Kieto at Busch Stadium

What a day it was. It was Italian Heritage Night at Busch Stadium in St. Louis, Mo. August 18th, 2009. I got to perform some Italian Songs there and the people who work there were just wonderful in helping me set up and made sure I had everything I needed. It was a beautiful night at the ballpark. I didn't know I was on that big screen behind me and Mollie Francis sent this photo to me the other day. She was in charge of the event and did an exceptional job. The Honor

The second photo is of some very special people in my life. During the 9 plus years of the ezine, I have spoke about all 3. The nut on the far left is me for sure. No mistaking me for anyone else. Next to me is Joe Digregorio. He does the Italian Tours of the Hill in St. Louis and I perform at St. Ambrose On the Hill. He's a great guy.

Next is Monsignor Polizzi. He's my boss and Pastor at St. Roch's in St. Louis on Waterman Ave and I have been there for over 24 years every Sunday except for 6 Sundays. He's been a friend and mentor to me for more years than I can count. He's always been there to lend an ear and has always given me his opinion whether I wanted it, or liked it or not.

Next is a great friend of mine, Monsignor Bommorito. He's Pastor of St. Ambrose Church On the Hill in St. Louis, Mo. He's getting a very prestigious award October 29th and asked me to play music for the ceremony. He could have asked anyone, but he asked me which I consider an honor.

And it was an honor to have this picture with 3 of the people I admire so much.

Italian Cole Slaw for Hot Dogs

Hot Dog Condiments

This is my favorite hot dog condiment. Of course, I love it on pulled pork, or beef, or just about any BBQ sandwich. But try it on a hot dog. You may not eat it any other way. Assuming you like hot dogs. ;)

1 large head cabbage, shredded
1 carrot, shredded
1 green pepper, diced
1 small onion, diced
1/2 cup sugar
1 teaspoon salt
1 teaspoon celery seed
1 teaspoon mustard seed
1 1/2 cups white vinegar

In a large bowl, combine shredded cabbage, carrot, diced green pepper, and diced onion. In another bowl, combine remaining ingredients; pour over vegetables and stir well to blend. Refrigerate cole slaw for at least 1 day before serving.

Do it the day before you grill the hot dogs, brats, knockwurst or Italian sausage.

Cole slaw serves 8.

Sauerkraut Hot Dog Topping

Or, Hot Dogs with Sauekraut.

I'll have this every once in awhile. But my favorite is still hot dogs with cole slaw.

1 (16 ounce) can sauerkraut, drained and rinsed
1/4 cup sweet pickle relish
2 tablespoons brown sugar
1 tablespoon prepared mustard
1/2 teaspoon caraway seed

Combine all ingredients in a saucepan; cook on low heat until heated through. Serve over hot dogs.

Don't forget the Nacho's with Cheese!

Ballpark Nachos

I had these with so many jalapenos, I tossed and turned all night. But they were oh so good. Enjoy!

1 cup milk
4 tsp. cornstarch
1 Tbsp. diced fresh or canned jalapenos or to taste
Kosher salt to taste
1/2 - 1 tsp. chili powder or to taste
1 cup shredded Colby jack cheese

In a jar shake together milk and cornstarch. In a small sauce pan over medium heat, heat milk and cornstarch mixture, stirring constantly, until thickened and hot. It will get as thick as gravy.

Remove from heat and add cheese, chopped jalapeno, chili powder, and salt to taste. Blend until cheese is melted.

Makes a little over 1 cup nacho cheese. If you need more, and you probably will, it will be a breeze the second time.

    I actually knew how hot dogs are made because my bro-in-law is a butcher and he let us watch once. He picked one up and ate it raw, and said, "Don't do this with all hot dogs! I know what goes in mine!"
    I've always just "dumped" to make slaw for hot dogs, etc. but I'm going to copy your recipe down and actually measure to get it perfect the next time! ; )
    BTW, I made pulled chicken for sandwiches last week and that was good too.
    I'm with JoM. I couldn't see the pics either. Bummer!

    I enjoyed the Video on Hot Dogs.I never had imagined how they were made.It is really a huge process. Makes me appreciate them more.
    As for the Pic's of Italian Night at the Ball Game. The one of you with the Msgrs. and Joe D does not show up. It's a blank box with a little red X in the corner.
    The recipes for the Hot Dogs look good but I usually just add a little mustard. Some times I slit them and add cheese that melts when they cook. My favorite way as I love cheese. My next favorite way is over the Campfire until the skin gets a little crispy. Hugs JoM
