A Perfect Holiday Dessert
With the season of autumn nearly upon us, it is time once again to set up the fall decorations, pull out those warmer clothes, and just enjoy the beauty of the season. For many people, this also means preparing for the holidays, and what better way to prepare than by digging out those delicious seasonal dessert recipes. So, in the spirit of the season, I'd like to offer up one such scrumptious delight . . . a recipe for HOMEMADE PUMPKIN CAKE. Enjoy!
A Family Recipe
My mother has been using this pumpkin cake recipe for well over 10 years. Whenever there is a family gathering or one of her co-workers is celebrating a birthday, you can always count on her to whip up this yummy dessert. It is just one of many delicious recipes in her baking repetoire. So, give it a try . . . you won't be disappointed!
HOMEMADE PUMPKIN CAKE
INGREDIENTS:
➀ 2 cups of Flour
➀ ½ tsp. of Salt
➀ 2 tsps. of Cinnamon
➀ 1½ tsp. of Baking Soda
➀ 1 can (15 or 16oz.) of Pumpkin
➀ 2 tsps. of Baking Powder
➀ 2 cups of Sugar
➀ 1 cup of Corn Oil
➀ 4 Large Eggs
Note: At this point, you should also set out the cream cheese and margarine needed for the icing as those ingredients will need time to soften.

This pumpkin cake recipe is intended for either a tube pan, a bundt pan, or a 13"x9" pan.
➀ Preheat your oven to 350 degrees F.
➀ Combine all of the above ingredients in a large bowl.
➀ Mix together thoroughly until entirely moistened and well-blended.
➀ Lightly grease and flour your baking pan. Baker's Joy works best.
➀ Pour your cake batter into the prepared pan.
➀ Bake for one hour or until you can insert a toothpick and pull it out clean.
➂ Let the cake cool in the pan for 20 minutes. Then, remove it from the pan and allow it to cool on a cooling rack for one more hour.
The Icing on the Cake
This cake is very moist and is truly delicious with or without a topping. My mother usually tops hers with a cream cheese frosting made from scratch, but some people prefer powdered sugar instead. I personally love the taste of the cream cheese icing. It is absolutely delish! So, that's how I've prepared it.
If you forget to set out the cream cheese beforehand for softening, simply pop it into the microwave for 15 seconds or so.
HOMEMADE CREAM CHEESE ICING
INGREDIENTS:
➀ 4 oz. of Cream Cheese
➀⅓ cup of Margarine
➀½ tsp. of Vanilla
➀ 1½ cups of 10X Sugar
Note: This recipe will produce a thin icing that resembles a glaze. If you prefer a thicker frosting, add more sugar.
------------------------------------------------------------------------------------------------------------METHOD:
➀ Cream the cheese and margarine in a medium-size bowl.
➀ Add the vanilla and 10X sugar. Mix until smooth.
➀ Spread (or drizzle) the frosting onto the cake.

As I've said, though I wish I could take credit for it, this is my mother's recipe, even though it didn't begin with her. I am not a baker. In fact, this cake (as pictured above) was my very first attempt. Not bad, huh? Yes, this recipe is so easy that even I couldn't screw it up. Last year, I bought a few of these and gave them out as Christmas gifts. Those who received them seem to like this product. Since the Ove Glove is close-fitting, it's less bulky and easier to use than a pot holder or an oven mitt. The only complaint I've heard is that the gloves are not quite as heat resistant as the advertisement leads you to believe. That said, though, most people find that they are sufficient for cooking at standard oven temperatures. Finally, if you choose to buy the Ove Glove, I would definitely recommend a two-pack such as this. I have personally found that these gloves are better when used as a set.
