I am a chilehead; hear me roar, or make other approximate noises. There is so much variety to hot sauces chileheads can never stop discovering distinct flavors and delicious ways to make their eyes water. There's more fun to hot sauce than any other condiment. Hell, even some of the names, bottles, and label designs are just really cool. When was the last time you thought something was cool about ketchup?
With infinite brands and varieties I can't list them all here, but these are some of my favorites, most popular, and online resources to find more.

Blair's Hot Sauces

This **** will knock you on your ass. Extremely hot, but there's alot of habanero flavor in that heat as well. Two drops in your fajita is usually all that's necessary, even if you have plenty of sour cream on.

The Scoville Scale
Hot or Not?In 1912 a guy named Wilbur Scoville developed this scale to measure the heat level in chillies. Originally it was a subjective taste test, but has since been refined by the Chemistry.
The test officially measures the pungency level of a given pepper. There are other methods, but the Scoville Scale remains the most widely used and respected. The greater the number of Scoville units, the hotter the pepper. Being a natural product, the heat can vary from pepper to pepper.
The original Scoville test asked a panel of tasters to state when an increasingly dilute solution of the pepper no longer burned the mouth. Roughly one part per million of chilli 'heat' rates as 1.5 Scoville units.
