Two Crusts, One Hour And A Whole Lotta LOVE!

My paternal grandmother was widowed very young, with 8 children in the 1930's. Living in a small Colorado mining town, there weren't a lot of career opportunities available. But, being of hardy Danish stock, she set forth to meet the challenge. You see, Grandma had an ace up her sleeve. She was a fantastic cook!

She baked pies, cakes and anything else she could think of and sold them to local restaurants and diners. Soon, she'd made a name for herself as the best cook in the region.

I still remember Grandma putting pies together in her little kitchen, complete with a wood burning stove, and then delivering them around town to some very grateful clients.

These days, nothing says 'relax' like home cooking. An all time favorite at our house is a lovely pie, fresh from the oven.

BadMsM's Famous Apple Pie

BadMsM's Famous Apple Pie Recipe 

I make this whenever the mood strikes! It smells fantastic while it's baking. Adjust spice to your tastes.

INGREDIENTS

* 6 cups sliced apples (any kind YOU like)
* 3/4 cup brown sugar
* 1 tablespoon butter
* 1/4 teaspoon ground cinnamon
* 1/4 teaspoon ground cloves
* 1/4 teaspoon nutmeg
* 1/4 teaspoon allspice
* 1 recipe pastry for a 9 inch double crust pie

DIRECTIONS

1. Prepare your pastry for a two crust pie. Wipe, quarter, core, peel, and slice apples; measure to 6 cups.

2. Combine sugar and spices. The amount of sugar used depends on how tart your apples are.

3. Arrange apples in layers in pastry lined pie plate. Sprinkle each layer with sugar and spices. Dot top layer with small pieces of butter. Take a small cookie cutter and make two cuts opposite each other in the center of the top crust. Carefully remove cut dough. Cover with top crust, placing cut dough next to hole in center.

4. Place on lowest rack in oven preheated to 450 degrees F (230 degrees C). Bake for 10 minutes, then reduce oven temperature to 350 degrees F (175 degrees C). Bake for 30 to 35 minutes longer. Sprinkle with raw or brown sugar while steaming hot from the oven.

Serve warm or cold. We love it with French Vanilla ice cream!

Quick Tips For Pie #2

No pie pan? Place a single layer crust on a cookie sheet or baking stone. Spoon filling of your choice into the center of the crust, leaving a 3 inch edge. Carefully lift the edges evenly into the center, and bake. The French call this a galette.

BadMsM's Drunken Pecan Pie

BadMsM's Drunken Pecan Pie Recipe 

I made this for my hubby's mechanic, Dave, after he spent several frustrating hours on the phone with the insurance company over hubby's GTO!

Ingredients

* 1 refrigerated pie crust (half of 15-ounce package), room temperature
* 2 cups dark brown sugar
* 4 large eggs
* 1/4 cup (1/2 stick) unsalted butter, melted
* 1 tablespoon Scotch whisky
* 2 teaspoons vanilla extract
* 1/4 teaspoon ground cinnamon
* 2 cups pecan halves

Directions

Preheat oven to 350°F.

Line a 9-inch pie dish with dough. Crimp edge with fingers or a fork.

Whisk sugar, eggs, butter, Scotch, vanilla, and cinnamon together in large bowl. Mix in nuts, and pour filling into crust.

Bake until the filling is slightly puffy and set in center. Cover the edges with foil if it's browning too quickly, about 35-40 minutes.

Cool pie completely. Carefully cut small slices and serve with whipped cream.

This is great during the Holidays with a cup of strong black coffee! It's very sweet and rich, so small portions are best.

BadMsM's French Silk Pie Recipe 

This is a great no bake pie. I use a graham cracker or Oreo cookie crust, depending on my mood.

Ingredients

1 9 inch ready-made pie crust
1 (5.9 ounce) package instant chocolate pudding
1 (8 ounce) container whipped topping, thawed
Chocolate sprinkles

Directions

Make chocolate pudding as directed. Pour chocolate pudding into pie crust. Cover loosely with plastic wrap. Chill for 30 minutes.

Pour whipped topping on top of pudding layer and spread evenly. Chill for 2-3 hours.

Garnish with chocolate sprinkles and enjoy!

BadMsM's Favorite Pumpkin Pie Recipe 

This is my doctored up version of a basic recipe.

Ingredients:

* 1 1/4 cups pumpkin puree, canned or fresh
* 3/4 cup sugar
* 1/2 teaspoon salt
* 1/4 teaspoon ground ginger
* 1 teaspoon ground cinnamon
* 1/4 teaspoon ground cloves
* 1/4 teaspoon ground nutmeg
* 1 teaspoon all-purpose flour
* 2 eggs, lightly beaten
* 1 cup evaporated milk, undiluted
* 2 tablespoons water
* 1/2 teaspoon vanilla extract
* 1 unbaked pastry shell (9-inch)

Preparation:

Preheat oven to 400°.

Combine pumpkin, sugar, salt, spices, and flour in a medium mixing bowl. Add eggs; mix well. Add evaporated milk, water, and vanilla; mix well. Pour into pastry-lined pie pan.

Bake at 400° for 15 minutes; reduce heat to 350° and bake about 35 minutes longer, or until center is set. Cool completely.

Garnish with whipped cream or French Vanilla ice cream and serve with hot coffee.
