You get vitamin E and B6, fiber, niacin, cooper, folic acid, zinc, some amino acid, a little magnesium and potassium and as an added benefit nuts are good for your heart. Plus they have fat in them, the good kind and everyone knows we need a little fat in our bodies to stay healthy.
I almost forgot the big one-nuts are cholesterol-free.

The History of Why We Eat Nuts...

We, that is humans, started out as hunters of nuts and fruit. Sometime before last year we started eating meat. I have always wondered why (we started eating meat, that is)?
Anyway, the cavemen live on nuts, fruit and berries and then developed the rock to take out the dinosaurs and eat them. Since I'm pretty sure dinosaurs ate more people than man ate dinos, the cavemen, or I should say cavepeople, had to have some type of protein.
And nuts are full of protein!
So there you have it, the history of man and why we still eat nuts.

What Kind Of Nuts Are There?
Here, let me list them...

Almonds, Walnuts, Peanuts, Hazelnuts, Pecans, Macadamia, Pistachio, Chestnuts, Pine, Cashews, Brazil nuts, are the most popular nuts.
Plus all the nuts in pumpkin, watermelon, sunflower, sesame, mustard, pumpkin, cumino, fennel, nigella, squash, tomato, pear, and all the other nuts which we call seeds, you can eat.
Most time people don't even realize they're eating nuts because they're just part of the fruit we eat everyday. The nuts we call nuts are actually the seed of the plant.
With the exception of the poisonous plants we can eat any of the seeds from any plant or tree. There is a reason we eat the healthy nuts we do.

I enjoyed reading this. I'm one of those people who feels unsure about eating a lot of fat, and this book put my mind to rest about fat. There is so much information in this book about nuts, not only about nutrition but where it came from and such. The only thing that would improve Healthy Nuts is adding a few recipes, but they do give ideas for how to use nuts.
The Big Daddy of Healthy Nuts
When it comes to healthy nuts, the walnut is the king. It's a great source of the healthy omega-3 essential fatty acids, which have been found to protect the heart, promote better cognitive function, and provide anti-inflammatory benefits for asthma, rheumatoid arthritis, eczema and psoriasis. The same fat in fish by the way. The good kind!Walnuts also contain the antioxidant compound ellagic acid, which is known to fight cancer and support the immune system.
But that's not all--in a study in the August 2003 issue of Phytochemistry, researchers identified 16 polyphenols in walnuts, including three new tannins, with antioxidant activity so powerful they described it as "remarkable."
Walnuts are incredibly healthy for the heart. A study in the issue of Circulation found that when walnuts were substituted for about one-third of the calories supplied by olives and other monounsaturated fats in the Mediterranean diet:
» Total cholesterol and LDL (bad) cholesterol were reduced
» The elasticity of the arteries increased by 64 percent

- Yep, that is me. I am "nuts for nuts". Ha ha.
I am familiar with the many benefits of nuts from fiber to vitamin E. But I had no idea that there was an animal "study" on colon cancer and nuts. Way cool.

- I like cashew nuts the best but I like quite a few others. I feel very lucky because here in Florida where I live we have pecan trees all over the place and I can go pick them for free off the ground in a few places. I'm a lucky boy I guess. Too Bad cashews don't grow here. But I love the pecans a lot too.
