Chicago Style Hot Dogs

Welcome! This lens is about one of Chicagos' favorite foods, the Chicago-style hot dog. It's either steamed, boiled, or broiled all-beef hot dog on a poppy seed bun, which originated in the city of Chicago, Illinois. The hot dog is topped with mustard, onion, sweet pickle relish, a dill pickle spear, tomato slices or wedges, pickled sport peppers, and a dash of celery salt; sometimes, but not always, cucumber slices; but never ketchup. The complete assembly is sometimes called "dragged through the garden" because of the unique combination of condiments.

Who served up the first Chicago-style dog

Many sources attribute the distinctive collection of toppings on a Chicago-style dog to the "Depression Sandwich" allegedly originated by Fluky's on historic Maxwell Street in 1929. Vienna Beef frankfurters, the most common brand served today, were first sold at the 1893 World's Columbian Exposition in Chicago.

Chicago-style hot dogs are boiled or steamed before adding the toppings. Less commonly, they're grilled and referred to as "chardogs." The typical dog weighs 1/8 pound and the most traditional type features a natural casing, providing a distinctive "snap" when bitten.

The Chicago metropolitan area boasts more hot dog restaurants than McDonald's, Wendy's, and Burger Kings combined. A "hot dog stand" in Chicago may serve many other items, including the Maxwell Street Polish, gyros, Italian beef and pork chop sandwiches. The restaurants often have unique names, such as Mustard's Last Stand, or architectural features, like Superdawg's two giant rooftop hot dogs (Maurie and Flaurie, named for the husband-and-wife team that owns the drive-in).

Chicago Style Hot Dog

Dragged through the garden

Hot dogs always bring back memories of my growing up in Chicago. When we were young kids, my brother and I loved to ride our bikes to our local park on Saturday afternoons. We'd meet our friends, play a softball game, then around noon we'd all ride our bikes over to Jimmy's Hot Dogs for lunch. We just loved the hot dogs at Jimmy's, and the moment we opened the door, we'd breathe in that delicious aroma of hot dogs with the works. We'd all order our dogs with the works, "dragged through the garden" on a steamed poppy seed bun, a side of fries and a soda pop. The taste of that meal was always so amazing -- those were the days when we'd all ride over to Jimmy's for a hot dog on a hot summer day.

Vienna Beef Hot Dog topped with mustard, relish, onion, pickle, tomato, sport peppers & celery salt. The "Chicago Style" hot dog got its start from street cart hot dog vendors during the hard times of the Great Depression. Money was scarce, but business was booming for these entrepreneurs who offered a delicious hot meal on a bun for only a nickel. The famous Chicago Style Hot Dog was born! They'd start with a Vienna Beef hot dog, nestle it in a steamed poppy seed bun and cover it with a wonderful combination of toppings: yellow mustard, bright green relish, fresh chopped onions, juicy red tomato wedges, a kosher-style pickle spear, a couple of spicy sport peppers and finally, a dash of celery salt. This unique hot dog creation with a "salad on top" and its memorable interplay of hot and cold, crisp and soft, sharp and smooth, became America's original fast food and a true Chicago institution.

Never Put Ketchup on a Hot Dog

Bob Schwartz has been an executive at Vienna Beef in Chicago for almost 40 years

This book is an insider's view of a love of hot dogs - eating them, selling them and talking about them. The author, an executive at Vienna Beef, has spent almost 40 years developing and enhancing strong emotions for the business and for the people who operate hot dog stands. The book includes detailed stories about a long list of hot dog stands located in Chicago, city and suburban, as well as stands located around the country. The one thing all those businesses have in common is that they serve or served Chicago-style hot dogs. Everyone who grew up eating hot dogs at those stands, especially in their own neighborhoods, remembers the one rule about putting condiments on a Chicago-style wiener - never put ketchup on a hot dog. This book will help the reader bring back all of those delicious memories.
