Nutritions in Broccoli
It's so easy to buy broccoli, cut it into small florets, cook and serve it with meat and potatoes. But what actually happens with broccoli, which, incidentally, is a nutrient bomb when it boils? Lecturer in Food Chemistry, named Karsten Olsen, explains how the healthy green plant gets a yellow color when cooked. If broccoli is boiled for several minutes and over cooked it does not smell good. This is due to release of certain sulfur compounds as in stink bombs. It is often, therefore, that children will not likely eat broccoli, because they have an extremely good sense of smell, said Mr Olsen.
Cooking broccoli for a short time, you can stop the enzymes and prevent the smell and broccoli turning yellow when broccoli is cooked, the stem is also softened, making it easier to digest it. - When the broccoli is cooked in an appropriate number of minutes to soften the structure, which means that the nutrients absorbed faster in the body compared to if it is raw. Boiling process also releases some substances, including chlorophyll, which makes the broccoli green. Boiling broccoli for too long can turn green matter into yellow, because the substances do not like to be boiled and seeps into the water. These are also the substances that make broccoli yellow if it lies too long in the vegetable box. It is likely if it is not green it will not look appetizing when the color is gone. - If you put a base in water, such as. soda, it can preserve the green color. The color seeps quickly into the water due to degradation of cell walls in the stem below the boiling process.
Vitamins head out into the water , there are other nutrients that will be released into the water when the broccoli is cooked . These include antioxidants, says Karsten Olsen. - The antioxidants react with each other and they can be boiled into the water. Especially being vitamin C, which broccoli is enriched with, are discharged into the water. Therefore, it is a good idea to cook the broccoli in a short time and with as little water as possible. If you want to also be sure to get vitamin C from cooked broccoli consume quickly after cooking as vitamins else disappear.
