4th of July Holiday!

A yummy for your tummy when its HOT outside!

Blueberry-Strawberry Short Cake
Ready Made Angel Food Cake (sliced)
2 pints of fresh blueberries or 1 bag of frozen organic blueberries
1 pint of fresh strawberries (sliced and lightly sprinkled with sugar)
1 1/2 container of low-fat cool whip
Slice the Angel Food Cake into 1/2 inch slices (okay, I won't tell a little thicker if you like) Mix together the blueberries and the strawberries that have been sprinkled with sugar. Fold in the 1 1/2 containers of low-fat cool whip. Place on top of angel food cake slices and garish with some fresh mint! I cannot tell you how refreshing this recipe is....yumm!

Jello Cake
1-white cake mix divided into 3 round cake pans-cook per instructions
1-box blue jello, 1-box of strawberry or cherry jello Mixed per instructions
2-containers of low-fat cool whip
After you bake your cakes place on a cooling rack and allow the cakes to completely cool. Than place back into the pans and with a wooden spoon handle poke holes in cake (as many or little as you like) Pour the jello liquid over one of the cakes and the strawberry or cherry jello over the other cake (leave one cake completely alone) Place in the fridge over night if at all possible. The next morning place the solid white cake down first and add some cool whip to it like a frostening.
To make sure your jello cakes come out of the pan easy, you can soak the bottom of the pan in a little hot water or run your knife around the edge of the pan.
I use this recipe during all of the holidays, all you have to do is add different color jello, for example at Christmas you could use green, red and white.
