Homemade Peanut Butter Cups

I first made these years ago for my husband who just loves Reese's. They aren't round like Reese's are, but I think they taste better. But the biggest test is that my husband thinks they taste better. I have now started making these every holiday season and I give them out as gifts. They are easier than fudge, and the batch makes so much, you can give them as gifts to all your family and friends.

Homemade Peanut Butter Cups
Your family will ask for seconds, and probably thirds.
Ingredients
- 1 cup peanut butter (creamy or chunky)
- 1 cup melted butter (2 sticks)
- 4 cups confectioners sugar
- 1 cup graham cracker crumbs (6-7 crackers)
- 2 cups (12oz) semisweet chocolate chips (melted)
Instructions
Coat a 10x15 rimmed baking sheet with nonstick cooking spray. In a large bowl combine all ingredients except chocolate chips. Spread peanut butter mixture over baking sheet. Smooth down and spread out as evenly as possible. Spread melted chocolate evenly over peanut butter. Score bars with a butter knife, then set flat in freezer for 15 minutes. Break apart squares on scored lines. Serve or cover and keep chilled until ready to serve.
You really need to make sure you score, or partially cut the candy before freezing it, because it's nearly impossible to cut right afterward. These are also very rich & sweet, so they can be cut small and still be a yummy treat.
Also, you can buy graham cracker crumbs and just mix them right in. But if you don't have graham cracker crumbs you can easily make your own. Just crush 6-7 graham crackers and make your own homemade graham cracker crumbs.
