Ok - Back To The Homemade Wine Recipe

Ingredients

4 lbs. blackberries (fresh or frozen)
4 1/2 cups sugar
1 tsp. yeast nutrient
1 tsp. acid blend
1 tsp. pectic enzymes
1 campden tablet
1 pkg. all-purpose wine yeast

Homemade wine recipe tip #1: Preparation is the key. Make sure you have your guidebook, recipes, and all the tools you need ready before you start.

Homemade wine recipe tip #2: Make sure you thoroughly clean and disinfect EVERYTHING that is ever going to touch your wine (ie. fermentation vessels, stirrers, bottles, etc.). This is the most common mistake beginners make.

Homemade Wine Recipe: Day 1

"Primary Fermentation"

-Crush fruit and pour juice into primary fermentation vessel
-Stir well and top up to 1 gallon with water
-Add sugar dissolved in water
-Add wine yeast
-Cover with a towel and elastic
-Stir every 24 hours or so

Homemade Wine Recipe: Day 8

Secondary Fermentation

-Siphon wine into second fermentation vessel to get rid of the dead yeast that will be collected at the bottom (this is called "racking" the wine)
-Put an airlock on

Homemade wine recipe tip #3: The reason we "rack" the wine is to get rid of the dead yeast, which can offset the taste of your final product.

Homemade wine recipe tip #4: Fermenting the wine to the yeast "eating" the sugar. The bi-products are Carbon Dioxide and Alcohol.

Homemade Wine Recipe: Day 30

Enjoy!

-Add potassium sorbate to stop fermentation (stabilize)
-Allow to sit for at least 3 days
-Siphon the wine into bottles and cork it!
-Wait a few days to drink - then, by all means - enjoy!

Homemade wine recipe tip #5: The longer you let your wine brew, the better it's going to taste. You CAN drink it after 30 days, but it probably won't be great. Like your mother said - patience is a virtue :)
