it is called pommes frites in french. if you are really craving for french fries and there are no fresh potatoes around nor bagful of frozen sliced potatoes, run to the next mcdonald's, burger king or wendy's and order a large portion of fries to quench your craving. in the end, you also order the burger and drinks with it. bon appetit!
  • cffutah Jan 18, 2012 @ 10:13 am | delete
Great info here, haven't made homemade fries before but now am willing to try it.
  • kathysart Jan 17, 2012 @ 1:27 pm | delete
I don't really fry them, I cut up the potatoes, toss them with olive oil, S&P, and parmesan cheese and put them in the microwave. That is the closest I get but wow I am craving fried ones now!

I love to make homemade fries. I prefer to make them at home knowing what type of oil I am using instead of risking they were fried in peanut oil at fast food restaurants or general restaurants. I am allergic to peanut oil. Restaurants prefer to use peanut oil now these days because that oil is cheaper to buy in bulk than other types of oils. I have found I have been told no they do not use peanut oil and that not be the case when I had an allergic reaction later.
This recipe is so easy and they definitely taste better and healthier homemade! One of these days I will get myself a deep fryer as I know it is easier to use one instead of stove top method.
  • ShirleySunshine Nov 1, 2011 @ 5:42 pm | delete
Great tips for yummy fries! I absolutely hate large, thick soggy chips!
  • jenniferteacher Nov 1, 2011 @ 2:31 am | delete
I haven't made fries in years (decades?) because I don't want to buy a deep fryer (too dangerous to my figure) and that's the only way I've ever made them. I'll have to try the stove top method, though... No healthier, but enough effort that I don't think it will be a habit, when I could just toss the potatoes in a pan with some meat and let them roast.

Hurray! Thanks to you, Gerald can eat french fries again! (That is, as soon as I get busy and make them, lol! Maybe we can learn how together.) The only place he can order fries that we know of is Inn-N-Out Burger, where everything's made from scratch. And we don't have one of those in our city. Thank you SO much!!! :D

  • chitownchef Jul 14, 2011 @ 3:34 pm | delete
Not a bad recipe but the real way to make french fries (you know.. the french fries at restaurants that are unbelievably delicious and crisp) is as follows. Heat peanut oil to 375. Wash potatoes thoroughly and peel (or leave the peels on if you prefer). Cut potatoes into 1/4" x 1/4" thickness. Soak in cold water to prevent oxidation. Pat dry with towels. Fry in oil until you can break one by pressing it, this doesn't mean fry them until tender, the fries should still be undercooked in the center. After you've fried them, put them in the freezer or refrigerator until they've completely cooled. Now, fry them a second time until they are golden. They should be crisp on the outside and soft on the inside. Sprinkle with salt and serve alongside some aoili or plain. NOT WITH KETCHUP.
  • charmilbrettdotcom Jul 5, 2011 @ 3:12 pm | delete
deep fry for a while, then, pull basket up and let drain, then place back into the oil for a few minutes. the outside gets crisp, while the inside becomes goooshie... [mmm] then, for a great flavor, put some Hormel Chili and some Nacho Cheese on them for an 'out of this world' taste sensation!
  • GrammaLinda Jul 5, 2011 @ 3:00 pm | delete
Rolling them in cornmeal first gives them a crisper texture.
  • blanckj Jun 28, 2011 @ 3:08 pm | delete
I've used a deep fryer and the pot on the stove. It depends on my mood. I usually bake the frozen ones though. I cheat; I spray them down good with cooking spray and they get to bake in oil which gets them nice and crispy.
  • gypsyman27 Jun 7, 2011 @ 1:00 pm | delete
I bake them in the oven from time to time. I sprinkle them with canola oil before baking and then I season them. Great lens, good information. See you around the galaxy...

I would appreciate it if you could change the title of your lens to How To Make Homemade Belgian fries, please, since we are the ones who invented them, not the French.

    I'm kidding :)

When I was a kid, we never had anything but homemade fries. My mom always made them from scratch. Now that I'm an adult (or something like it), I never make my own fries. There's a "friterie" down the road that makes the best fries in the world.
  • UKGhostwriter May 19, 2011 @ 4:46 pm | delete
    Very interesting! good lens
  • Margo_Arrowsmith Mar 22, 2011 @ 7:59 pm | delete
Sorry, it was all good, except the part about pealing them! Oh, no. Whether home or bought in a restaurant; fries must have peals. Potatoes must have peals. I leave them on mashed and potato salad! yum!

    But thanks for the information
  • nightcats Mar 18, 2011 @ 7:57 pm | delete
I used to make french fries from scratch when I was cooking for a family. Now I cook for myself and French Fries are on the no-no list, according to my doctor. Sigh. Sure do love them though.
  • miaponzo Feb 16, 2011 @ 1:23 pm | delete

I have made them in the oven and no salt at all...Sodium free...hmm yummy
  • JanisRemaxRealtor Jan 23, 2011 @ 3:41 pm | delete
I have made them in the oven with olive oil, rosemary - I have made the frozen kind, I have done oven and oil on the stove. Today I try my new deep fryer! I am very excited about it! I have been looking at a bunch of websites, food network, etc., and they all say to fry twice - once at the lower temp then again at a higher temp to crisp up.
  • BigGirlBlue Jan 3, 2011 @ 1:19 am | delete
We've been making homemade french fries on the stove for decades but we are not so snobbish to not pick up a bag of McCains occasional. LOL
  • stuhaynes Dec 29, 2010 @ 12:01 pm | delete
pre fry 'til chips are soft, take out of oil and put in a cap with a lid, and shake. Leave while preparing meal. Put into hot oil one minute before required. Result, crispy chips that are fluffy inside. Simples
  • ChrisDay Dec 28, 2010 @ 12:18 pm | delete
I'm definitely going to give these authentic Fries a go - however, I'm nervous of the potential fire risk of hot oil on the hob.
  • WildFacesGallery Nov 15, 2010 @ 6:21 pm | delete
I've made them before but they didn't quite work out. Not sure what I did wrong, now that I read your directions I still have no idea. Perhaps I should just try it again and see what happens. We particularly like seasoned fries.
  • Momsbusy247 Nov 13, 2010 @ 2:45 pm | delete
Funny thing is, as a kid I hated french fries, I know I was the only kid in the world who did. But, now as adult I love them! I also really love sweet potato fries, they are yummy.
  • WhiteOak50 Oct 4, 2010 @ 6:04 am | delete
My favorite, favorite thing to do with fries is sprinkle Ms. Dash seasonings over them and pepper. AND I love dipping them in mustard! Yum, now I want some french fries and it is only 7 AM. (laughs)

I bake our french fries, too. But partybuzz is right - baked fries do not measure up to the real french fried potatoes!
  • partybuzz Aug 23, 2010 @ 9:14 am | delete
My family always preferred homemade french fries, and I used a pot on the stove, but would loved to have had a deep fryer. These days, I spray the cut potatoes with oil, and bake them. (don't peel them either). It's more healthy, but not nearly as tasty! :)

Hell, you could feed 4 or more people out of that pan full of lip smacking Deliciousness. Cool Off With a Huge slice of Kutchie Pelaez's, "World's Greatest Key Lime Pie"....Who could ask for more?

Not sure if I will make them but they sound delicious. We are originally from Pittsburgh and grew up eating fries on sandwiches http://www.primantibrothers.com/ and our steak salads are served with fries.
  • prosperity66 Nov 23, 2009 @ 1:51 am | delete
French fries were born in Belgium. I sometimes buy frozen fries and sometimes do them myself. But fries are really tasty when fried in BEEF GREASE... not in oil... Anyway, this tradition tends to disappear but they really are tastier fried in such grease.
Best way to eat fries: salt and mayonnaise :D
Best way to serve: mussles and fries, steack, archiduc or pepper sauce and fries, last but not least - don't worry, we're not cannibals: American and fries. "American" --> minced steack, mayonnaise, egg yolk, seasoning.
    Wonderful lens!
    Dom.

    Genuine French Dressing
3 tablespoons good quality olive oil

    1/8 tablespoon salt

    Dash of pepper

    1 tablespoon wine vinegar

Mix all the ingredients together, and
Mix well with a wire whisk and serve immediately. An alternative way to mix dressing is in a jar with a sealed top - simply add all the ingredients and shake vigorously for 30 seconds .

I'm lucky, Rick prepares, peels, cuts and makes our french fries! He's wanted to make sweet potato fries for a while, but haven't got around to it yet. Tip? I heard that if you soak your cut fries overnight first in vinager water, it makes a crispier fry (haven't tried that yet though)
  • johndilbeck Jul 29, 2008 @ 8:39 pm | delete
I don't think I've ever met a French fry that didn't try to dip itself in ketchup and jump down my throat!

I have to admit to getting lazy and cooking frozen fries in a microwave. I can get a plateful of (almost) tasty fries in 6.5 minutes.

They aren't as good as when I fried real potato strips in a FryDaddy or baked them in an oven, but they make a nice snack when I'm working in the middle of the night.

My mouth is watering just thinking about warm, crispy French fries!

I love homemade fries. They taste so much better than the restaurant ones, and of course you know exactly which type and how much oil is being used when you make them yourself.

We quit eating french fries several years ago thanks to my low-carb way of eating. But when I made fries, we did thick cut with the skins left on and cooked them in the oven. Totally yummy and a lot less mess. Homemade fries are the bomb!
  • Susan52 Jul 18, 2008 @ 10:44 am | delete
I've rarely met a french fry I didn't like, but your homemade version sounds best!
