Decorate your cupcakes, make them look scrumptious!

Welcome to my lens! I am very interested in making and decorating cupcakes, and I thought that I would teach you some of my famous recipes! In this lens you will learn some icing/ frosting recipes that I love, and some great methods of decorating. For example: piping and spreading and even some of my favorite decorations to add to your cupcakes/ cakes once you have iced them. So keep reading to find out some of my trade secrets when it comes to decorating cupcakes...

Getting started

Get set... Get ready... GO!

So below I will share with you a basic butter icing recipe that I learnt and really like, it is simple to make and great for piping and spreading techniques!

Butter Icing/ Fondant

Here's one to get started...

You will need:
100 grams icing sugar
20 grams soft butter or margarine
Vanilla essence (optional)

Method:
1. Cream your butter in a bowl
2. Sieve the icing sugar in a little at a time and keep stirring
3. Add icing sugar until slightly stiff but still spreadable

Glace icing cupcake - courtsey of the Lone Baker on FlickrGlace icing is the easiest icing that I know how to make, it just uses water and icing sugar. To be honest I never weigh exact amounts for this, I guess. However many cupcakes I am decorating is how I estimate how much I will need. If I run out then I just make more and if I make too much, then I put it in the fridge for another day! Here's the method:

Method:
1. Sieve your icing sugar into a bowl.
2. Add about 4 teaspoons of water to start off with and then keep adding them until your icing is runny
3. Once runny, you can add it to your cakes.

Glace icing is a great icing to use, because it's spreadable and you can dribble shapes and patterns onto your cupcakes too!

Royal icing recipe

- 675g/1½lb icing sugar
- 3 free-range egg whites
- 3 tsp lemon juice
- 1½ tsp glycerine
- extra egg white to thin icing if required
- Preparation method
- Sieve the icing sugar.

Method:
1. Whisk the egg whites in a large bowl until they become frothy.
2. Add the icing sugar to the egg whites, a spoonful at a time, and fold in.
3. Add the lemon juice and glycerine and stir.
4. Beat the icing until it is very stiff and white and stands up in peaks.
5. Spread over the top and sides of the cake and rough up the icing with a spatula so that it forms peaks. (If you want a smooth icing you may need to thin the icing down a little with more egg white and use to ice the sides and top of the cake using a palette knife.)
6. Transfer to a cake tin and seal up until ready for use.

Chocolate fudge icing

For all you chocolate lovers!!

Chocolate fudge icing cupcakeYou will need:
1/2 cup butter
3 (1 ounce) squares unsweetened chocolate
1 pound confectioners' sugar
1/2 teaspoon vanilla extract
3/4 cup milk

1. First you need to melt your chocolate and butter in the microwave. Meanwhile In a large bowl, combine confectioners' sugar, vanilla and 1/2 cup of the milk.

2. Then you need to blend in the melted chocolate mixture. Add remaining milk, a little at a time, until desired consistency is achieved.

3. Finally you need to leave it to cool until it is spreadable, the mixture will thicken as it cools. Once it has cooled you can spread or pipe it onto your cakes!

If you were trying to create a swirl on top then I would suggest using butter icing and a piping bag, but if you were trying to make a birthday cupcake for a girl or boy but you didn't just want it to be pink or blue. Then you could for example: put a pair of ballet shoes on the cupcake for the girl and a football on football on for the boy. But how would I do this? I hear you ask. The technique of spreading

There's nothing to it...

Fun monster cupcakes - Flickr courtesy of ClassikoolThe art of spreading icing onto a cake is so simple, but the technique you use needs to be just right... So I am going to share with you the best way and the easiest way that I know. All you need to do is get a spautla and a cup/ jug of warm to hot water. This is so that you can place the spatula in the water and leave it for a few seconds, this helps the icing spread easier. Then after leaving the spatula for a few seconds (3-4) you can then put a lump ofmicing on the desired cake/ cupcake yo wish to ice, then spread the spatula across the cake or cupcake until even, get rid of any ecess icing you don't need and top with whatever you wish.

Using a piping bag - Flickr courtesy of ClassikoolThe way to pipe icing onto a cake is quite hard when you don't know how, but I am here to teach you a way that will make it easy for you. What you need to do is place your piping bag into a stand or a cup/ beaker then you need to add your desired nozzle into it, then you can use a spoon to get most if not all your icing into it. Then you can squeeze the end of the bag together and hey presto... Icing should come out! Then all you need to do is pipe a pattern of your choice on the chosen cupcake/ cake.

What does each one do and look like..?

Piping nozzelsHere is a list of seven nozzles that are in my piping set:
1. Petal tip
2. Star tip
3. Flower tip
4. Leaf tip
5. Round tip
6. Grass/ hair tip
7. Flower nail tip

These are all used for different things and sometimes the hint is in the name, for example 'star tip' comes out looking like a star and 'grass/ hair tip' comes out looking like hair or grass. They can be used on all cakes big or small and are a great thing to keep handy! They can be used for all occasions weather it was a wedding, birthday or anniversary piping bags and all tips are great to help you celebrate and make the cake/cupcakes look extra special.

Royal icing (or ready roll)

For those extra special details...

Royal icing man in chair Royal icing is a great thing for making cakes with an extra special look. For example you cannot make a man sitting in chair out of butter icing. So to make a personal cake with an extra something then royal icing or 'ready roll' is great for these.

In January 2011 my Grampy had a cake made for him which had a man in a chair made out of royal icing (ready roll), this just shows how great royal icing is... Personally I think the man in his armchair looks fantastic. (Even though it does take a bit of skill to make, anyone can do it when they know how!)

Icing impression

The quickest way to make your cupcakes look breathtaking (even if your not good with icing!)

I have to say it, the impression icing method is a fantastic way to transform your amateur looking cupcakes into stunning professional looking masterpieces! This method is quick, easy and keeps mess to a minimum, even your children can use this method and get fantastic results! Just make sure that these cupcakes aren't too beautiful because you'll never want to eat them!

There are two ways of getting a textured icing effect, one is by using a textured rolling pin:
Simply roll out your ready roll icing (or homemade royal icing) with a normal rolling pin, then roll over it with your textured rolling pin (lightly! You don't want to make your icing fragile). Once your icing's textured all you need to do is cut out circles with a cutter and stick them on top of your little cupcakes (I often use marmalade as an adhesive).

The other way to get beautifully textured icing is to use an icing impression mat. To use an icing impression mat all you need to do is first roll out your icing (make sure that you have colored it first), then place the icing on the mat and roll over your icing lightly with a normal rolling pin, to impression the pattern of the mat onto your icing. Make sure that your icing is longer than the textured mat, as you will have to peel the icing off of the mat afterwards. Once you have taken your icing off of the impression mat, lie the icing pattern side up and cut out circles with a cutter and stick onto your cupcakes (again using marmalade as a 'glue').

What do the icings look like once on the cake..?

Shiny VS glossyThis is a question that is frequently asked, and the answer I would give is that butter icing gives a somewhat shiny finish and royal or ready roll icing gives a matte finish. Another icing that gives a shiny finish would be glacé icing which is a mix of water and icing sugar.

Which Icing method would I recommend

Well, it really depends what job you are wanting to do, but I find that using butter icing is great in a piping bag and then topping my cupcakes/ cakes with decorations and sprinkles of my choice. Better still it's shiny like a new car! Although sometimes royal/ ready roll icing is great for making statement cakes with a matte finish!

But you have to ask yourself the question... do you want cakes/ icing with a shiny finish or a matte finish?

Cupcake toppers come in all different shapes and sizes; and whats even better is that they are reusable (unless they are the edible kind that is! Tee hee)

Cupcake stands are beautiful ways to decorate your cupcakes, to showcase them and show them off in all their glory to your friends, family and if you are in the cupcake business your customers!! I love cupcake stands, they come in all different shapes, sizes, colors and materials! You can get round ones, square ones, one that hold 1 cupcake to holding 24 cupcakes, you can get colors from white to red to green etc... You can get cardboard cupcake stands, wire ones, plastic ones! The possibilities are endless! But for me the wire or plastic cupcake stands are the best... You can reuse them so many times and they easy to assemble and simple to clean (just wipe!). So next time you are holding a party or a group gathering and you have make some cupcakes... Invest in a cupcake stand to show off your beautiful creations!

Cupcake gift boxes are so cute, they are great when you want to give some cupcakes as a gift to friends and family. They ooze luxury and sincerity into your gift of a hand baked cupcake. They showcase your beautiful design especially showing off your decoration technique! A great idea is to contrast the color of your box against the colour of your cupcake's icing, then you can add matching ribbon to really tie off the delectable treat.
