I have no pictures, but I made this for the same reason - portability for the car - and holy wow was this both practical and delicious! My boyfriend didn't believe me when I told him I made it all from scratch (I do my own marinara, nbd). Just enough resiliency in the dough to support heavy filler (I chose broccoli, sausage, and mushrooms), but not too chewy. This is definitely going in my go-to recipe box!

We call that Stromboli. A Calzone has ricotta cheese in it and no sauce. You cut it open after it's baked and pour in the sauce. But that sure does look delicious!!!
  • DW Feb 14, 2012 @ 10:33 am | delete
Actually, the Calzones I grew eating near Chicago were a lot like this (just a different shape). The sauce and lots of mozzerella cheese are on the inside but then a little extra sause on the side for dipping. Although the version you talked about with ricotta cheese inside sounds Sooooo yummy too.
  • bushaex Feb 13, 2012 @ 1:20 pm | delete

These Calzone's look like works of art! b.t.w. - you hit on one of my secrets - the often overlooked kitchen utensil "Scissors". These are especially good when you travel with small children and need to help them cut their food.

I totally forgot to add something - I rolled the dough out on the countertop but put my silpat (silicone baking sheet) under it and that allowed me to transfer the calzone to my baking sheet very easily!

  • Deniz Jan 11, 2012 @ 6:10 pm | delete
I just made this & it turned out awesome. Used my breadmaker to make the dough & subbed almost a cup of ground flax seeds for the flour. It's an awesome idea that I'll be using again for sure - thank you for a keeper!!

Calzones are a close cousin to Pizza Rustica too; some of the best calzones IMHO are the ones that are fried, you don't really see that much anymore. Back-in-the-day of the Feast of San Gennaro and the Giglio Feast in East Harlem they would fry them in garbage cans (new, clean garbage cans of course).
  • TheNupps Dec 10, 2011 @ 1:05 am | delete

  • Ne Dec 3, 2011 @ 6:23 pm | delete
    1) I prepared on parchment paper on my counter which made transferring it to the baking sheet super easy. 2) easy on the sauce or it will leak out in a saucy cheesy mess (but was still good to eat). 3) Another commenter mentioned adding garlic to the dough...sounds good! I felt like mine was missing some spice or kick, even though I added pizza spices. 4) I topped mine with a drizzle of olive oil and parmesan - a sprinkle of garlic salt may have been good here, too

That looks great, going to have to try this.

You could make it all on baking paper or silcone mat, then there's no worries about how to transfer it to a baking pan. Will leave you with a clean pan after cooking.

My boyfriend and I made 3 of these last night for a home date night. We used premade wheat dough from wegmans- they turned out great! I love the way they look with the crisscross on top. We are going to have leftovers all weekend! We made breadsticks and buffalo chicken bites (http://sweetpeaskitchen.com/2011/09/24/buffalo-chicken-bites/) to go with it. Too bad we forgot the blue cheese and celery! :(

Really enjoyed this lens. Thank you. As far as transferring items like this to a baking sheet. For some reason I don't like using the baking sheet to make bread loves, crusts, and the like. I frequently make my bread on a cutting board, then slide it onto a baking sheet. What about parchment paper on the counter, then slide the whole thing onto the baking sheet? Just some thoughts.

I made this tonight. I have never used a store-bought refrigerated pizza dough before. Boy was I disappointed! The dough was simply a biscuit dough, and was quite hard to work with. I won't make that mistake again. But even my 15-year old daughter liked the results.

Makes me hungry. Once in a blue moon we get a stromboli. But with Calzones you can do the same. Build your own, great for individuals with different fillings. Steak and Cheese, ham, cheese and onions. So many options to choose from.

Thanks for the calzone wrapping tip. I will try this when I get a chance. Last I remember making calzone, it was an awful mess. I didn't wrap it right and was too thin, the filling came out of its side.

I love making these, they're also great with mustard, ham, and cheese if you're in the mood for a hot sandwich, or ham, pineapple, provolone and sour cream with itallian seasoning and garlic salt....anyway, what I was going to say is, roll it out on parchment, foil or wax paper, solves the moving and cutting issues (just use 2 spatulas to help transfer it) that way you can preheat your stone or baking sheet and get a super crisp crust.
