My Favorite Sweet Potato Recipe

Every holiday, for as long as I can remember, my aunt has always made her sweet potatoes. And every year my sister and I always fight over who is going to get the last little bit (somehow she usually win!) It has always been one of my favorite things about the holiday. They are that good! A few years ago I finally got her sweet potato recipe and I have been making them every chance I get ever since. It's really easy to make them it just takes a little time. But it is well worth it! Here is my favorite sweet potatoes recipe:

Ingredients

2-3 Sweet Potatoes

1 1/2 cup Brown Sugar

1 teaspoon vanilla

1 stick (1/2 cup) butter

Step 1

Peel and cut of the sweet potatoes (about 1/2 to 1 inch thick)

Step 2

Cook the sweet potatoes in water with a little salt and bring to boil. Then reduce heat to a slow boil for 15 minutes. Reserve 1 cup of the water from the potatoes when done.

It's Best To Use A 3 Quart Pan Or Larger

After the potatoes are done place them in a 9x13 in pan in a single layer and put them aside for a few minutes. In a small saucepan combine the 1 cup of reserved water from the potatoes, 1 stick of butter, 1 1/2 cups brown sugar and 1 teaspoon of vanilla. Bring to boil stirring constantly. Pour over the sweet potatoes.

Step 4

Let the sweet potatoes set for at least 1 hour (or longer) prior to cooking.

    Great idea. We need more recipes that go beyond the basic uses. We've just started using sweet potatoes more so I'm definitely favoriting this one.

    Sweet Potatoes are not at the top of my favorite vegetables but my husband loves them. I usually just boil them so your recipe sounds like something I could try. Love the way you have done your lens.
