Cookware is one thing we usually don't buy that often and we are usually not sure what to get or look for. There are several types of cookware with different properties. Stainless steel cookware

We start with stainless steel since it is the most popular choice. The main reason for this might be due to the durability and reasonable price. Steel is an alloy that is both scratch-resistant and strong. Stainless steel cookware can handle very high temperatures with changing shape also known as wrapping. When a cookware has wrapped it becomes almost useless since the bottom of the cookware is not flat anymore.

Stainless steel seems to be the perfect material for cookware, but unfortanely it is a bad heat conductor. To improve the heat conductivity and avoid any hot spots some brands have an encapsulated aluminum or copper core. Stainless steel cookware with this feature is often in a completely different price range, but is worth the extra cost.

Aluminum cookware

Aluminum cookware is the second most popular type of cookware. Pure aluminum cookware is almost vanished from the stores and anodized aluminum has taken over. What is anodized aluminum? Anodization is a process that makes outer layer of the aluminum to oxidize. This oxidized layer can be made very strong and durable, but it is also highly non-reactive. Aluminum will react with acid foods, but not anodized aluminum.

Anodized aluminum cookware still has the great heat conduction as regular aluminum. Remember to use only low and medium heat on your stove, aluminum cookware get hot quickly and evenly.

Cast iron cookware

Cast iron cookware has been around for hundreds of years, but is still a good choice. When cast iron cookware is seasoned properly it will almost cook like a non-stick cookware. When the cast iron cookware is seasoned it has a layer of fats and oils that protects the iron. Iron is prone to rust and it is therefore important to keep this layer of fats and this requires some maintenance. When cleaning a cast iron cookware use only hot water and wipe it dry afterwards, this will make the seasoning last longer.

Cast iron cookware is very heavy, therefore remember to find a set with good handles. When cooking let the cookware get hot before adding food, cast iron retain its heat like no other.
