How To Make Kefir Culture From Live Kefir Grains

What You Need To Start

Straining KefirThese are the things you will need to start...

Large glass jar or jug
Jar or Jug for the fridge (either glass or plastic)
Plastic strainer
Large plastic spoon
Large plastic bowl

Don't use metal because it is supposed to harm the kefir grains.

Starting WithYour Fresh Kefir Grains

Kefir in JarIf you get fresh kefir grains all you have to do is transfer them out of the milk they were transported in and put them into a glass (or safe plastic, but glass is preferable) jar that is large enough to accommodate the quantity of kefir grains that you have.

You then take fresh or long life (fresh is better) or even powdered reconstituted milk and pour about 250 ml (or a pint) for each heaping tablespoonful of kefir grains that you have.

Straining the Kefir

Straining the KefirOnce your kefir has been sitting at room temperature for 18 to 24 hours (some people like to keep it longer, but I prefer it for this period of time so it doesn't get too sour)...you strain out the kefir grains so that you can drink the kefir.

Get a largish plastic bowl to strain into.

I like to use a bowl with a pouring lip to make it easier to drink and store it after straining.

Wives tale goes that you must use a plastic strainer (I've seen videos of people using metal ones, but I use plastic)...

Gently pour the milk and grains out into the strainer and use either a plastic or wooden spoon to move the grains around enough to allow the kefir into the bowl.

Milk over kefir grainsOnce you have put your kefir grains into a very clean, rinsed glass jar as described above, you will add the milk over the top.

You will then either loosely cover the jar with its own cover (without closing it), or put a loose piece of plastic wrap or cheese cloth or paper napkin, etc over it.

This is to allow the kefir to breathe and not get too yeasty tasting.

You will want to leave your kefir from 18 to 24 hours to culture.

Some people like to leave it longer, but I personally don't like it that sour.

Keeping and Drinking the Kefir

Then drink the kefir!Once you have left your kefir to culture you will simply strain off the kefir, and put the kefir grains back into the glass jar (you can keep on putting the grains back into the jar every day without washing it for around a week or so.

The kefir is normally kept in the refrigerator, although some people like to keep it out to continue culturing even after the grains are removed.

In the beginning, when you first start drinking kefir, it is probably a good idea to have half a glass and no more (detoxing may be strong and give you pimples or other skin problems)...

I personally prefer to drink mine at room temperature immediately after straining, but if you prefer, keep it cold in the fridge.. the kefir will keep for up to weeks in the refrigerator!
