What is Guacamole?

Guacamole, pronounced as Guacamol in Central America and Cuba, is an avocado based-relish dip.

Of Aztec origin, it was originally valued for its high fat and vitamin content. Guacamole was originally made by mashing the avocado with a molcajete (a type of mortar and pestle) and adding tomatoes and salt. After the arrival of the Spanish conquistadors, guacamole became popular in Spain. Since avocados failed to grow well in Spain guacamole remained an American food.

Ripe avocados, lime, and salt are common to most recipes. Lime or lemon juice is added not only for flavor and but also to slow the reaction of the enzyme that causes browning.

Ingredients
Other common ingredients include minced tomatoes, minced or grated red onion, black pepper, chili pepper, garlic, cumin, cilantro or coriander, and worcestershire sauce. Some add sour cream as a filler and a preservative.

The word Guacamole comes from Mexican Spanish "ahuacamolli" from ahuacatl (avocado) + molli (sauce).

Basic Guacamole Making

Cut the avocado in halves and disregard the seed. Scoop out the flesh of the avocado into a mixing bowl making sure to get the flavorful darker green part close to the peel. Add the remaining ingredients and mix.

You'll need:

♥ 2 ripe avocados
♥ 1 tsp. salt
♥ 1 Tbsp. garlic, minced
♥ 1/4 lime (just the juice)
♥ 1/4 orange (just the juice)
♥ 1 Serrano Pepper (just enough for some flavor - usually about a 1/4 but NO seeds!)
♥ 1/2 Roma tomato - diced
♥ 1 slice red onion - diced
♥ 1 tsp. cilantro

Now, grab a bag of chips and dip it! It's time to party, where's everyone?

Indian Twist Guacamole

1 small white onion
1 clove garlic, minced
4 avocados
1/2 lime
1/2 teaspoon salt, or to taste
a few big pinches of cumin powder
a few big pinches of Indian curry powder

*Garlic or plain naan bread, cut into wedges (not gluten free)

*Heat oven to 350 and bake the naan wedges for 10 minutes or so - just enough for them to crisp up a bit.

*In a small bowl combine the onion, garlic, and avocado flesh. Take the lime and give a generous squeeze or two. Add the salt, cumin and curry powder. Give everything a good stir, but don't overdo it. Taste. Now start adjusting. Do you need a bit more lime? A bit more salt? Want a stronger curry flavor? Go for it.

*Serve in a bowl with a big pile of the naan wedges on the side and a sprinkling of curry powder on top (a bit of chopped cilantro would look nice as well).

Note: Feel free to add a chopped tomato if you like, a bit of cilantro might be tasty as well...

Taqueria Guacamole

Ingredients:
2 ripe avocados
1 lemon, juiced
1 plum tomato, seeded and chopped
1 small white onion, finely chopped
1 medium fresh jalapeno, seeded and finely chopped
Coarse salt


Halve avocados lengthwise around pit. Remove pit with a large spoon, then scoop out flesh into a bowl. Squeeze the lemon juice into bowl. Add tomato, onion, and jalapeno, and mash guacamole with a fork to desired consistency. Season guacamole with salt, to taste.

Cheese Quesadillas with Guacamole

Ingredients:
2 avocados, peeled, pitted and chopped
2 lemons, juiced
2 teaspoons minced garlic
1/4 cup chopped red onions
Salt
Freshly ground black pepper
Dash hot pepper sauce
8 large flour tortillas
1 cup grated Monterey Jack Jalapeno
1 cup grated Cheddar
1 small can chopped green chiles
1 tablespoon vegetable oil

Instructions:

In a mixing bowl, add the avocados. Using a fork, slightly mash the avocados. Add the lemon juice, garlic, and red onions. Mix thoroughly. Season the mixture with salt, pepper and hot sauce. Sprinkle 1/4 of each cheese over the top of four individual tortillas. Top the tortillas with the remaining four tortillas. In a saute pan, heat 1 teaspoon of the oil. When the oil is hot, gently lay a quesadilla in the hot oil and pan-fry for 2 to 3 minutes on each side, or until golden brown. Remove the quesadilla from the pan and repeat the cooking process for the remaining quesadillas. Serve the quesadillas with the guacamole.

Chicken and Mango Guacamole Wrap

Ingredients:
1 mango (peeled and stoned)
1 avocado (peeled and stoned)
1 jalapeño
1 lime (juice)
1 handful cilantro (chopped)
salt to taste

Directions:
1. Mix everything in a food processor.

Garlicky Holy Guacamole!

Ingredients:
2 ripe small Hass avocados
1 lemon, juiced
1 large clove garlic, minced
1 jalapeno, seeded and finely chopped
1 small plum tomato, seeded and finely chopped
1/2 small yellow skinned onion, finely chopped
1 teaspoon coarse salt
Blue corn tortilla chips, for dipping

Instruction:

Cut avocados in half around the pit. Separate the halves. Pop out pit with spoon, then scoop flesh of avocados into a bowl. Squeeze the juice of a lemon over the avocados. Squeeze the juice with the lemon halves facing cut-side up, allowing the juice to spill down over the sides of the lemon into the bowl. This method keeps the seeds in the lemon and out of the guacamole. Add garlic, jalapeno, tomato, onion and salt to the bowl. Mash and mix the ingredients into a chunky dip using a fork. Serve with blue corn tortilla chips.

    I love avocado and I have my own way of making guacamole -- Today, for the Super Bowl (yay Giants!!!), I made it with mashed avocado, brown mustard, black olives, balsamic vinegar, and a bit of sauteed mushrooms and green-leafy veggies (spinach etc.). I toasted up some sprouted grain bread (2 pieces) -- I cut each slice into 8 triangular pieces... Came out delicious.....

    LOVE.. LOVE.. LOVE THIS LENS! Absolutely my favorite fruit. I once ate 3 whole avacados in one sitting years ago. I like to slice them, squeeze fresh lemon or lime juice on them and add a dash of salt and pepper - yum. I have bookmarked this to try some of these awesome looking recipes. The Indian twist looks yummy and so the the quesadillas, garlic guac and the mango too! Heck I want to try them all.
