When making guacamole avocados are the basic ingredient. So a lot depends on choosing the right avocados for your Mexican appetizer. It all comes down to how ripe the avocados are. They must be just right - not to hard, not to squishy. In this lens I will try and explain how to choose the perfect avocado :).

So you are making guacamole and you want it to be perfect. These day avocados are shipped to the stores from "far" away, they are picked while they are still green and hard and they ripen while they are in transport. Because of this it can often happen that they are still hard when they arrive at the store. So you have to be careful. This is how to choose avocados for guacamole:

THE LOOK OF THE AVOCADO

Dark Green And Not Shiny

You want the avocado to be dark green and not shiny. If it is bright green and shiny then it is not ripe enough. You also want it to be undamaged without many dark patches and spots.

THE ORIGIN OF THE AVOCADO

Choose Local If You Can

This one is hard to influence but - the best avocados are those that ripened on the trees. That is only possible if they are grown locally. If you have that luck that you can buy them from a local orchard then your guacamole is on the best way to be the best one ever :).

THE FEEL OF THE AVOCADO

It should give in just a little

This is the final and most important test. Pick up the avocado on press on it with your fingers. It should give in just a little. Like you would be pressing on margarine or butter. It it's hard then it is not ripe enough, it it's really soft and squishy then it is too ripe or damaged.
