Homemade Relish Recipes

Ingredients

• 24 green tomatoes (diced)
• 6 white onions (chopped)
• 6 green peppers (chopped)
• 3 red peppers hot (chopped)
• 4 c. cider vinegar
• 8 tbsp. sugar
• 2 tsp. Allspice
• Salt to taste

Instructions

Combine all ingredients in a large pot. Simmer about 25 minutes, then bring to boil. Salt to taste. Seal in pint jars while hot. Approx. six pints.

Ingredients

• 10 c. chopped zucchini
• 5 tbsp. canning salt
• 4 c. chopped onion
• 2.5 c. white vinegar
• 4.5 c. white sugar
• 2 red or green sweet peppers
• 3 tsp. celery seed
• 1 tbsp. cornstarch
• 1 tsp. tumeric
• 1 tsp. black pepper

Instructions

Mix squash and salt together in a large pot and set overnight or at least 8 hours. Rinse with cold water and drain. Add remaining ingredients and mix well. Simmer for 40 minutes. Pour into hot sterilized jars and seal. Approx. five pints.

Ingredients

• 8 c. raw corn kernels
• 1 qt. chopped cabbage
• 1 qt. cider vinegar
• 2 c. brown sugar
• 1 c. diced celery
• 1 sweet red pepper
• 4 tbsp. pure granulated salt
• 1 tsp. turmeric

Instructions

Combine all ingredients except turmeric in a large saucepan and bring to a boil, then simmer uncovered about 30 minutes, stirring occasionally. Add turmeric, mix well and cook on medium heat about 10 minutes. Pour hot relish into sterilized jars and seal. Approx. five pints.
