How to make home made peppermint creams
This is the recipe that I used as a child to make homemade peppermint creams
Ingredients
1 egg white ( free range is best)
The juice squeezed from half a lemon
1 teaspoon of peppermint flavoring
425g/15 oz/ or 31/2 cups icing sugar,/ confectioner's sugar( plus extra for dusting)
175g/6¼oz good quality dark chocolate
Method
Whisk the egg white in a mxing bowl until stiff peaks form when the whisk is removed.
Slowly stir in the lemon juice, peppermint and icing sugar . Bring it together with your hands to make a paste.
Dust a work surface with a little of the extra sugar, then roll the mixture out until it is about the thickness of a coin.
Use a cutter , rim of a glass or egg cup to cut out circles and carefully lift them onto a baking tray with a thin palette knife
Chill in the fridge for 1-2 hours, or until the mixture has set.
When they are set, melt the chocolate gently in a bowl set over a pan of simmering water. Take care to do this very gently.
Dip each peppermint cream into the melted chocolate and set aside on a baking tray.
Chill the peppermint creams until set.
Place the homemade peppermint creams into pretty boxes and wrap as gifts.
Simple variations on this peppermint cream recipe
You can split the mxture in two and add a drop of green coloring to it, so that you get half green half white peppermint creams.
You can dip some of the peppermint creams 100% in the chocolate, you can dip some of the candies half in so that half is chocolate, and the other half is green or white, or you can leave some plain with no chocolate. This gives you an attractive looking variety of home made peppermint candies.
