Sounds delicious. Chicken pot pie is one of my favorite dishes. I really like that you have instructions to make broth from the carcass. This is a process so many people ignore, but makes your food taste so much better.
  • girlfriendfactory Jan 5, 2012 @ 10:30 pm | delete
Oh my goodness! This sounds so yummy and I'm so hungry right now! (No wonder I'm looking at food lenses! lol) I am so going to make this as soon as I get to the store! I rarely do this, but you reminded me of a binder I made on Zazzle (it has a matching apron, too)...I'm putting in the link, but you can remove it if you want. I think you might find it funny though. :) http://www.zazzle.com/recipes_for_chicken_binder-127516219670984773
    Love this lens!

You know, I've been making pies for years, but never made a chicken pot pie. I think I'll use some of my frozen turkey stock (from the Thanksgiving turkey) and make one up very soon. I love the idea of adding grated Parmesan to the crust. That has to make it extra delicious!
  • SereneSea Dec 13, 2011 @ 7:02 am | delete
Yummy and delicious recipe, nicely done - great for a get-together and family.

Oh Brenda, You can come on over to my place and bake up a chicken pot pie any time! I've actually been craving a good pot pie. Nothing like it on a damp or chilly evening.

Hmmm. Then, follow it with some homemade apple pie? Now that sounds good too!

    :) Hugs,
    Kath

I should try this. It looks so good. I am lousy at making pastry crust. Maybe I could just buy some... or hire a chef to teach me how to make it better! Wink!
  • skiesgreen Jan 12, 2011 @ 12:49 am | delete
Looks gorgeous, must try it one day soon but we are in summer now an it is too hot for cooking. Top marks

Oh my goodness, parmesan cheese in the crust sounds delicious! And yes, is there anything much better than chicken pot pie in the depth of winter?
  • Tipi Dec 18, 2010 @ 11:47 pm | delete
Parmesan cheese in the crust! Wow! I have never had home made chicken pot pie and have wondered about making it. I love how you do everything from scratch. I confess, I don't even own a rolling pin, but now I have a reason to get one! Perfectly done!

Yummy comfort food that you eat with a fork. I married into a food culture clash. He likes everything that you pick up to eat. Hhaha, tacos, tortas, burritos, chips and salsas. You have to work and get a little messy. Even soup they put the cob in.

We have your pancakes for dinner and he requests it. I will try this one too.
  • GeoffSteen Nov 3, 2010 @ 11:40 am | delete
Thank you for a deliciously inspiring lens - we will try your recipe this Sunday. Perfect now the weather's getting cold.
  • Swisstoons Oct 21, 2010 @ 6:59 pm | delete
I don't think I've ever had a homjemade chicken pot pie. The closest I've come might be from a restaurant. But even the occasional frozen store-bought ones I had in my youth were pretty tasty. Yours...with special ingredients...sound particularly enticing. Thumbs up for making my moujth water!
  • VickiSims Oct 15, 2010 @ 10:54 pm | delete
I'm absolutely ready to try your recipe. It sounds yummy. I can't believe how many lenses you have made and all of them are fantastic.

I'm ready! I just ordered a frozen one from a local turkey farm. My mother makes an unbelievably good chicken pot pie, it's one of her signature dishes. She's overdue to make it actually (hitting speed dial right now...)

  • funcook Sep 24, 2010 @ 9:03 pm | delete
Wow, this has really put me in the mood for chicken pot pie!
  • Larisa Sep 17, 2010 @ 11:05 am | delete
Can anyone tell me, if you make ahead and freeze it, what the cooking time and temp would be? thanks!!
  • Treasures-By-Brenda Sep 17, 2010 @ 1:08 pm | delete
Great question, Larisa. I wish I knew the answer. I think I actually did make one ahead and freeze it before, but that was a long, long time ago. I hope someone else can help you. It is a great idea to make it ahead. Chicken pot pie can be a lot of work but the results are worth it.

Your recipe sounds delicious! I've made a chicken pot pie many times from a very simple recipe, using a ready-made pie crust, Veg-all, cooked chicken and chicken broth. I'm sure not as good as yours, but it was always a good and enjoyable dish.
  • KarateKatGraphics Sep 11, 2009 @ 11:27 pm | delete
I like the idea of a parmesan crust for the pot pie, and you've included some of my favorites here...Nigella Lawson, my beloved Emile Henry pieplate... :)

Can you come and cook me one? My favorite store bought pot pie is by Mrs. Budds - if you have these in your store it is the closest to homemade and sooo good. When I moved to PA their version of Chicken Pot Pie is very strange. I really love a thick crust not only on the top, but also on the bottom. Mrs Budds only has it on the top, BUT it is so thick and yummy. Maybe I will have to try your recipe - Nah I will make my husband do it - lol.
