Induction Hob Cookers For Your Dream Kitchen!

I'm a chef and I want induction hob cookers in my kitchen! So I've done a little research on induction heat ranges, and here is what I've found. I might not be able to afford fancy built-in cookers, but maybe a portable hob. As you will see on this page, there are all kinds of cheap hobs on the market, but many customers say, "you get what you pay for". Please read more below...

Benefits Of Induction Hob Cookers

1. The top of the stove will not get hot (and you are much safer from burn injuries!). Heat is generated through a magnetic field between the hob cooker plate element and the metal of the pot (can't use glass or ceramic pots). Only the food is heated. Although some of that heat will transfer to the sides of your cooking vessel, the stove top itself stays cool.

2. Hob cookers provide instant heat control, similar to gas burners but without the wasted energy from excessive flames. Water comes to a boil in approximately half the time from electric or gas cooking!

3. They are much more energy efficient than electric ranges, and it will not get hot in the kitchen.

4. Amazingly, induction cookers can detect when a pot boils dry and then shut off automatically!

5. Hob cookers are so easy to clean!

I have been using the SR-1881S induction unit for two weeks... and in that time I have used the regular stove top once. The unit is that good!!

Now the great features:

Safety - will not turn on without a cooking utensil on the surface - forks, spoons etc. will not turn it on; if the pan is empty or overheats, turns off.

Speed - easily twice as efficient - tested with one cup of water to boiling and was twice as fast

Control - as precise and fast as a gas flame but no heat escapes from around the pan

If you try induction, you will never go back to gas or electric heating tops! My next project will be to replace my standard top with all induction.

"The good news is that the technology works as advertised. It's remarkably quick and has plenty of power despite running off a normal power outlet. The bad news is that on this unit the heating element (if that is the correct terminology) is only about 7 to 8 inches across. It worked fine when we made soups, though we did notice that only the middle boiled or simmered. However, when frying, the limitation of the element size became a problem. We used a lodge 12" cast iron skillet to fry fish. The center of the pan put a beautiful tan on the panko, but the outside of the pan was relatively cool, requiring that each piece of fish be flipped to four positions before it was properly cooked..." I've been using the Viking Portable Electric Induction Cooker (15x12-in.) since October 2008. It is fantastic. There are some limits, for example, no Le Creuset will work on it, and Staub works intermittently. But all Lodge work fine (both regular cast iron, and their enameled which has a better cooking surface than the more expensive brands), as will any carbon steel. Pretty much any pan or pat that a magnet can stick to strongly will work. The high is much hotter than a normal cook top, and the low is lower. With induction, the amount of heating changes the instant you change the power. I have more control over heating than with gas now. The traditional-style control knob is essential, I think. I would not want to be tapping little buttons in the middle of a sauté. Cleans like a charm. It sits on top of my old electric range, which I never use.

    I knew about induction cooking, in theory anyway, but never heard the term HOB for cooking, so this was quite an education for me. Interesting lens, Chef - you rock!
