Easy Vanilla Fudge Recipe

Old Fashioned Vanilla Fudge - Super Easy Recipe

vanilla fudge

Ingredients

300ml or half a pint of milk
800g or 1lb 120z of granulated sugar
100g or 4oz of unsalted butter
2 teaspoons or 10ml of vanilla essence

Equipment

Large, heavy based saucepan
Wooden spoon
7" or 18cm tin, buttered

Directions

Pour the milk into the pan and gently bring to the boil
Add the butter and sugar
Gently stir all the time, until the butter and sugar have melted
Bring to the boil, put the lid on the saucepan and continue to boil for exactly two minutes
Remove the saucepan lid and continue boiling gently and steadily for 12 minutes, stirring occasionally
Remove from the heat, add the vanilla essence, stir and leave for 5 minutes
Beat the fudge with a wooden spoon until it becomes thick and creamy and looses its shine - you might want a hand with this!
Pour the fudge into the tin and leave to set
When hard cut the fudge into squares and enjoy!

Peanut Butter Fudge

Ingredients

2 cups sugar
2/3 cup evaporated milk
2 tablespoons unsalted butter
1 cup marshmallow creme
1 cup peanut butter

Equipment

Medium heavy based saucepan
8 x 8 tin buttered
Wooden spoon

Directions

Put the sugar, butter and milk into the saucepan
Bring to the boil, stirring constantly
Boil for five minutes, stirring all the time
Remove from the heat
Add the marshmallow creme and peanut butter and stir until smooth
Pour into the tin and refrigerate for about one hour until set

Chocolate Fudge Recipe

Chocolate Fudge You Make In The Microwave!

Ingredients
1 pound of powdered sugar (also known as icing sugar or confectioners sugar)
1/4 cup of cocoa
1/8 cup of evaporated milk
1/4 cup of unsalted butter
1 or 2 teaspoons of vanilla essence

Equipment
Large, microwave safe mixing bowl
Wooden spoon
8" x 8" buttered tin

Directions
Put sugar, butter, milk and cocoa into the mixing bowl
Microwave on high for 2 minutes
The timing will vary slightly depending on the power of your microwave
Check if the butter is melted - if it isn't microwave again for 20 seconds
Normally the butter is melted by now but if it isn't give the mixture another 20 second burst in the microwave
Add the vanilla essence and stir with the wooden spoon until smooth and creamy
Pour the mixture into the tin and use the spoon to smooth over the top
Refrigerate until set, cut into squares and enjoy
