Mom's Homemade Chicken Noodle Soup
Ingredients for Chicken Noodle Soup
Gather these ingredients together
5 pounds of chicken pieces
6 cups water
3/4 cup chopped onion
1 teaspoons salt
dash pepper
1 bay leaf
1 can of creamed corn
1 ½ cups uncooked noodles
How to Prepare Chicken Noodle Soup
Instructions for making Homemade Chicken Noodle Soup
In a large soup pot, combine chicken, water, onion, salt, pepper and bay leaf.
Bring to a boil.
Reduce heat and simmer, uncovered about 2 hours or until chicken is tender.
Remove chicken from broth; cool and remove meat from bones. Cut chicken into bite size pieces and set aside.
Discard bay leaf.
Bring broth to a boil.
Add corn and noodles.
Simmer covered about 5 minutes or until noodles are done. (check the package directions for the noodles you are using.)
Add chicken and heat through, about 5 minutes.
Season with salt and pepper
Makes 8 servings.

- Congrats on a great soup site. Chicken soup indeed is the best cure for what ails you. I recovered from degenerative bursitis by drinking a cup of soup 2x daily. My recipe is to roast 2 chickens, strip the meat and simmer the bones and grissle overnight with 4 cloves of garlic and a teaspoon of fresh ground pepper, add 2 chopped onions in the morning and simmer until they are soft then serve with a large pat of butter. Makes good strong broth and there is enough meat to make it interesting. ;)
