    I had no idea I could bake after dipping in the bread crumbs, I always fry at that point. Your eggplant parmigiana looks great, and healthier than mine. I will give it a go!

    I'd love to try making this. We have an Italian Bistro we love to go to and they make good Parmigiana but .. very fattening. I'm always trying to cook lean without losing the flavor. Thanks for posting this! 5*s and fav.
