalted butter
2oz (50g) plain flour
1/2 pint (280ml) of semi-skimmed milk
2oz (50g) of grated cheddar cheese
8 to 10 back and forward gratings of fresh nutmeg kernel
Olive oil
Salt

Put your oven on to preheat to 200 degrees centigrade or equivalent. Parboil the chips for five minutes in some lightly salted water. Drain them well and place them in to a large bowl with enough olive oil to ensure thay are all well coated following a careful stir. Put them on to a baking tray and in to the oven for 30 minutes.

Ten minutes before the chips are due to be ready, put the broccoli and cauliflower on to boil in some lightly salted water and begin your sauce. Heat the milk in a small saucepan then pour it in to a jug. Melt the butter slowly in the same pan and add the sieved flour to form a "roux." Cook off the flour for a few minutes then add the milk in stages to form a thick, glossy sauce, stirring all the time with a wooden spoon. Add the nutmeg and the cheese.

Drain the vegetables and put them on a plate with the chips, pouring the sauce on top as required.

Garlic Mushrooms on Toast Recipe

As simple as simple can be...

Garlic Mushrooms on ToastThis recipes serves equally well as a breakfast or as a light lunch.

Per person, you will require:

1 slice of bread (toasted)
4 closed cup muchrooms (halved or quartered downwards through the stalk)
2 cloves of garlic (crushed)
Pinch of dried sage
A little fresh parsley for garnish (roughly chopped)
Salt/freshly ground black pepper
Olive oil

Put a generous splash of olive oil in to a non-stick saucepan and bring up to a gentle heat. Sweat off the garlic for a few moments, then add the mushrooms and sage and season according to taste. Cook gently for between 55 and 10 minutes, stirring frequently and well. Serve on warm toast with the parsley garnish.
