Homemade Macaroni and Cheese
Yes, all that cheesy, gooey pasta isn't great for the waistline but comfort food like Mac & Cheese - once in a while - is good for the soul. If that doesn't work, then, with all that cheese, you can always claim that homemade Macaroni and Cheese is also an excellent source of calcium!
I have also featured six other easy Mac & Cheese variations which venture far from the traditional recipe. Although quite different, they are all really delicious and well worth munching on, once in a while.

My Home-made Mac & Cheese Recipe
that's Macaroni & Cheese if you're being formal!

- Serves: 6
- Prep Time: 15 mins.
- Total Time: 1 hour
Ingredients
- 2 1/2 cups macaroni
- 1/4 cup of butter
- 1/4 cup of all-purpose flour
- 4 cups of milk
- 1/2 teaspoon of salt
- 1 pound of shredded Cheddar cheese
- 1/4 cup of melted butter
- 1 crushed sleeve of buttery round crackers
Instructions
1 Preheat the oven to 350 degrees F
2 Fill a large pot with lightly salted water and bring it to a boil over high heat.
3 Stir in the macaroni and cook uncovered, stirring occasionally, until the pasta has cooked through but is still firm to the bite. That should take about 8 minutes.
4 Drain well.
5 Combine 1/4 cup butter, flour, milk, salt & cheese in a large saucepan over medium heat; cook and stir until the cheese is melted and the mixture thickens, which should be around 7 - 10 minutes.
6 Add the macaroni and stir to coat.
7 Pour the mixture into a 9 x 13 inch baking dish.
8 Mix the 1/4 cup of melted butter and crushed crackers together in a bowl; scatter the cracker mixture evenly over the macaroni mixture.
9 Bake the macaroni cheese pie in a pre-heated oven until golden brown on top, about 45 minutes.

anka_n says to add sweet cheese instead of cheddar and some sugar and raisins.
Mac & Cheese Variation # 1: Breadcrumb Toppings
Using my Home-made Mac & Cheese recipe as a base:- Omit Step 8 altogether!
- At Step 9, after the pie has cooked for 20 minutes, take the pie out of the oven and top it with 1/2 cup of dried bread crumbs mixture
- Return the pie to the oven and cook for another 25 minutes or until golden brown
dried breadcrumbs + 1/2 cup Parmesan cheese or
dried breadcrumbs + 1/2 cup Parmesan cheese + 1 teaspoon of dried mixed herbs
Italian breadcrumbs (Any sensible mixture of: old bread blended into breadcrumbs + dried oregano + dried basil + dried parsley + powdered garlic + powdered onion)

Mac & Cheese Variation # 3: Lazy Vegetarian
If you're in a hurry, Lazy Vegetarian Mac & Cheese is incredibly easy to incorporate into the basic recipe and as with this picture may suggest, my favorite part is the corn.At Step 5 of my home-made Mac and Cheese Recipe, add the following ingredients:
- 1 cup of frozen corn (or 1 can of drained sweet corn)
- 1 cup of frozen peas (baby peas are better for me)
- 1 can of drained & diced pimentos
- 1 can of drained button mushrooms
- 1/2 teaspoon of ground white pepper
- if needed, 1/2 teaspoon of salt
Of course, you can also use all fresh extra ingredients, in which case, I suggest a quick stir-fry, starting with some onion & then garlic.

Mac & Cheese Variation # 5: Viva Mexico!
In some ways, this variation on Mac & Cheese is a cheat because it's a meal in itself, that's layered in between two layers of Macaroni & Cheese.So, you'll need to make up the "Mexican" component either beforehand or as you make your Mac & Cheese.
- You'll need to saute about 1 tablespoon of oil & then add
- 1 medium-sized diced onion.
- When it's glace, add three cloves of finely chopped fresh garlic
- and quickly add 1 finely chopped green or red pepper
- When the peppers have begun to change color, add a little more oil and fry 1 teaspoon of cumin powder & 1 teaspoon of dried chillies in the oil
- Then, add 1 can (16 oz.) of stewed tomatoes (break them up) + 1 tablespoon of tomato paste and reduce until the liquid is gone and finally
- a 1 cup of frozen (or drained, tinned) corn
When you get to Step 5 in the Homemade Mac & Cheese recipe only put half the mixture into the oven dish and then layer with Viva Mexico / Meat Mexico. Now put the second half of the mixture on top and proceed to Step 6.

Mac & Cheese Variation # 6: Four Cheeses
Now, in the world of Macaroni & Cheese, there's Macaroni & Cheese and then there's Macaroni & C-h-e-e-s-e with so much cheese that you'd have to be targeting a coronary! In my recipe 1 lb. of Cheddar Cheese - and that's a rich treat for me! - is added but you can easily vary that with different cheeses.For the 4 Cheese Mac & Cheese Variation, I suggest: still using 1 lb. of cheese - though you can use more if that's how you like it - created from any two strong and two mild combination of:
- Aged Cheddar - some people call this "Sharp" - Strong
- Cheddar - Strong
- Fontina - Strong
- Colby-Monterey Jack - Mild
- Gruyere - Mild
- Mozzarella - Mild
- Provolone - Mild
- Asiago - Mild

- I love macaroni and cheese. I put bacon in it and also whole tomatoes. Everyone thinks it's weird but it sure does taste good. I like the different cheeses., and the peppers. Definitely a make me hungry lens:) Well done Joni
