Easy there tiger -- before listing the hottest hot sauces, we need to layout the ground rules on how we measure the hotness of a hot sauce. Hotness is generally measured against a metric called The Scoville Scale, which is a measure of hotness in chile peppers. Chile peppers contain a chemical compound called capsaicin that generates the burning sensation associated with eating spicy food. Basically, scoville units represent the amount of capsaicin present in a hot sauce. The scoville scale is notoriously imprecise for several reasons (it was originally designed around a panel of taste testers that tasted a substance over and over again as it was being diluted until hotness was no longer detected), but it gives us a good general sense of the hotness levels of different hot sauces.
